1 boneless pork loin roast (2-1/2 pounds)
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup pineapple preserves
2 tablespoons stone-ground mustard
1/4 teaspoon dried basil
1 can (20 ounces) unsweetened pineapple tidbits, drained

Steps:

  • Preheat oven to 350°. Place roast on a rack in a shallow roasting pan, fat side up. Sprinkle with salt and pepper. Roast 25 minutes., Meanwhile, for glaze, in a small bowl, whisk preserves, mustard and basil; brush half the mixture over roast. Add pineapple to roasting pan. Roast 25-35 minutes longer or until a thermometer reads 145°., Remove roast from oven and brush with remaining glaze; tent loosely with foil. Let stand 10 minutes before slicing. Using a slotted spoon, serve pineapple with pork.

2 tsp vegetable oil
4 pork steaks , trimmed of excess fat
2 tbsp light muscovado sugar
1 tsp tomato purée
432g can pineapple rings in juice, drained, but juice reserved
½ tsp chilli powder
1 tsp Chinese five-spice powder
coriander leaves, to serve
1 tbsp dark soy sauce

Steps:

  • Add the oil to a large non-stick pan, season the steaks well, then fry for 5 mins on each side until golden and almost cooked through. Mix the sugar, soy, tomato purée and most of the pineapple juice in a bowl.
  • Add the pineapple rings to the pan and let them caramelise a little alongside the pork. Add the chilli and five-spice to the pan, then fry for 1 min until aromatic. Tip in the soy mix and let it bubble around the pork and pineapple for a few mins until slightly reduced and sticky. Sprinkle with coriander, and serve with rice and Chinese greens.

2 cups pineapple juice
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/2 cup packed brown sugar
1/2 cup sliced celery
1/2 cup cider vinegar
1/2 cup reduced-sodium soy sauce
1 boneless pork loin roast (3 to 4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons canola oil
1/4 cup cornstarch
1/3 cup cold water

Steps:

  • Mix first six ingredients. Cut roast in half; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides., Transfer to a 5-qt. slow cooker. Pour pineapple mixture over top. Cook, covered, until a thermometer inserted in roast reads at least 145°, 3-4 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast.

2 lbs boneless pork loin
1/2 teaspoon red food coloring
1 tablespoon fish sauce
1 tablespoon soy sauce
2 tablespoons hoisin sauce
1 tablespoon dry sherry
1 tablespoon brown sugar
3 cloves garlic, minced
1 tablespoon minced fresh gingerroot
1 teaspoon five-spice powder
1 tablespoon sesame oil
3 tablespoons cilantro leaves
hot steamed rice

Steps:

  • Pat the pork loin dry; mix the food coloring with 2 tbsp water, and rub the pork with this solution.
  • To prepare marinade, combine fish sauce, soy sauce, hoisin sauce, sherry, brown sugar, garlic, ginger, five spice, and sesame oil in a blender and mix on high for about 30 seconds.
  • Marinate pork in a large ziplock bag or shallow dish, working marinade all over meat, for at least 2 hours, turning meat occasionally.
  • Preheat oven to 450 degrees F.
  • Line a baking dish with heavy foil; place a meat rack in the dish (to elevate roast); oil rack to prevent sticking; place roast on rack in dish and place in preheated oven.
  • After 15 minutes, reduce heat to 350 degrees F.
  • Meanwhile, place marinade in a small saucepan and bring to a boil; boil for 3-5 minutes, stirring constantly, add a little water if mixture becomes too thick; set aside.
  • Cook roast in preheated oven, checking with meat thermometer starting at about 30 minutes, basting at intervals with cooked marinade.
  • For a roast that is medium (has pinkness in the center), go for 160 degrees; for a roast that is well-done (fully cooked), go for 170 degrees.
  • When done, remove roast from heat and let it rest for 15 minutes.
  • Thinly slice roast into 1/4" medallions.
  • and place on a large platter.
  • Garnish with cilantro leaves; serve with hot steamed rice.

ROAST PORK WITH PINEAPPLE

1 (2 lb) boneless pork loin
1 (20 ounce) can pineapple slices in juice
3/4 cup light corn syrup or 3/4 cup dark corn syrup
1/3 cup soy sauce
1/3 cup thinly sliced green onion
1 1/2 tablespoons minced gingerroot
3 cloves garlic, minced and pressed
1/2 teaspoon dry mustard

Steps:

