LEMON MERINGUE TARTLETS

1 cup all-purpose flour
1/2 cup blanched almonds
1/4 cup sugar
1/2 teaspoon salt
1 stick cold unsalted butter, cut into small pieces, plus more for the pans
1 cup sugar
2 tablespoons finely grated lemon zest (from 2 lemons)
1/2 cup fresh lemon juice (from about 4 lemons)
1/3 cup fresh orange juice (from 1 orange)
2 tablespoons cornstarch
1 large egg plus 3 egg yolks
6 tablespoons unsalted butter, cut into pieces
3 tablespoons limoncello or other lemon-flavored liqueur
3 large egg whites
1/2 teaspoon cream of tartar
7 tablespoons sugar

Steps:

  • Make the crusts: Pulse the flour, almonds, sugar and salt in a food processor until the nuts are finely ground. Add the butter and pulse until the mixture looks like coarse meal. Add 3 tablespoons ice water and pulse until the dough starts coming together. Turn the dough out onto a piece of plastic wrap, pat into a disk and wrap in the plastic. Refrigerate until cold but still malleable, about 15 minutes. Meanwhile, preheat the oven to 375 degrees F.
  • Lightly butter four 4-inch tart pans with removable bottoms. Divide the prepared dough into 4 pieces, then press into the bottom and up the side of each prepared pan. Freeze until firm, about 10 minutes, then use a paring knife to trim the excess pastry.
  • Place the tart shells on a baking sheet, line each with foil and fill with pie weights or dried beans. Bake until golden around the edges, about 20 minutes. Remove the foil and weights and continue baking until the crusts are golden brown all over, 5 to 10 more minutes. Let cool, then carefully loosen the crusts but leave in the pans on the baking sheet.
  • Meanwhile, make the filling: Whisk the sugar, lemon zest, lemon juice, orange juice, cornstarch and 1/4 cup water in a medium saucepan until smooth. Whisk in the whole egg and egg yolks. Cook over medium heat, whisking, until the mixture simmers, about 5 minutes. Add the butter and limoncello and continue whisking over medium heat until thick like pudding, 4 to 6 more minutes. Spoon the curd into the prepared crusts.
  • Make the meringue: Beat the egg whites in a medium bowl with a mixer on medium speed until foamy, about 1 minute. Sprinkle in the cream of tartar and continue beating until soft peaks form, about 3 minutes. Gradually beat in the sugar and beat until stiff shiny peaks form, 4 to 5 more minutes. Transfer the meringue to a pastry bagfitted with a star tip and pipe onto the tarts. Bake at 375 degrees F until the meringue is set and golden, about 15 minutes. Let cool completely before unmolding.

ALMOND MERINGUES

3 large egg whites
Pinch fine salt
1/4 teaspoon cream of tartar
3/4 cup superfine sugar
1/4 to 1/2 teaspoon pure almond extract

Steps:

  • Position oven racks in the top and bottom thirds of the oven and preheat to 250 degrees F. Line 2 baking sheets with parchment.
  • Beat the egg whites and salt with an electric mixer on medium-high speed in a large bowl until foamy. Add the cream of tartar and continue to beat until soft peaks form. While beating, gradually add the sugar and then continue to beat until stiff peaks form. Beat in the almond extract.
  • Transfer the mixture to a pastry bag fitted with a star pastry tip and pipe 1-inch meringues onto the prepared baking sheets, about 1-inch apart. Bake until the meringues are no longer glossy and feel light and dry when picked up, about 1 hour. Turn off the oven but leave the meringues inside with the door cracked open until the meringues are completely cooled and dry, about 2 hours more. The meringues can be stored in an airtight container at room temperature for up to 2 days.

