PAN-FRIED CAMEMBERT SANDWICH
A toasted cheese sandwich that is anything but ordinary - oozing with camembert and topped with cranberry sauce to give it a Christmas kick

Steps:
- Butter the bread. Put a wedge of camembert or brie on the unbuttered side of one slice of bread. Top with a spoonful of cranberry sauce. Drizzle with a few drops of balsamic vinegar, if you have some.
- Put the second slice of bread on top, buttered side out. Fry in a hot non-stick pan, pressing down with a fish slice, for a minute or two on each side, until golden brown and melting. Cut in half and eat straightaway.

- Cut chilled cheese in 6 equal wedges. In a shallow bowl, beat egg. On a sheet of wax paper, mix bread crumbs and sesame seeds.
- Dip each cheese wedge in egg and turn to coat. Roll cheese in crumb mixture to coat. (If preparing ahead, cover and refrigerate now until ready to cook.)
- In a heavy saucepan, heat about 2 inches of oil to 375 degrees F (190 degrees C) or until a 1-inch bread cube turns golden brown on all sides. Fry cheese until golden. Drain on paper towels.
- Melt raspberry preserves for dipping sauce.

- Freeze Camembert cheese for 30 minutes.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Pour flour into a bowl. Beat eggs and milk together in a separate bowl. Pour bread crumbs into a third bowl.
- Remove cheese from the freezer and cut each round into 6 wedges. Roll each wedge in flour and dip into the egg-milk mixture. Press each wedge into bread crumbs until evenly coated.

- Mix the cayenne pepper and the flour, then roll each Camembert portion in flour, then in egg and then in breadcrumbs.
- Heat the oil in a deep fryer to 350 degrees Fahrenheit or until a bread cube browns in 60 seconds.

BERRY COULIS
This is a flexible recipe for a classic berry coulis: use just one type of berry or a combination. Passing the mixture through a fine-mesh strainer produces a smooth, glossy sauce, but you can skip the step if you prefer something more rustic. - Combine the berries, sugar, lemon juice, salt and 1 tablespoon water in a medium saucepan. Bring to a simmer over medium heat and cook, stirring constantly, until the berries begin to give off their juice, 1 to 2 minutes. Adjust the heat so the sauce is simmering rapidly and cook until the berries have broken down, 4 to 5 minutes. Let cool slightly.
- Transfer to a blender and blend until smooth. Pour the mixture through a fine-mesh strainer, pressing on the solids to extract as much of the sauce as possible. Serve the sauce cold or at room temperature.
FRIED CAMEMBERT CHEESE WITH CURRANT COULIS
Steps:
- Prepare Currant Coulis: Place currants in a small saucepan with the water and sugar. Bring to a boil and cook gently for 10 to 12 minutes, or until soft. Puree through a food mill, and add currant vodka and a little more water if it's too thick. Set aside.
- Prepare Fried Camembert: Slice cheese into 6 wedges and refrigerate until very cold and firm. Beat eggs in a bowl and place flour and bread crumbs in separate individual bowls. When cheese is cold, dip each wedge, one at a time, in flour, patting off any excess. Then dip in eggs, drain, and coat with bread crumbs. Be meticulous about covering every spot of cheese. Reserve coated cheese on a platter in freezer for 10 minutes.
- Dip each wedge in eggs and bread crumbs again, being careful to drain the eggs and thoroughly coat with bread crumbs. Place in freezer for another 10 minutes.
- Preheat oven to 350 degrees F.
- Heat oil in a large stockpot or saucepan to deep-fry temperature (350 degrees F). Fry wedges, three at a time, until golden brown, about 1 minute. Do not stir, since the breading is easily broken. Carefully remove with a slotted spoon and drain on paper towels. Transfer to a large roasting pan and bake for 5 minutes.
- To serve, coat each plate with Currant Coulis. Top with wedge of cheese and serve immediately, accompanied by a shot of black currant vodka.

- Place the flour in a shallow dish. In a second shallow dish, whip the eggs and milk to create an eggwash. Place the bread crumbs in a third shallow dish.
- Dredge the first round of Camembert in the flour and make certain it's completely coated. Remove the Camembert and tap off all excess flour. Place the floured round into the eggwash. Completely cover it with egg. Remove the Camembert from the eggwash, gently shaking it to remove any excess, and place it in the bowl containing the breadcrumbs. Completely cover the round in breadcrumbs and then remove it from the dish, tapping the cheese to remove all excess breadcrumbs. Repeat the process with the round so that it is double-breaded, and then repeat the entire process with the remaining rounds of Camembert. Place the breaded rounds in the refrigerator while you prepare the pan for sautéing. It is important that you move quickly, as you do not want the breadcrumbs to get soggy.
- Melt the olive oil and butter in a medium sauté pan over high heat. Remove the first Camembert round from the refrigerator and place it in the hot sauté pan. Sauté it on each side until light golden brown, about 1 minute each side. Repeat the process with the remaining rounds.