  • Drain pineapple and reserve ¾ cup juice.
  • In medium bowl, stir together corn syrup, reserved pineapple juice, soy sauce, green onion, ginger, garlic and mustard.
  • Add pork and turn to coat well.
  • Cover and refrigerate at least 6 hours or overnight, turning occasionally.
  • Drain and reserve marinade.
  • Place pork on rack in foil-lined roasting pan.
  • Roast in 375 degrees oven, brushing frequently with reserved marinade about 1-½ hours or until temperature in meat thermometer reaches 170 degrees.
  • PINEAPPLE SAUCE: In small saucepan, bring 1 cup reserved marinade to boil.
  • In small bowl, stir together 1 tbsp cornstarch and 2 tbsp water until smooth and stir into marinade.
  • Stirring, bring to boil over medium heat and boil 1 minute.
  • Add 4 pineapple slices and heat until pineapple is hot and glazed.
  • Arrange remaining pineapple slices on a platter.
  • Place pork roast on pineapple and pour pineapple sauce over pork.
  • Serve warm.

3 garlic cloves, crushed
1/2 cup malt vinegar

1/2 cucumber, de-seeded and sliced thinly

Steps:

  • Cut pork into 3 cn cubes.
  • Heat oil in large saucepan add pork and garlic cook for 4-5 minutes.
  • In separate saucepan stir vinegar sugar salt and tomato paste for 3 minutes.
  • Add the vinegar mixture to the pork with tomato onion pineapple cucumber capsicum and jalapenos. Bring to boil reduce until pork is tender.
  • Stir in spring onions and serve.

1 tbsp vegetable oil
bunch spring onions, sliced
small bunch coriander, stalks finely chopped, leaves picked
400g pork tenderloin, sliced
4 tbsp Thai red curry paste
4 tbsp peanut butter
1 tbsp soft brown sugar
1 tbsp soy sauce
400ml can light coconut milk
175g pack baby corn
juice 1 lime
steamed jasmine rice, to serve

Steps:

  • Heat the oil in a large saucepan or flameproof casserole. Add the spring onions and coriander stalks and cook for 1 min. Add the pork slices and cook for 5 mins until starting to brown.
  • Stir in the curry paste and peanut butter. After 30 secs, add the sugar, soy and coconut milk, plus ½ can of water. Mix well, put a lid on and leave to simmer for 15 mins, stirring occasionally.
  • Remove the lid, add the baby corn and increase the heat. Bubble for 3 mins until the corn is cooked and the sauce has thickened a little. Stir in the lime juice and check the seasoning. Can now be frozen for up to 2 months. To cook from frozen: thoroughly defrost, then heat in a pan on the hob until curry is hot all the way through. Serve scattered with the coriander leaves and rice.

1 (16 ounce) can crushed pineapple
2 tablespoons brown sugar
2 tablespoons soy sauce
1 garlic clove, minced
1/4 teaspoon dried basil
2 tablespoons flour
1/4 cup cold water

Steps:

  • Salt and pepper pork roast to taste.
  • Combine all ingredients, except flour and water, pour over roast.
  • Put on lid and cook on low for 8 to 10 hours.
  • Once done, remove roast.
  • Drain and reserve liquid.
  • Return meat and pineapple to crockpot.
  • Add water to liquid to make 1 3/4 cups.
  • In saucepan, blend flour and cold water together to form a smooth paste.
  • Add hot reserved liquid and stir.
  • Cook on medium until thickened, stirring continuously.
  • Pour over roast.
  • Serve with rice or potatoes.

1 pineapple
8 garlic cloves, roughly chopped
1 cup fresh coriander, chopped
1/4 cup rice vinegar
1/4 cup light brown sugar, packed
2 tablespoons soy sauce
2 tablespoons fish sauce
1 tablespoon ground coriander
1 1/2 teaspoons pepper
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg, grated
1 (4 lb) bone-in pork rib roast (about 2 kg)
1/4 teaspoon salt
coriander sprig

Steps:

  • Cut rind from pineapple in wide strips; core and cut pineapple into bite-size pieces. Set aside rind and fruit.
  • In food processor, process garlic and fresh coriander, adding enough of the vinegar to make smooth paste. Mix in sugar, soy sauce, fish sauce, ground coriander, pepper, cumin, cloves, nutmeg and HALF of the cayenne and remaining vinegar.
  • Place pork in roasting pan; cover with spice mixture. Lay pineapple rind (rind side up) over top. Pour 1 cup (250 mL) water into pan; roast in 325°F (160°C) oven for 1-½ hours, adding 1/4 cup (60 mL) water at a time to pan, if necessary, as liquid evaporates.
  • Remove rind; continue to roast pork, basting every 10 minutes with pan juices, until meat thermometer inserted in centre registers 170°F (75°C), 30 to 45 minutes.
  • Transfer to serving platter; surround with pineapple pieces; sprinkle remaining cayenne and salt over pineapple; spoon pan juices over pork. Garnish with coriander stems and leaves, if desired.