ALMOND TARTLETS RECIPE

½ x 375g packet chilled dessert shortcrust pastry
1 level tbsp seedless raspberry jam
30g (1oz) butter, softened
30g (1oz) caster sugar
30g (1oz) ground almonds
1 medium egg yolk
Few drops of almond extract
12 level tbsp flaked almonds
Icing sugar, for dusting
7cm (2¾in) fluted cutter
12 hole bun tray

Steps:

  • Set the oven to gas mark 6 or 200°C.
  • Roll out pastry on a lightly floured surface. Using cutter, cut pastry to line bun-tray holes, re-rolling pastry as necessary.
  • Mix the jam in a small bowl until it's runny, and then place a very small amount in the base of each pastry case, smearing it out to cover the base.
  • Beat the butter so it's really soft, then add sugar, ground almonds, egg yolk and almond extract. Beat until smooth, then divide mixture between pastry cases, spreading it out slightly. Sprinkle flaked almonds on top.
  • Bake tartlets in the centre of the oven for 10 mins, then reduce oven temperature to gas mark 2 or 150°C, and cook for a further 10-15 mins, or until they are a light-golden colour.
  • Remove the tartlets from the oven and transfer them to a wire rack to cool. Dust with icing sugar just before serving.

1 cup all-purpose flour
1/3 cup finely ground blanched almonds
2 tablespoons finely ground amaretti cookies
12 tablespoons unsalted butter, cut into 1-inch cubes, softened but still cold
1/3 cup plus 1 tablespoon confectioners' sugar
1 large egg yolk
1 tablespoon heavy cream
1 tablespoon amaretto liqueur

Steps:

  • In a small bowl, whisk together flour, almonds, and ground cookies; set aside.
  • Place butter in the bowl of an electric mixer. Sprinkle over confectioners' sugar and toss, using your hands, until butter is fully coated. Attach bowl to mixer fitted with paddle attachment and beat on medium speed until butter and sugar are well combined.
  • Scrape down sides of bowl, add egg yolk, and continue beating until combined. Reduce speed to medium-low and slowly add the flour mixture; beat until well combined. Scrape down sides of bowl and add heavy cream and amaretto; beat until well combined. Form dough into a large ball using your hands. Wrap with plastic wrap and refrigerate 3 hours.
  • Lightly flour a work surface. Turn dough out onto floured work surface and cut into 8 pieces. Gently knead each piece of dough into a smooth disc, using a spatula to turn dough, as it will be sticky. Add more flour to work surface if necessary. Cover each piece with plastic wrap and refrigerate dough until chilled, about 10 minutes.
  • Using a rolling pin, roll each piece of dough into a 6-inch round, about 1/8-inch thick. Transfer each round to a 4-inch tart pan with a removable bottom and gently press into tart pan. Roll a rolling pin over each tart shell, pressing lightly to trim any excess dough; discard.
  • Place tart pans on a baking sheet and gently prick the bottom of each tart pan with a fork; transfer baking sheet to refrigerator and chill 30 minutes.
  • Meanwhile, preheat oven to 375 degrees. Transfer baking sheet to oven and bake tart shells until golden brown, about 15 minutes, rotating baking sheet halfway through baking. Remove from oven and let cook completely.

18 prepared tart shells (or your favourite pastry recipe)
9 teaspoons jam (your favourite, I like strawberry) or 9 teaspoons jelly (your favourite, I like strawberry)
1/4 cup ground almonds
1/3 cup icing sugar
1/4 teaspoon almond flavoring
1 egg

Steps:

  • Place 1/2 teaspoon jam or jelly in each tart shell and bake in hot oven at 450 until shells are half-bake about 5 minutes.
  • Remove from oven.
  • Combine ground almonds and icing sugar. add almond flavouring to egg and beat well. Worl beaten egg into sugar mixture.
  • Place a tablespoon of filling into each tart shell.
  • Bake at 350 for 7 to 10 minutes or until delicately browned.

1/4 cup granulated sugar
1 teaspoon finely grated orange zest
1/4 lb chilled butter, cut into 1/2 inch cubes
1 egg white, whisked until frothy
1 (7 ounce) package almond paste
6 tablespoons butter
1 cup confectioners' sugar
1 egg
1 egg yolk
1 teaspoon vanilla extract
1 teaspoon finely grated orange zest
1/4 cup apricot preserves

Steps:

