Thai-Style Baked Spring Rolls With Mushrooms and Chicken image

Who doesn't love spring rolls? Feed your loved ones these guilt-free baked spring rolls that pack in your favourite Asian flavours.

phyllo pastry, slices roughly 8x16 inches
200 g ground chicken
200 g mushrooms, thinly sliced
1 small carrot, grated
3 tablespoons minced ginger
2 tablespoons garlic, finely chopped
2 tablespoons sesame oil
olive oil
1 pinch salt
canola oil or vegetable oil
sweet chili sauce

Steps:

  • Add a splash of olive oil to a heavy-base fry pan on medium-high heat. Add chicken, salt, mushrooms, carrot, ginger and garlic. Sauté until chicken takes on colour and mushrooms sweat down. Then add sesame oil. Remove from heat and set aside to cool.
  • Lay out single rectangular pieces of phyllo pastry. Brush one half with canola or vegetable oil. Fold over pastry to create a two-layered square piece. Place 2 to 3 tablespoons of mixture into the corner and roll pastry up like a burrito. Paint a dab of oil on remaining corner to seal spring roll.
  • Lay spring rolls on a parchment lined baking tray Brush rolls lightly with oil and bake at 400⁰F for 10 to 15 minutes or until golden. Remove and serve with a store-bought sweet chili sauce.

I love risotto. Its so creamy and really hits the spot. The combination of spinach, mushrooms and chicken is both delicious and healthy.

Number Of Ingredients 8

2 tablespoons butter
2 cups low sodium chicken broth
2 minced garlic cloves
1 cup arborio rice
2 cups spinach
1 cup mushroom
8 ounces chicken breasts
1 tablespoon parmesan cheese

Steps:

  • Heat 2 cups of Low Sodium/Fat Free Chicken Stock to a simmer.
  • Sautee garlic in butter over medium low to medium heat. Add chicken and cook for 2 minutes. Add mushrooms and stir for 3 minutes. Remove mushrooms and chicken and set aside. Add rice and coat with butter from pan. Add heated chicken stock, 1/2 cup at a time, stirring and cooking til each addition is absorbed before adding the next. After final addition of stock is added, add chicken, mushrooms, spinach and cheese. Stir together to melt cheese and welt the spinach. Serve and enjoy!

I love Spring Rolls but I hate deep frying! These are just as tasty as fried and definitely much lower in fat, although I don't think they would qualify as a really low fat recipe. Spring roll wrappers can be found in the freezer or refrigerator at any good Chinese or Vietnamese grocery store.

Number Of Ingredients 8

20 large spring roll wrappers
6 cups finely shredded cabbage
2 large carrots, peeled and grated
1 lb lean ground turkey or 1 lb ground lean pork
2 tablespoons peeled minced fresh ginger
1 tablespoon toasted sesame oil
1/2 teaspoon salt
vegetable oil, for brushing

Steps:

  • Prepare the cabbage and carrots and set them aside.
  • Fry the meat until just done with the ginger, salt and sesame oil.
  • Lift from the pan and put in a large bowl.
  • Drain off any excess fat (but don't wash the pan) and saute the shredded cabbage and carrots with a couple tablespoons of water, until just limp and the water is gone.
  • Mix with the meat.
  • Brush each spring roll wrapper with oil, turn over, and put a little- one twentieth to be precise- of the filling in a tube shape diagonally across one quadrant of the wrapper.
  • Fold in the side corners, then roll up to make a neat tube.
  • Repeat 19 more times.
  • Lay the finished spring rolls on a lightly oiled cookie tray.
  • Bake at 350°F for about 30 minutes, until golden brown.
  • Serve hot with plum sauce.

A lovely stir-fry using fresh shiitake mushrooms. If you don't have those, use dried, and soak them in warm water before using.

2 tablespoons vegetable oil
1 onion, cut into slivers
5 cloves garlic, chopped
2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce
2 tablespoons ginger, finely chopped
2 tablespoons chopped fresh mint leaves
8 -10 fresh shiitake mushrooms, sliced
5 green onions, cut into 1 ",pieces
2 -3 fresh Thai red chili peppers, sliced (or 1 tsp. dried red pepper flakes, either optional)
2 tablespoons rice wine vinegar
1 teaspoon granulated sugar
2 tablespoons fish sauce
hot steamed rice

Steps:

  • Heat oil in wok and stir-fry onions until limp; add garlic and stir-fry for 2 minutes more.
  • Remove onion and garlic; add chicken and stir-fry; add soy sauce, ginger, 2/3 of mint leaves, mixing into chicken.
  • Add mushrooms, green onions, chilies, onion, garlic, and cook, until chicken is just cooked and tender.
  • Then quickly season with vinegar, sugar, and fish sauce, stirring well; then remove from heat.
  • Taste for seasoning; add 1 tbsp more fish sauce if you prefer.
  • Garnish with remaining mint; serve with hot steamed rice.
