Steps:
- Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Reserve 1/2 cup cooking water, then drain. Whisk the peanut butter, vinegar, 2 tablespoons each water and soy sauce, 1 tablespoon sesame oil, the carrots and half of the jalapeno in a large bowl. Add the noodles and toss to coat.
- Meanwhile, heat the remaining 2 tablespoons sesame oil in a large skillet over medium-high heat. Add the scallion whites, ginger and garlic; cook, stirring, until golden, about 2 minutes. Add the pork and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes. Stir in the remaining 2 tablespoons soy sauce.
- Transfer the pork mixture to the bowl with the noodles. Add half of the scallion greens and cilantro and toss to coat, adding enough of the reserved pasta water to loosen. Serve topped with the remaining jalapeno, scallion greens and cilantro.
SPICY THAI PEANUT NOODLES
This Thai peanut noodle dish is a delicious recipe with just the right amount of heat! It's simple to prepare, but requires a bit of organization while assembling/cooking, because it goes quickly. Preparing your ingredients beforehand is key! For vegetarians, you can make this without the chicken and fish sauce and it tastes just as good! Serve hot. You could also garnish this with chopped unsalted peanuts.

Steps:
- Whisk together peanut butter, soy sauce, rice vinegar, brown sugar, sesame oil, Thai chiles, chile-garlic sauce, ginger, fish sauce, and pepper in a bowl until smooth. Set aside.
- Heat 2 tablespoons olive oil in a large wok or non-stick pan over high heat. Add chicken and stir constantly until almost cooked, about 3 minutes. Pour in 1/4 cup sauce mixture to chicken. Cook until chicken is no longer pink in the center and juices run clear, 1 to 2 minutes more. Transfer chicken with its juices to a bowl.
- Reduce heat to medium-high. Heat remaining tablespoon olive oil in the same wok or pan used for chicken. Add carrots; cook and stir until just softened but still crunchy, about 3 minutes. Stir in bell pepper; cook until softened, about 1 minute. Add reserved chicken with its juices, remaining sauce, green onions, bean sprouts, and cilantro. Cook and stir until just heated, about 1 minute. Keep warm.
- Meanwhile place noodles in a large bowl and cover with hot water. Set aside until noodles are softened, about 5 minutes. Drain.
- Stir cooked noodles into vegetable mixture. Garnish with peanuts.

THAI PORK WITH PEANUT SAUCE
This is a very simple and quick dish that combines the standard pork chop with the wonderful flavor of coconut and peanuts. Even the kids loved it.

SPICY THAI NOODLES WITH PORK AND MINT
I tried this recipe from Clifford A. Wright's 'Some Like It Hot'.(He borrowed it from an LA noodle house). It BLEW ME AWAY! Easy and very tasty. The mint is a must--be sure not to skip it. I made it with all the chiles called for and it was scorching (which I like) but you can cut back on them if you are nervous about spiciness.

Steps:
- Boil noodles for about 3-4 minutes (or according to package), drain, then plunge into cold water until needed.
- Meanwhile, mix sauce ingredients in a small bowl.
- Prep the other ingredients and have them all ready before starting--the rest of the cooking is done in MINUTES.
- Heat oil in a wok or large skillet to hot.
- Stir-fry garlic for about 20 seconds until starting to brown.
- Add the chiles (STAND BACK and have the fume hood on HIGH unless you want to cough and cry for half an hour--trust me) and fry for about 30 seconds.
- Add the pork and fry until no longer pink, breaking up lumps, and then stir in the sauce mixture. Let it bubble a bit.
- Drain the noodles and stir them into the wok mixture. Toss until sauce absorbed, 1 or 2 minutes, then stir in the basil and tomatoes until basil wilted, about 1 minute.
- Dump onto a platter or portion onto 4 plates and sprinkle with the mint (essential ingredient!).
- Have plenty of cold beverages ready.

TANGY THAI PORK WITH NOODLES
I love the versatility of this recipe! Often, we will use 1/2 the amount of meat listed and increase the vegetables. Vegetables listed below are what we like to use, but substitutions can easily be made. The original recipe called for onion and cabbage, but I prefer the mix below. The marinade may also be doubled with half reserved to use as sauce for the vegetables. The pork may be marinated up to overnight but only needs 15 minutes, it will have more flavor the longer it is marinated.

THAI NOODLES WITH SPICY PEANUT SAUCE
This is a recipe that I've tweeked and adjusted to yield a warm noodle side-dish. It can also stand alone as a main dish. It's quick and easy and full of flavor! I serve it with Chicken Satay. Leftovers are yummy hot or cold.

SPICY THAI PEANUT NOODLES
A lovely spicy, peanuty sauce over spaghetti noodles and vegetables. I really prefer natural peanut butter in this, but that is up to you. Altering the peanut butter and honey can dramatically change this dish, so if you don't like it one way, try it again altering some ingredients.

SPICY PEANUT NOODLES
This recipe is delicious and easy and will kill any craving for Thai and it tastes as great on the second day as the first! The pepper spice you use can be red pepper paste or Asian chili paste. I like a combination of the two and you can use more or less depending on how spicy you want it. I usually just add cabbage, but a whole array of vegetables can be added, however you like it!

Steps:
- Whisk together soy sauce, water, peanut butter, pepper paste, cider vinegar, and brown sugar until smooth.
- Heat peanut oil in a large wok over medium-high heat. Add garlic and ginger and let cook until fragrant, about one minute. Add pork** and stir-fry until browned and cooked through. Stir in cabbage and bean sprouts.
- When the cabbage and bean sprouts are soft, add noodles and sauce to the wok and toss to coat.
- Garnish with cilantro and chopped peanuts.
- **To get the 'restaurant style' thin pork slices, partially thaw frozen pork loin in refrigerator or under cool, running water. Hold a sharp knife almost parallel to the cutting board and slice along the edge of the loin (The pieces will gradually get bigger the further in you cut). Make the slices as thin as you can because they will thicken as they cook.