  • To make dough, in the bowl of a food processor, pulse flour, granulated sugar, and orange zest together until just blended.
  • Scatter butter over flour mixture and pulse until mixture has the consistency of cornmeal.
  • While pulsing, pour egg white through feed tube.
  • Process until dough forms a ball.
  • Transfer to a lightly floured surface and, with the heel of your hand, press dough together until it is smooth and cohesive.
  • Position rack in lower third of oven; preheat to 350° degrees F.
  • Have a 12-well mini-tart plaque nearby.
  • Use 1 level tablespoon of dough for each tartlet.
  • Roll dough between your palms to form a smooth ball.
  • With index finger, press center of dough ball into well, then press dough up the sides to distribute evenly.
  • To make almond filling, in the bowl of a food processor, pulse almond paste, butter, confectioners' sugar, egg, egg yolk, vanilla and orange zest together until smooth.
  • Spoon about 2 level tablespoons of filling into each shell.
  • (I just use a heaping tablespoon) Then spoon about 1/2 teaspoon apricot preserves in the center of each filled tartlet.
  • Bake until filling and edges of crusts are golden, 22-25 minutes.
  • Transfer plaque to a wire rack and cool about 10 minutes, then remove tartlets and place on rack to cool completely.
  • Repeat with remaining dough, filling and preserves.
  • Before serving sprinkle tartlets with confectioners sugar.

ALMOND MERINGUE TORTE WITH PRALINE BUTTERCREAM

6 large egg whites
1 cup granulated sugar
1 cup blanched whole almonds, ground fine in a food processor
1/3 cup all-purpose flour
For praline
1 cup granulated sugar
1/3 cup blanched whole almonds
1/3 cup hazelnuts
For buttercream
1/2 cup milk
1 cup granulated sugar
1 vanilla bean, halved lengthwise, or 1 teaspoon vanilla extract
6 large egg yolks
4 sticks (2 cups) unsalted butter, softened to cool room temperature
1/2 cup blanched whole almonds, toasted, cooled, and chopped
confectioners' sugar

Steps:

  • Preheat oven to 350°F. and butter and flour two 8- or 9-inch round cake pans, knocking out excess flour.
  • Make meringue layers:
  • In a bowl with an electric mixer beat whites until they hold soft peaks. Add sugar in a slow stream, beating until meringue holds stiff, glossy peaks. Fold in almonds and sift flour over meringue. Fold in flour gently but thoroughly and divide meringue between cake pans, smoothing it evenly. Bake layers in middle of oven 30 to 35 minutes, or until pale golden and firm to the touch. Invert layers onto racks and cool.
  • Make praline:
  • Line a baking sheet with foil.
  • In a dry heavy saucepan cook sugar over moderate heat, stirring with a fork, until melted and cook, without stirring, swirling pan, until a golden caramel. Remove pan from heat and stir in almonds and hazelnuts. Immediately pour mixture onto baking sheet tilting baking sheet to make a thin layer and cool completely. Break praline into pieces and transfer to a plastic bag. Crush praline coarse with a rolling pin. Praline may be made 1 week ahead and kept in an airtight container at room temperature.
  • Make buttercream:
  • In a small heavy saucepan simmer milk, sugar, and vanilla bean if using, stirring, until sugar is dissolved. In a bowl whisk yolks and add milk mixture in a stream, whisking. Transfer mixture to pan and cook over low heat, stirring, until a candy thermometer registers 170°F. Pour mixture through a fine sieve into another bowl and cool completely. In a bowl with an electric mixer beat butter until light and fluffy and beat in custard, a little at a time, until smooth. Beat in 1/2 cup praline (reserving remaining praline for another use) and vanilla extract if using.
  • Assemble torte:
  • Stack meringue layers, spreading some buttercream generously between them. Spread remaining buttercream on top and side of torte. Press chopped toasted almonds onto top and side of torte and sprinkle top with confectioners' sugar. Torte may be made 1 day ahead and chilled, covered. Let torte stand at cool room temperature 2 hours before serving.

BERRY, ROSE WATER, ALMOND & MERINGUE TART

A showstopper pud with a secret layer of chewy marzipan baked into the shortcrust base- impressive but so simple

500g pack marzipan
1 x 23cm round tart case- ready-made or bake your own with bought shortcrust pastry
600ml pot double cream
2 tbsp icing sugar
2 tsp rose water
5 small meringues nests, crushed
600g mixed berry (we used raspberries, blackberries, blueberries and cherries)
50g toasted flaked almond

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out the marzipan to a circle roughly 21cm in diameter - use a plate as a template to cut around. Lay the marzipan circle in the centre of the tart case, then put in the oven and bake for 5 mins. Remove from the oven and leave to cool completely.
  • Tip the double cream, icing sugar and rose water into a bowl. Whisk until the cream just holds its shape, then stir through the crushed meringue. Drop some of the berries into the bottom of the tart case. Pile over the cream mixture, then top with the remaining berries and flaked almonds. Serve straight away.

