½ cup dry bread crumbs
¼ cup finely chopped green onion
¼ cup grated carrot
1 tablespoon minced fresh ginger root

1 tablespoon ketchup
1 tablespoon lite soy sauce
½ teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon black pepper
1 egg, beaten
6 hamburger buns
6 lettuce leaves - rinsed and dried
2 medium tomatoes, sliced

Steps:

  • In a bowl, thoroughly mix minced tuna, bread crumbs, green onion, carrot, ginger, cilantro, sesame oil, ketchup, soy sauce, cumin, salt, pepper, and egg. Cover, and refrigerate for 30 minutes.
  • Preheat oven broiler.
  • Form tuna mixture into 6 patties, and place in a broiler pan on top oven rack. Cook, uncovered, 4 minutes per side, or until easily flaked with a fork. Serve on hamburger buns with lettuce and tomato.

1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
  • Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
  • Grill the hamburger buns over high heat until well charred and crispy.
  • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

Life can't be about all beef. "Where's The Beef?" questions are fewer nowadays due to an influx of health concerns, as well as those that are watching their weight. The Longmeadow Farm is following suit and will openly and warmly embrace these new "burgers" to grace our "Saturday Lunch at the Farm" crowd. I wanted to produce a light(ish) tuna burger that made Dennis, Jerry, Uncle Dick, and my Dad feel as light as a Spring beetle floating around on a wind current after lunch. This recipe did it. Everyone was full, but not so full they wanted to clamber off to the backyard hammock, and pull their hat over their face. This gave them enough energy to have their giddy-up for all the many maelstroms that would undoubtedly follow them around for the afternoon. Go ahead, try them "Maryland" style with the use of our beloved "Old Bay Seasoning" and get ready to work hard this afternoon. Can be easily doubled for a big crowd.

1 (6 ounce) can tuna in water
3 tablespoons fresh breadcrumbs (or canned)
1 tablespoon pickle relish
3 tablespoons Egg Beaters egg substitute or 1 egg
1 teaspoon pimiento (optional)
1 green onion (chopped)
1 small celery (chopped)
1 tablespoon light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Old Bay Seasoning (or I use extra Old Bay!) (optional)
1 dash Tabasco sauce (optional)
1 small green pepper, chopped (optional)
4 -5 slices cheddar cheese (thin slice, optional) (optional) or 4 -5 slices soy cheese (thin slice) (optional)

Steps:

  • Open and drain canned tuna.
  • Mix together rest of ingredients except tuna, cheese and rolls.
  • When mixing ingredients, I add one ingredient at a time, and gently but throughly mix all ingredients.
  • Add tuna and gently fold together, and make firm patties.
  • Heat skillet, that is sprayed with cooking spray or use 1 teaspoon of oil on bottom of pan.
  • When heated on medium high heat, add each patty browning on each side for 5 minutes each.
  • Add a piece of cheese on top to melt slightly.
  • Open hamburger buns, and place in oven @350 degrees until toasted, (about 3/4 minutes).
  • Put on buns and serve with fresh lettuce, tomato, and mustard.

Use sushi-quality tuna so you can serve the burgers medium rare. The Ginger-Lemon Mayonnaise makes one cup and can be refrigerated for up to 3 days. MAKE AHEAD: According to the author, the recipe can be prepared through Step 3 and refrigerated for up to 3 hours. Beer Recommendation: An aromatic golden lager will complement the rich tuna here. Steps:

  • In a medium bowl, toss the cucumbers, onion, vinegar, 1 tablespoon of the sugar and 1 teaspoon of salt. Season with pepper and let stand for 1 hour at room temperature.
  • In a mortar or medium bowl, using the back of a spoon, mash the ginger with the garlic, chile and remaining 1 teaspoon of sugar to a paste. Stir in the fish sauce, cilantro and basil. On a clean cutting board, thinly slice the tuna. Stack the slices and cut into thin matchsticks. Cut the matchsticks into rough cubes, then chop until the pieces are roughly 1/8 inch. Add the tuna to the ginger paste and stir until evenly combined.
  • Using lightly moistened hands, shape the tuna mixture into 4 patties about 1 inch thick. Set them on a large plate lined with plastic wrap. Refrigerate the tuna burgers for 20 minutes.
  • Light a grill. In a small bowl, combine the vegetable oil with the sesame oil. Lightly brush the burgers and the cut sides of the buns with oil. When the fire is medium hot, brush the grate with oil. Grill the burgers for 6 minutes, turning once, for medium rare. Move the burgers away from the heat and grill the cut sides of the buns until toasted, 1 minute.
  • Combine all the Ginger-Lemon Mayonnaise ingredients in a small bowl.
  • Drain the cucumber salad. Spread the Ginger-Lemon Mayonnaise on the cut sides of the buns and set the tuna burgers on the bottoms. Top with the cucumber salad and peanuts. Cover the burgers with the buns and serve.

