Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x11-inch baking dish.
- Place bacon in a large skillet and cook over medium-high heat until edges just start to curl, 1 to 2 minutes per side. Drain the bacon slices on paper towels. Reserve about 1 tablespoon bacon drippings in the skillet.
- Cook and stir onion and garlic in the bacon drippings until onion is softened, 6 to 7 minutes. Remove from heat and cool.
- Mix cooled onion and garlic, ground beef, 1/2 cup barbeque sauce, bread crumbs, eggs, Worcestershire sauce, Dijon mustard, oregano, and chili powder together with your hands in a large bowl. Form beef mixture into a log-shaped meatloaf; place in the prepared baking dish.
- Wrap partially-cooked bacon slices around the meatloaf, tucking the ends of bacon underneath the loaf.
- Bake in the preheated oven for 35 minutes. Brush bacon-wrapped meatloaf with 3 tablespoons barbeque sauce. Continue baking until no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand for 10 minutes before serving.

Steps:
- In a large bowl, add the 2 lbs of the ground beef and add the remaining ingredients (except bacon, 1 TBS BBQ Sauce & 1 TBS brown sugar) and mix well. (Set aside)
- Line a flat surface with wax paper and lay down 8 strips of bacon horizontally. Then fold back every other piece of bacon in half. Place a strip of bacon vertically and peel back the folded pieces over the vertical piece of bacon. Next fold back every other piece of bacon again, starting with the strip that you did not fold back before. Repeat the process until you have created a square weave of bacon.
- Add thin layer of BBQ sauce with leftover BBQ sauce on top of weaved bacon square.
- Form the grounded beef chuck into a roll. Place grounded beef roll in center of bacon weave and wrap the bacon around the roll. Tuck in bacon on edges. Add the remaining brown sugar (1TBS) over the weaved bacon beef roll to enhance the flavor of the bacon when cooking.
- Place bacon wrapped meatloaf roll in aluminum pan and place on grill.
- Cook for about 1 hour. Rotate the pan on grill after 30 minutes to ensure it cooks even and thoroughly.
- Remove from grill, let cool on a plate, slice and serve.

- Line a rimmed baking pan with foil; lightly oil the foil or spray with nonstick cooking spray.
- Cut the bacon strips in half crosswise and coat them with the 2 tablespoons of brown sugar, if using. Arrange the bacon on a foil-lined rimmed baking sheet and bake for 15 to 20 minutes, or until almost crisp. Remove the bacon from the oven and let it cool.
- In a large bowl, combine the ground beef, pork, onion, bell pepper, breadcrumbs , cheese, milk, egg, Cajun seasonings, Worcestershire sauce, salt, and pepper.
- Put the ground meat mixture on the prepared foil-lined baking pan and shape into a loaf.
- Spread barbecue sauce over the loaf and arrange the bacon strips over the top.
- Bake the meatloaf until the bacon is crispy and loaf is firm, about 1 hour to 1 hour and 10 minutes. If unsure, check the loaf with an instant-read food thermometer inserted into the center of the loaf. The minimum safe temperature for ground meat is 160 F/71 C.
- Let stand for 10 minutes before slicing or moving to a serving platter.

Steps:
- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
- Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
- Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
- Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
- Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve
YUMMY BBQ BACON WRAPPED MEATLOAF
Wrapped in bacon and smothered in bbq sauce, this meatloaf is about as flavorful and moist as can be. The bacon crisps up well while baking, and the drippings it creates makes the best gravy.

Steps:
- Pre-heat the oven to 350°F / 175°C, and lightly grease a baking pan.
- Get a skillet hot over medium-high heat, and fry bacon for about 1 or 2 minutes on each side, just until it starts curling, and set it aside.
- Drain most of the bacon grease, leaving maybe a tbsp, and sautee the onions and garlic until soft, about 6 - 7 minutes, then set aside.
- Put the next 8 ingredients in a large mixing bowl, adding the cooled onion and garlic, and mix well with your hands. Form the mixture into a meatloaf shape and put in the center of a greased 9×11 casserole dish.
- Take each piece of partially cooked bacon and wrap over the top of the meatloaf, pushing the ends a bit under the meatloaf to hold the shape.
- Bake for about 35 minutes, then remove from the oven and brush the remaining BBQ sauce over the bacon. (This is when I take most of the drippings out to make gravy.)
- Return to the oven for about 10 more minutes (I have a fan assisted oven, and always turn it on now, it makes the bacon more crispy).
- Let stand 10 minutes before serving.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl mix ground beef, eggs, diced onions, ketchup, garlic powder, and onion powder. Mixing with your hands is best. Mix it real well.
- Crush the crackers. I always crush the crackers while still in their sleeve.
- Pour crushed crackers into beef. Mix the crackers into the beef mixture well.
- Form into a loaf shape and set to the side.
- Take the bacon and divide it into even amount.
- Take 1 half of the bacon and lay side by side long ways.
- Fold every other bacon strip in half.
- Lay 1 of the other half of the reserved bacon strips across.
- Unfold the half folded bacon strip.
- Fold the other every other bacon strips that were not folded in the previous step.
- Lay a slice of bacon across and then unfold.
- Repeat until you run out of room.
- Start on the other half of the bacon strip until you have made a weave.
- Pace the loaf shaped beef mixture into the center on your bacon weave.
- Wap the weave around the beef loaf shaped mixture.
- Flip the bacon wrapped meat loaf upside down, making the ends of the bacon tuck under the loaf.
- Place the loaf in the center of the oven on a cookie sheet.
- It takes about an hour to cook.
- To make sure it is cooked all the way through, I sometimes use a meat thermometer but that isn't really needed. Sometimes I leave it in for 15 more minutes if I am worried it isn't cooked all the way.