Steps:

  • Preheat broiler, if using.
  • Remove tart shells from tart pans and place on a parchment paper-lined baking sheet. Divide lemon curd evenly between tart shells.
  • Using a large ice cream scoop, scoop meringue and place on top of lemon curd, dividing equally. Spread meringue out toward the edges of each tart. Place tarts under broiler until meringue is just browned. Alternatively, use a kitchen torch to brown the tops of each tart.
  • Sprinkle crushed cookies over the top of each tart. These are best when served within 24 hours.

ALMOND TART FROM ANDRIA

For the Tart Dough
2 cups all-purpose flour
1/4 teaspoon salt
3 tablespoons sugar
12 tablespoons (1 1/2 sticks) very cold butter, cut in 1/2-inch pieces
3 egg yolks
2 tablespoons ice water, or more as needed
For the Filling
4 large egg whites
Large pinch of salt
3/4 cup sugar
1 tablespoon grated lemon zest
1 1/2 cups sliced almonds, lightly toasted
Recommended Equipment
A food processor for making the tart dough
A 9-inch metal tart mold with fluted sides and removable bottom
An electric mixer with whisk attachment

Steps:

  • Make the tart dough at least 6 hours before rolling it (preferably longer). Put the flour, salt, and sugar into the bowl of the food processor. Process for a few seconds to mix the dry ingredients. Drop the cut-up butter on top of the flour, and pulse the machine in a dozen or more short bursts, until the mixture is crumbly with only small bits of butter visible.
  • Pour the egg yolks over the crumbs, and pulse in bursts for about 5 seconds total, to moisten the dough. Scrape down the sides of the bowl, sprinkle the 2 tablespoons of ice water on the dough, and pulse again for a few seconds. The dough should begin to clump together but won't form a solid mass.
  • Scrape it all out onto a board; gather and press the clumps into a firm ball. If it's dry and crumbles apart, sprinkle more ice water over the dough and knead gently. When the dough sticks together, flatten it into a disk, wrap well in plastic, and refrigerate for 6 hours or up to a day before rolling; freeze the dough for longer keeping.
  • When you're ready to roll the dough and fill the tart, preheat your oven to 350˚, with a rack set in the center. Place a baking stone on the rack if you have one.
  • Cut off a third of the dough in a single piece for the lattice top; keep it chilled.
  • Place the larger piece of dough between two sheets of parchment, and roll it out to an even round, 11 inches in diameter. Peel off the top sheet of parchment, invert the circle over the tart pan, and peel off the remaining sheet. Press the dough gently down into the pan so it covers the bottom and lines the sides. Trim the edges of the dough round so it is even with the pan rim. With your fingers, form an even wall all the way around. Use scraps of dough to fill cracks or thin spots on the bottom or sides. Put the lined tart pan in the refrigerator.
  • Now roll the smaller piece of dough between the parchment sheets to a 10-inch round. Remove the top parchment sheet, and cut the dough in 1-inch-wide strips with a pastry cutter or sharp knife. Leave the strips in place on the parchment sheet, and refrigerate them while you make the filling.
  • Put the egg whites with the pinch of salt in the bowl of the electric mixer, and start whisking at medium speed. When the whites are frothy, pour in the sugar gradually, and raise the speed as the whites expand and thicken. When all the sugar has been incorporated, drop in the lemon zest, and continue whipping until the whites are very light, smooth, and glossy. Sprinkle the sliced almonds on top, a handful at a time, and fold in gently with a spatula so they are evenly dispersed.
  • Take the pastry-lined tart pan and lattice strips from the refrigerator. Scrape the filling into the pastry shell, and spread it evenly.
  • To form the lattice top, lay half the strips right over the filling, parallel and spaced about an inch apart. Lay the other strips diagonally across the first set, covering the entire top of the tart in an even pattern-cutting the strips or piecing them together to make different lengths. When they're all arranged, press and pinch the ends of the strips securely into the top rim of dough in the pan.
  • Bake the tart-on a stone, if you have one-for about 45 minutes, or until the filling has risen and dried and appears firm and lightly browned in the lattice. The dough strips and rim should be golden brown.
  • Cool the tart on a wire rack. When the crust has contracted a bit, slip off the fluted side ring. When it is completely cool, transfer the tart to a serving plate, if you wish, by sliding a long wide spatula (or two spatulas) under the pastry bottom and lifting the tart off the metal disk. Cut it in wedges, and serve.