1/3 cup mayonnaise
1 teaspoon Thai sweet chili sauce
2 teaspoons fresh ginger, grated
1/2 limes, juice of or 1 teaspoon lime juice
1 teaspoon honey
2 eggs, lightly beaten
1 cup panko breadcrumbs (Japanese breadcrumbs-I used whole wheat )
1 teaspoon soy sauce
2 teaspoons Thai sweet chili sauce
2 (5 ounce) cans tuna in water, drained
1/3 cup celery, finely chopped (I used the food processor)
1/3 cup green onion, finely chopped
1/3 cup red bell pepper, finely chopped
4 sandwich buns, thin, cut in half and toasted (or leave untoasted if you prefer)
1/3 cup baby greens
1 tablespoon olive oil (if frying)
salt and pepper

Steps:

  • If baking(you can also fry-instructions below), preheat oven to 450 degrees F.
  • In a small bowl, mix sauce ingredients. Place 2 tbls. of the sauce in a large bowl. Cover and chill the remaining sauce in the fridge.
  • To the same large bowl, add the eggs, panko, soy sauce, and Thai chili sauce. Break up the tuna and add to the bowl. Add celery, green onions and red bell pepper. Salt and pepper to taste. Stir and let stand about 10 minutes.
  • Using wet hands, shape the tuna mixture into 4 patties, about 3/4" thick.
  • If you want to fry them, put the oil in a skillet and heat on medium high heat. Turn down the heat to medium and add burgers and saute about 4-5 minutes each side, turning gently.
  • If you bake them, place on baking sheet. Bake at 450*F. for 10-12 minutes.
  • To serve, spread sandwich buns with remaining mayo/ginger sauce. Add patties to the bottom half of bun. Top with baby greens, and top buns.
  • Enjoy!

2 cloves garlic, chopped
2 inches fresh ginger root, minced or grated
3 tablespoons tamari dark soy sauce
2 scallions, chopped
1/2 small red bell pepper, finely chopped
2 teaspoons sesame oil -- eyeball the amount
2 teaspoons grill seasoning blend (recommened: Montreal Steak Seasoning by McCormick) or 1 teaspoon black pepper and 1/2 teaspoon coarse salt -- eyeball it
1 tablespoon light-in-color oil, such as canola, safflower or peanut oil
1/2 pound shiitake mushrooms, coarsely chopped
Coarse salt
4 sesame kaiser rolls, split
1 jar, 8 ounces, mango chutney
4 leaves red leaf lettuce
1 jar, 8 ounces, wasabi mustard (recommended: Stonewall Kitchen brand) -- Asian sweet-hot mustard, available on the condiment aisle as well as in Asian foods section of larger markets, may be substituted

Steps:

  • Preheat a nonstick griddle or a grill pan to high heat.
  • Cube tuna into bite size pieces and place in a food processor. Pulse the processor to coarse-grind the tuna; it should take on the consistency of ground beef or turkey. Transfer tuna to a bowl. Combine ground tuna with garlic, ginger, dark soy sauce, scallions, red bell pepper, sesame oil, seasoning blend and black pepper. Form 4 large patties, 1 1/2 inches thick. Drizzle patties on both sides with light-in-color oil, such as canola, safflower or peanut oil.
  • Cook tuna burgers 3 minutes on each side for rare, up to 6 minutes each side for well done. Preheat broiler.
  • In a medium nonstick skillet over high heat, saute fresh shiitakes for 2 or 3 minutes in 1 tablespoon light oil -- 1 turn of the pan in a slow stream. Season mushrooms with salt and pepper.
  • Open up the rolls and lightly toast them under the broiler. Spread mango chutney on the bottom of each bun. Top with tuna burger, shiitakes, red leaf lettuce. Spread wasabi mustard or sweet hot mustard on bun tops and set them in place. Serve with exotic chips and pickled ginger, if desired.

This is my adaption of a Thai Burger recipe by Rachel Ray. The original recipe calls for 2 pounds of ground chicken breast. I used turkey breast and only about 1/3 pound per person. The burgers were shaped about 30 minutes ahead of cooking, allowing the flavors to blend somewhat. The burgers are delicious and moist. The dipping sauce really sets these apart.

