PERFECT MICROWAVE RICE
A different way to make Perfect Rice in the microwave. I didn't believe that it would cook till tender without being covered, boy was I wrong. From cookbook author Kathleen Daelemans.

Steps:
- Place all ingredients except salt in a large microwave safe bowl.
- Rice doubles in size during cooking so choose a container large enough to accommodate final product.
- Microwave uncovered on high for 10 minutes.
- Then microwave uncovered on medium-low for 15 minutes.
- Do not stir rice at anytime during cooking process.
- Season with salt and fluff with a fork before serving.

HOW TO COOK RICE IN MICROWAVE
Learn how to make perfect microwave rice every time using this microwave rice recipe. Rice cooked in the microwave is fluffy, tender and cooks much faster than in a rice cooker or on a stovetop.

Steps:
- Add rice to a microwave-safe bowl or microwave rice cooker. Pour in enough water to cover easily.
- Swish the rice around with your fingertips and drain the water through a sieve. Repeat 2-3 times until the water is mostly clear.
- Add the correct amount of water for cooking and cover (see note).
- Microwave at 100% or High Power for 10 minutes (see note).
- When the cycle is complete, microwave at 50% or Medium Power for 2 more minutes.
- Remove the rice from the microwave and let it rest covered and undisturbed for 3 minutes.
- Fluff with a fork and serve.

PERFECT MICROWAVE RICE
Steps:
- Place all ingredients in a large glass measuring or any microwave safe bowl. Note: the rice expands during cooking, so be sure to choose a container that is large enough. Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.
PERFECT EASY MICROWAVE RICE
I got this recipe with the cookbook that came with my first Microwave and I've been using it ever since! The rice comes out perfect every time. No muss, no fuss and can be served in the casserole dish you cooked it in. You can also use this method for brown rice but increase your cooking time a little.

Steps:
- Using a 2 quart casserole dish with lid, put rice, hot water, butter and salt in dish. Stir. (I put my casserole dish on a plate in the micro as sometimes the water boils over a little. Saves cleanup after).
- Cover, and microwave on high power 5 minutes. Stir with fork (careful watch the steam!)
- Cover and put back in microwave and cook on medium this time for 15 minutes.
- Remove lid (careful again!) and fluff with fork.
- Let stand 2-3 minutes.
- Serve.

- In a bowl, combine the rice, water, soy sauce, sesame oil, and bacon. Stir, then microwave, covered, for about 6-8 minutes until the rice is fully cooked.
- Mix the frozen peas and carrots into the rice.
- In a microwaveable mug, beat the eggs with the salt.
- Microwave the eggs and the rice again for about 1-2 minutes, until the eggs are fully cooked.
- Break up the egg into small bits, then mix it in with the rice.
- Garnish with scallions, then serve!

MICROWAVE RICE PUDDING
I LOVE rice pudding and this is one of my favorite! This is super easy and creamy. Guaranteed not to scorch or curdle! I always add some cinnamon and/or nutmeg or it's great without! Yummy warm or cold. I use leftover rice. This is one of my kids favorite desserts, will not disappoint

Steps:
- Make sure the rice is cooked ahead of time.
- Whisk first 6 ingredients. And raisins if you want, we prefer without ;).
- Put in microwave and cook 1 - 1 1/2 minutes.
- Remove and whisk.
- Put back in microwave for another 1 - 1 1/2 minutes.
- Remove and whisk.
- Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).
- Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!
- Add anything else you want (cinnamon, nutmeg, fresh berries if it's cold, etc).
- Enjoy!
MICROWAVE RICE PUDDING
My wife ran an daycare in our home. This is ome of the kid meals they gave us to help with meal planning. The servings are kid size, but it should be easy to ramp it up to adult portions if needed. You can use cooked regular rice instead of minute rice.