JAPONAISE (ALMOND MERINGUE) TORTE



Japonaise (almond Meringue) Torte image

Japonaise? No, not Japanese mayonnaise lol. This is a wonderful cake made of discs of almond meringue sandwiched together with a coffee-flavored butter cream. It was popular when I was a child growing up in Australia and, happily, I recently discovered this recipe which originally appeared in a Vogue Entertaining magazine. It is not at all difficult, and is best made a day in advance and refrigerated until just before serving. Very rich!!

1 1/4 cups ground almonds
1/4 cup superfine sugar
1/4 cup cornstarch
5 egg whites
2/3 cup superfine sugar, extra
1 cup superfine sugar
3/4 cup water
1 tablespoon coffee extract
6 egg yolks, beaten lightly
8 ounces cold butter
1 cup sliced almonds, toasted lightly
powdered sugar, for dusting

Steps:

  • Preheat the oven to 350°F.
  • Grease and flour 3 baking trays, or line them with baking paper, and mark each with an 8" circle.
  • Place ground almonds, superfine sugar and cornstarch in a small bowl, mix together, and set aside.
  • Using an electric mixer, beat the egg whites in a small bowl until they form soft peaks.
  • Gradually add the extra superfine sugar, and continue beating until the mixture resembles uncooked meringue.
  • Carefully fold the almond mixture, that was set aside, into the meringue.
  • Spread meringue mixture on to each of the 3 trays inside the marked circles, or use a piping bag with a 1/2" nozzle to pipe a spiral within each circle.
  • Place two of the trays on the centre shelf of the oven and the third on the shelf below.
  • Bake for 25 minutes or until meringue is a pale, golden colour- if necessary move the bottom tray to the centre shelf and cook a further 5 minutes.
  • Allow the trays to cool on wire racks for 10 minutes before loosening the meringues with a large spatula- do not remove meringues from trays until they have completely cooled.
  • For the coffee butter cream- bring the sugar and water to the boil in a small pan, then reduce heat and simmer until the syrup thickens.
  • Remove from heat and add the coffee essence, and stir briefly to combine.
  • Place the egg yolks in a medium bowl and, beating continuously with an electric mixer, add the coffee syrup.
  • While continuing to beat, add the butter, 1 tablespoon at a time, until it is all amalgamated.
  • Taste, and add more coffee essence if desired.
  • Cool the butter cream in the refrigerator until it reaches spreading consistency.
  • To assemble the torte, place one meringue layer on a serving platter and spread with some butter cream.
  • Place second meringue on top, spread with butter cream, and repeat with the third meringue.
  • Cover the top of torte, and the side, with remaining butter cream.
  • Sprinkle toasted almond flakes all over, to decorate, then place in refrigerator until 10 to 15 minutes before serving time, preferably overnight.
  • Dust top with powdered sugar to serve.

1 cup (2 sticks) unsalted butter, softened
1/3 cup plus 2 teaspoons sugar
2 large eggs, separated, plus 1 egg yolk, all at room temperature
3 tablespoons heavy cream
1 1/2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour, plus more for work surface
1/4 teaspoon salt
1/2 cup sliced blanched almonds

Steps:

  • Preheat oven to 325 degrees. Put butter and 1/3 cup sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy. Mix in 2 yolks, 2 tablespoons cream, and the vanilla. Reduce speed to low. Gradually mix in flour and salt. Shape into a disk; wrap in plastic. Refrigerate until cold, about 45 minutes.
  • Transfer dough to a lightly floured work surface. Roll out to a generous 1/8 inch thick. Using a 1 1/2-inch fluted cutter, cut out rounds, and place on parchment-lined baking sheets. Reroll scraps, and cut out. Whisk remaining yolk and 1 tablespoon cream; brush cookies with egg wash. Refrigerate 15 minutes.
