THAI PORK CHOPS WITH MANGO



Thai Pork Chops With Mango image

Instead of the usual applesauce or peaches, these Thai chops are accompanied by a tangy mango sauce that marries beautifully with the flavor of pork.

4 pork chops (fat left on)
1 fresh ripe mango
1 handful of fresh coriander/cilantro
2 to 3 tablespoons coarsely ground black pepper
9 cloves garlic (minced)
5 tablespoons soy sauce
3 tablespoons fish sauce
4 tablespoons sherry
1/2 cup rice vinegar or white vinegar
1/3 cup brown sugar (lightly packed, plus 2 tablespoons for the marinade)
1 fresh red chili (minced, or 1/2 teaspoon cayenne pepper or dried crushed chili)

Steps:

  • Place pork chops in a flat baking dish. Sprinkle pepper and 5 cloves minced garlic over both sides and rub in.
  • Combine remaining marinade ingredients (4 tablespoons soy sauce, 2 tablespoons fish sauce, sherry, and 2 tablespoons brown sugar ) in a cup, stirring to dissolve the sugar. Pour over the chops and turn once to saturate.
  • Cover dish with foil and set in the refrigerator to marinate 10 to 30 minutes.
  • Preheat oven to 350 F.
  • Cover tightly with foil and roast 60 to 90 minutes (they will be fully cooked after 1 hour, but 90 minutes will give more tender results).
  • Turn the chops once in the middle of baking. If your baking dish is dry at this point, add 3 to 4 tablespoons water―use boiling water if it's a glass baking dish.
  • While chops are roasting, slice up the mango into small cubes and set aside. For the sauce, place all ingredients ( rice vinegar , 1/3 cup brown sugar, 4 cloves garlic, chili or cayenne pepper, 1 tablespoon fish sauce, and 1 tablespoon soy sauce) in a saucepan and bring to a boil. The vinegar will be pungent as it burns off.
  • Reduce heat to medium and continue simmering sauce 10 minutes, or until it has reduced to 1/3 and has thickened slightly.
  • Remove from heat and taste-test, looking for a tangy flavor that is also spicy and sweet. The sauce may taste strong (sharp) at this point, but it will be perfect when combined with the pork. If you'd like it spicier, add more chili. If it's too sour, add a little more sugar.
  • Remove chops from oven. Turn once before removing to soak up the juices from the pan, then plate them up. Add some fresh mango to each portion, then drizzle over the sauce. Garnish with fresh coriander, and accompany with plenty of Thai jasmine-scented rice (it's also delicious with potatoes).

Another recipe from Cooking Pleasures that I am putting here for safe keeping. Serve these with some jasmine rice and green beans for a lovely meal. Feel free to adjust the amount of jalapenos you use ot suit your taste.

1 tablespoon vegetable oil
4 center-cut pork rib chops, 1/2-inch thick
2 jalapeno peppers, seeded and chopped
2 garlic cloves, minced
1/4 cup fish sauce
4 teaspoons sugar
1/4 cup fresh cilantro, chopped
1/4 cup dry roasted peanuts, chopped

Steps:

  • Heat the oil in a large nonstick skillet over medium high heat until hot.
  • Add the pork chops and cook for 10 min, turning once or until it is no longer pink in the center.
  • Remove to a plate and cover with foil while you prepare the sauce.
  • Reduce the heat to medium and add the jalapeno peppers and garlic to the skillet. If you need to add a little more oil to the skillet, do so now.
  • Cook for 1-2 min or until softened, stirring occasionally.
  • Stir in the fish sauce and sugar.
  • Bring to a boil and boil for 1 minute.
  • Pour the sauce over the pork chops and sprinkle with the chopped cilantro and peanuts.

2 tablespoons lime juice
2 tablespoons oil
2 teaspoons fish sauce
handful coriander
1 garlic clove
4 pork chops
1 cucumber
1 mango
1 onion
rice

Steps:

  • To make the dressing, mix the sweet chilli sauce, lime juice, and 1 tbsp of the sesame oil in a bowl, stirring to combine.
  • Take 1tbsp of the dressing mixture and put it in a separate bowl, then add the fish sauce, remaining sesame oil, half the coriander, the garlic, and the pork, and toss so the meat is well coated.
  • Preheat the grill. In a serving bowl, mix the cucumber, mango, onion, and remaining coriander. Grill the pork for 2-3 minutes on each side, until cooked through. Dress and season the salad, and serve with the pork, along with some rice, if you like.

There are lots of Thai Mango Salad (Som Tum) recipes available in the web. Seems mine is a simplify version of it. Yet its' still a wonderful dinner starter to try. A hint of spiciness, sourness, sweetness and crunchiness will definitely whet your appetite!

