1/4 cup honey
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil or cooking parchment paper.
  • In large bowl, toss all ingredients until potatoes are coated with seasoning. Spread potatoes in single layer in pan.
  • Roast uncovered 30 to 40 minutes, stirring once, until potatoes are tender and golden brown.

1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1 1/2 pounds (about 3) medium sweet potatoes, scrubbed
2 tablespoons olive oil

Steps:

  • Heat the oven (with oven rack in the middle) to 425°F. In small bowl, combine the brown sugar, salt, cumin and pepper (12 turns on pepper mill). Cut the potatoes into ½-inch thick rounds and transfer to a rimmed sheet pan. Drizzle with the oil, sprinkle with the brown sugar mixture and, using your hands, toss to coat. Arrange in a single layer without overlapping and roast until the potatoes are tender, 25 to 30 minutes. ......................... 2 Tbsp e.v. olive oil
1 1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
4 Tbsp chives, sliced - optional as garnish
3/4 cup sour cream or yogurt- optional as garnish

Steps:

  • Preheat oven to 425F.
  • Toss together sweet potatoes, olive oil, salt, pepper, and cumin together in a large bowl. Bake on an aluminum lined tray for ~20 minutes (flipping once at 10 minutes). Careful - the bottoms will burn if you don't flip 'em! You may need two baking trays, so the pan is not crowded.

2 sweet potatoes
1 teaspoon seasoned salt, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets with cooking spray.
  • Make a lengthwise cut partway through the middle of each sweet potato.
  • Cut potatoes into coins using the slicer attachment on a spiralizer. Arrange coins on the baking sheets. Spray with cooking spray. Season both sides with seasoned salt.
  • Bake in the preheated oven until edges start to curl, 20 to 25 minutes. Season with more salt. Let cool until crisp, about 10 minutes.

3 sweet potatoes (4- to 5-inches-long by 2- to 2 1/2-inches diameter) cut into 3/4-inch coins
Vegetable oil, for roasting
Salt and pepper
1/4 cup dried sweetened cranberries
2 tablespoons sugar
1 tablespoon bourbon
1 teaspoon red wine vinegar
1/2 teaspoon pumpkin pie spice
1/2 teaspoon orange zest
1/4 teaspoon ground cardamom
4 ounces Port Salut cheese
25 marcona almonds, chopped
3 fresh chives, chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • Brush the sweet potatoes with the vegetable oil and sprinkle both sides with salt and pepper.
  • Place on a baking sheet and roast until tender and golden, 12 to 15 minutes.
  • Meanwhile, add the cranberries, sugar, bourbon, red wine vinegar, pumpkin pie spice, orange zest and cardamom to a small saucepan. Stir and add 1/4 cup water. Bring to a simmer and cook until the liquid has reduced to a thick syrup, 3 to 4 minutes. Remove from the heat and cool.
  • Divide the Port Salut evenly over the sweet potato coins. Top with spiced cranberries, chopped almonds and chives.

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.