1 1/3 lbs ground turkey
1/2 cup fresh cilantro, chopped
1 inch fresh gingerroot, peeled and finely grated
1 tablespoon Thai red curry paste
1/2 lime, juice and zest of

1 -2 tablespoon olive oil
1 -2 shallot, chopped
1/2-3/4 inch gingerroot, peeled, grated
hot sauce (Adjusted to suit your taste.)

1/2 cup creamy peanut butter

1 head butter lettuce
1 red bell pepper
1/2 English cucumber, thinly sliced

Steps:

  • In a large bowl, mix all burger ingredients together except for the olive oil, adjusting the salt and pepper to taste; with hands lightly mix the mixture and shape into 4 equal patties about 1 inch thick, pressing in the middle to prevent it from bulging while cooking.
  • Place the burgers in the refrigerator and allow to stand for 30 to 45 minutes to allow the flavors to blend.
  • Separate the lettuce leaves from the core and wash under running water, place on paper towels to drain; wash the bell pepper, core, seed and slice into thin strips.
  • In a large non-stick skillet, heat the olive oil, thoroughly coating the pan; add the shaped burgers and cook over medium-high heat until brown on the outside and cooked through, turning once, approximately 6 minutes per side.
  • While the burgers are cooking, place all the dipping sauce ingredients in blender jar and blend until smooth and creamy; pour prepared sauce into individual serving dishes and set aside.
  • To plate, place a couple of drained lettuce leaves on a plate, top with cooked burger, a few slices of cucumber and several slices red bell pepper. Sprinkle chopped basil on each serving. Place a dish of the dipping sauce on plate and serve.
  • The prep time allows for the 30 to 45 minute refrigeration time.

½ cup Italian seasoned bread crumbs
⅓ cup minced onion
¼ cup minced celery
¼ cup minced red bell pepper
¼ cup mayonnaise

¼ teaspoon salt
⅛ teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce

Steps:

  • Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
  • Serve on buns with tomato slices and lettuce leaves, if desired.

1/4 small red onion, minced
1/2 jalapeno, seeds removed, minced
1 medium cucumber, peeled and thinly sliced
1 fresh garlic clove, crushed

1/4 cup rice vinegar
1 pinch salt and pepper
2 teaspoons sugar
1 lb yellowfin tuna fillet, loin
1 tablespoon finely chopped scallion
1 tablespoon freshly grated gingerroot
1 teaspoon Dijon mustard
2 teaspoons soy sauce
fresh ground black pepper
peanut oil (for frying)
wasabi powder
1/4 cup mayonnaise
1 tablespoon fresh lime juice
4 leaves bibb lettuce or 4 leaves other soft lettuce
4 hamburger buns or 4 other soft rolls

Steps:

  • Cucumbers:.
  • Combine all cucumber ingredients in a sealable plastic storage container. Chill for two hours.
  • Tuna Burgers:.
  • Remove any sinew from the tuna and chop into fine dice. Add the scallions, ginger, mustard, soy sauce and pepper and blend thoroughly. Do not over mix. Form into 4 equal portions and make patties. Chill for 1 hour.
  • While the tuna patties are chilling, mix the wasabi powder with just enough water to make a paste. Allow to sit for 20 minutes. Add it to the mayonnaise and lime juice and chill.
  • Heat a skillet and add about 2 tablespoons of the peanut oil. Cook the tuna burgers until just done, about 4 minutes per side.
  • Place a piece of lettuce on the bottom of each bun and top with a few slices of cucumbers. Top with tuna burger. Then top with the bun top which has been spread liberally with Wasabi Mayonnaise. Serve with the remaining Thai Style Cucumbers on the side.
  • The preparation time does not include the chilling time.

To the same large bowl add eggs, panko, fish sauce, and Asian chili sauce. Flake tuna and add to bowl. Add celery and green onion and stir. Let stand 10 minutes. With wet hands, shake tuna mixture into four 3/4-inch-thick patties.

Add the tuna to the ginger paste and stir until evenly combined.
  • Using lightly moistened hands, shape the tuna mixture into 4 patties about 1 inch thick. Set them on a large plate lined with plastic wrap. Refrigerate the tuna burgers for 20 minutes.
  • Light a grill. In a small bowl, combine the vegetable oil with the sesame oil. Lightly brush the burgers and the cut sides of the buns with oil. When the fire is medium hot, brush the grate with oil. Grill the burgers for 6 minutes, turning once, for medium rare. Move the burgers away from the heat and grill the cut sides of the buns until toasted, 1 minute.
