Thanksgiving Leftover Turkey Chili image

This leftover turkey chili is the perfect way to use up your Thanksgiving turkey! It's thick and hearty, loaded with veggies, and perfect for pouring on top of leftover stuffing, cornbread, or even mash potatoes!

Number Of Ingredients 22

1 sweet onion (chopped)
2 cloves garlic (minced)
1 jalapeno (deseeded, deveined, chopped)
1 stalk celery
1 lb carrots
2 red bell peppers
1 lb green beans
2 tbsp avocado oil or EVOO
2 cans tomato sauce (15 ounces each)
1 can diced tomatoes (15 ounces)
1 can green chiles
2-4 tbsp chili powder salt-free
4 cups vegetable broth
4-8 cups water
4 cups cooked turkey (or rotisserie chicken)
avocado
sour cream
cheese
sliced jalapenos
green onions
cilantro
chips for dipping

Steps:

  • Start by prepping all your veggies at once. Chop onions and mince or finely chop garlic cloves (after peeling.) I suggest using a mandolin for your carrots and celery because if you cut them too thick your soup will take 3 times as long to cook (trust me I made this mistake.) De-seed & de-vein jalapeno and bell peppers, then chop them all (keep them separate though.) Finely, prep and trim green beans. You can use frozen or fresh. If you use fresh, cut them to no bigger than 2 inches per piece.
  • To the bottom of a very large pot with a lid (8 quart/7.5L stockpot), add oil, onions, garlic, and jalapenos, saute on medium-high for 2-3 minutes or until translucent. Add celery and saute stirring frequently for another 3-5 minutes. Add all remaining veggies including bell peppers, carrots, and green beans.)
  • Add in tomato sauce, crushed tomato, green chiles, 4 cups of broth, and chili powder. Stir it all up. Place the lid on the pot.
  • Allow chili to come to a rolling boil, then turn down the heat so that the chili is still boiling on low. Place the lid back on the chili. Allow chili to cook for 60-120 minutes (largely depends on how fat you sliced your veggies!) I sliced mine too fat so it easily took 120 minutes. You will need to add 2 cups of water every 30 minutes or so because the veggies will absorb the liquid as they cook.
  • Once all the veggies are tender, stir in cooked turkey. Serve immediately with desired toppings.

The easiest way to use up leftover turkey meat is to make turkey chili! It's flavor packed with ton of delicious spices and also loaded with good for you veggies, like corn and edamame.

3 Tbsp. olive oil
2 medium sweet onions, diced
2 carrots, chopped
2 garlic cloves, minced
1 Tbsp. chili powder
2 Tbsp. cumin
1 Tbsp. dried oregano
2 bay leafs
1 1/2 tsp. kosher salt
4 cups shredded leftover turkey meat
1 (28 oz.) can crushed tomatoes
1 (14.5 oz.) can fire-roasted diced tomatoes
1 (32 oz.) carton chicken stock
1 (15.5 oz.) can red kidney beans, rinsed + drained
1 (15.5 oz.) can garbanzo beans, rinsed + drained
1/2 cup frozen corn
1/2 cup frozen shelled edamame
Fresh black pepper, to taste

Steps:

  • Heat oil in a large dutch oven or stockpot over medium heat. Add onions, carrots, garlic, and cook for 4-5 minutes, stirring occasionally, until the onions begin to soften.
  • Stir in chili powder, cumin, dried oregano, bay leaf, salt, and black pepper, to taste. Cook for 1-2 minutes or until the flavors blend.
  • Add turkey meat, crushed tomatoes, diced tomatoes, and stock. Simmer, partially covered over medium-low heat for 30 minutes.
  • Stir in kidney beans, garbanzo beans, corn, and edamame, and simmer for 10 minutes longer.
  • Discard bay leafs, taste for salt and pepper, and serve with toppings of choice.

Steps:

  • Heat oil in a large pot over medium-high heat. Add onion and bell pepper and cook, stirring occasionally, until vegetables are soft, about 7 minutes. Stir in garlic and cook until it starts to soften, about 1 minute.
  • Stir in chili powder, cumin, oregano, salt, and pepper. Add turkey and stir until well coated with spices. Pour in crushed tomatoes, chicken broth, beer, brown sugar, and Worcestershire sauce. Reduce heat to medium low and bring to a simmer, uncovered. Cook, stirring occasionally, until chili has thickened, about 50 minutes. Add black beans and cook until heated through, about 10 minutes. Season with salt and pepper.

1 pound chopped leftover turkey meat
2 (15.5 ounce) cans white beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15.25 ounce) can whole kernel corn
1 (14.5 ounce) can diced tomatoes
3 cups turkey stock
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper

Steps:

  • Combine leftover turkey, white beans, black beans, corn, and tomatoes in a large pot. Stir in turkey stock, chili powder, garlic powder, onion powder, and cayenne. Cook over high heat until boiling, stirring often, about 5 minutes. Reduce heat and let simmer for 30 minutes. Serve warm.

What do you do with all that leftover turkey? This dish serves a lot of people, freezes well, and tastes even better the next day. The spice amounts below are guidelines and should be adjusted depending on your taste, how much leftover meat you have and how much water you use.

1 turkey carcass (neck and leftovers)
water
1 large white onion, diced
1 bay leaf
2 (15 ounce) cans chicken broth
2 (15 ounce) cans kidney beans
2 (15 ounce) cans chopped tomatoes
4 cloves garlic, crushed
3 tablespoons chili powder
1 tablespoon cumin
1 teaspoon cayenne pepper or 1 teaspoon your favorite hot sauce (optional)
1/2 teaspoon black pepper
flour
shredded cheese
sour cream
yellow onions or cilantro
cracker

Steps:

  • Break up turkey carcass and place with leftover meat in a large stock pot.
  • Cover completely with water.
  • Add chopped onion and bay leaf.
  • Bring to boil then cover and simmer for 1 hour (Meat should fall easily from bone).
  • Strain juices and pour back in pot, along with one or two cans of chicken broth for a fuller flavor (Boullion is also OK, but keep in mind you will have less liquid to work with).
  • Separate meat and chop any large pieces, then return to pot.
  • Discard any bones, skin, leftover stuffing and other non-edibles.
  • Add beans, tomatoes, garlic and spices.
  • Simmer, uncovered, for twenty minutes to reduce liquid.
  • You may wish to add a bit of flour, if the sauce is thin: To minimize lumps, ladle a cup of liquid into a mixing bowl and whisk in flour a teaspoon at a time, then stir into chili (Keep in mind that chili will thicken in the refrigerator or freezer, so if you are planning to store it, a little thin is OK).
  • Serve and garnish with shredded cheese, chopped onions, scallions, cilantro and sour cream, or dip with crackers.