800 g green mangoes
180 g red onions
45 g dried anchovies
20 g dried shrimp
25 g red chili peppers
2 -5 g Thai peppers
3 tablespoons plum sauce
1 tablespoon fish sauce
50 ml water

Steps:

  • Skin mango. Cut out two 'cheek' and cut into thin slices.
  • Cut onion in half from 'pole' to 'pole'. Cut each half into thin julienned slices.
  • Rinse twice both dried anchovies and dried shrimps. Dry anchovies in oven for 15 minutes at 100℃. Finely chop dried shrimp. Fry both ingredients until crispy brown.
  • Half red chilli pepper horizontally and scrape out seeds. Cut into thin strips. Finely chop Thai pepper. Add peppers to fish sauce. Add 50 ml water to plum sauce.
  • Prepare a ceramic pot, a masher and a spatula.
  • Add mango, onion, chilli, and sauces to the pot.
  • Mix well while given a nice press.
  • Garnish with fried shrimps and anchovies. Enjoy!

9 ounces halloumi cheese
6 tablespoons seasoned flour
7 ounces mixed salad greens
1 ripe mango, peeled,stoned and sliced
1 tablespoon mint, finely chopped
5 fluid ounces natural yoghurt
1/2 lemon, juice only
salt & freshly ground black pepper
3 tablespoons peanut oil
4 ounces cherry tomatoes, halved
mint leaf, to garnish

Steps:

  • Cut the halloumi into eight slices and then cut each in half.
  • Coat in the seasoned flour and put aside.
  • Arrange the salad leaves on two or four serving plates and place slices of mango on top.
  • To make the dressing, mix the chopped mint, yoghurt and lemon juice together in a bowl and season to taste.
  • Heat the oil in a non-stick frying pan or griddle and quickly fry the halloumi for about 2 minutes on each side, until golden.
  • Arrange the pieces of halloumi on each bed of leaves and drizzle with a little of the dressing.
  • Garnish with cherry tomatoes and mint sprigs and serve immediately with extra dressing on the side.

I really enjoy this salad; I think it has a lovely balance of sweetness and bitterness, softness and crunch - and the colours are lovely too. This will make four side salads, or two meal salads.

6 ounces baby spinach leaves
4 -6 leaves radicchio
8 -12 small red radishes
1 small ripe mango
1 medium ripe avocado
1 valencia orange, juice of
3 tablespoons hazelnut oil or 3 tablespoons almond oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/2 teaspoon cracked black peppercorns

Steps:

  • Wash, pick over and dry the spinach.
  • Wash, dry and tear up the radicchio.
  • Wash and slice the radishes.
  • Peel and slice the mango and avocado.
  • (Actually it is easiest to cut the avocado in half, remove the pit, and lift out'slices' with a flattish spoon.) Mix the spinach, radicchio, sliced radishes, peeled and sliced avocado, and peeled and sliced mango.
  • Whisk together, or shake in a jar, the orange juice, mustard, salt, pepper and oil.
  • Toss gently into the salad.

2 tablespoons peanut oil
2 tablespoons oyster sauce
1 -2 tablespoon minced garlic

Steps:

  • Combine marinade ingredients.

2 ripe mangoes
1/4 red onion, thinly sliced
1/2 red bell pepper, julienned
1 lime, juice of
lime zest (optional)
fresh cilantro

Steps:

  • I find the easiest way to cut up mango for this is to cut off as much as you can, slicing along the side of the pit.
  • You can tell what way the pit grows by its shape.
  • Score the mango halves lengthways, then crossways, into 3/4 inch cubes, going through to the skin, but not through it.
  • Turn the mango halves inside out and slice off the cubes.
  • Toss with remaining ingredients.
  • Goes well with any Thai or Indonesian dish.

This is a nice side salad that I first had as a side at a Thai restaurant, but we like to have it with just about anything. It's a nice combo of sweet and spice.

2 limes
1 tablespoon fish sauce
1 tablespoon sugar
1 red Thai peppers (seeded and minced)
2 tablespoons peanut oil
2 ripe but firm mangoes
1 red bell pepper
1 medium carrot (coarsely grated)
2 green onions (thinly sliced)
1 shallot (thinly sliced)
1/2 cup fresh cilantro (chopped)
1/3 cup chopped peanuts (toasted)

Steps:

  • Zest peel from 1 lime and place in a measuring cup along with 1/4 cup of lime juice.
  • Whisk in fish sauce, sugar and thai pepper until sugar is dissolved.
  • Gradually whisk in peanut oil until blended.
  • Add shallot, mix well.
  • Set dressing aside.
  • Peel mangoes, then cut away chunks of fruit from pits then, cut into thin strips (julienne, or use grater) and place in a large bowl.
  • Seed sweet pepper, cut into very thin strips and add to mangoes.
  • Add carrot, half of green onions, and cilantro. Toss gently until combined.
  • Add dressing and a pinch of salt, toss until mixed.
  • Sprinkle with nuts and remaining green onions.
  • Note: I usually serve this on a bed of lettuce and garnish with a few sprigs of cilantro.
