Easy Thai chicken curry with coconut milk. With simple ingredients and fast prep, this ONE PAN Thai curry recipe will become an instant fave.

1 1/2 pounds boneless skinless chicken breasts (or thighs, or a mix!)
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons coconut oil
1 red bell pepper (thinly sliced)
1 leek (thinly sliced)
2 cloves garlic (minced)
1/2 teaspoon grated fresh ginger
2 tablespoons red curry paste
1 can full-fat coconut milk ((14 ounces) (do not use light, or the sauce won't thicken properly))
3 tablespoons fresh cilantro (torn)
Prepared brown rice or sourdough for serving

Steps:

  • Place a rack in the center of your oven and preheat the oven to 375 degrees F. Season the chicken with salt and black pepper.
  • Melt the coconut oil over medium-high heat in a large, ovenproof skillet. Add the chicken and sear on both sides until deeply golden brown. Transfer to a plate.
  • Reduce the heat to medium-low. Add the bell pepper, leek, garlic, and ginger, and stir to combine. Cook for 2 minutes, until slightly softened.
  • Stir in the curry paste. Cook for 5 additional minutes, stirring often. Slowly pour in the coconut milk while stirring to combine. Return the reserved chicken to the skillet.
  • Place the skillet in the oven and bake for 25 minutes. The chicken will be fully cooked when a thermometer inserted in the thickest part of the chicken registers 165 degrees F, and the juices run clear. (Note: Smaller chicken breasts may be done closer to the 15-minute mark.)
  • Top with cilantro. Serve with rice and fresh sourdough bread for mopping up the sauce if desired.

1 1/2 pound chicken breasts (boneless and skinless (2 or 3 depending on size), cut into small cubes)
2 tablespoon curry powder
1/2 teaspoon chili powder
1/4 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
2 tablespoon olive oil
1 onion (chopped)
3 cloves garlic (finely minced)
1 jalapeno pepper (seeded and chopped)
1/4 cup basil (fresh and torn roughly)
14 ounce coconut milk ((1 can))
1/2 cup chicken broth (low sodium or no sodium added)

Steps:

  • Add the chicken to a small bowl and sprinkle the curry powder, chili powder and salt and pepper. Toss the chicken so that each piece is well seasoned. Set aside.
  • In a large skillet add the olive oil and heat over medium-high heat. Add the chicken and cook for about 5 minutes, just until the chicken starts to brown.
  • Add the onion to the skillet and cook until onion is translucent, about 5 more minutes.
  • Stir in the garlic and jalapeno pepper and cook for another 30 seconds just until the garlic becomes aromatic.
  • Add the chicken broth and coconut milk to the skillet. Bring to a boil, then turn down the heat to a medium and cook for 5 more minutes. Taste for seasoning and adjust with salt and pepper as needed. Stir in the basil and remove from heat.
  • Serve warm over rice.

This is a family favorite recipe the kids enjoy as well. I grown my own Thai basil, so I have lots of it in the summer. It does give the dish much more flavor. When basil is out of season I use cilantro. I eliminate the jalapenos when serving this to my kids.

1 lb boneless skinless chicken, cut into 1-inch pieces
1 tablespoon curry powder
1 large onion, chopped into 1-inch pieces
1 bell pepper, cut into 1-inch pieces
2 jalapeno peppers, seeded and finely chopped (optional)
5 garlic cloves, minced
1 tablespoon fresh ginger, grated or finely diced
1 tablespoon peanut oil
1 (14 ounce) can coconut milk
2 teaspoons cornstarch
1/4 cup Thai basil (or cilantro)

Steps:

  • ~Rinse chicken and pat dry. Place in a storage bag and toss with the curry powder and ½ teaspoon salt. Refrigerate for 30 minutes.
  • ~In a 12-inch skillet, heat 1 teaspoon oil at medium-high heat. Add half of chicken and cook 2-3 minutes or till chicken is no longer pink. Remove chicken and repeat with remaining chicken. Remove chicken.
  • ~Heat 1 teaspoon oil in the same skillet. Add onion and bell pepper, and jalapeno peppers. Cook for about 5 minutes. Add garlic, and ginger just until fragrant, about 30 seconds.
  • ~Stir cornstarch into coconut milk. Turn heat to low and slowly add milk. Cook and stir until thickened. Turn up the heat to medium if needed. Add chicken and basil just before serving. Sometimes I add more curry if needed. Serve over hot rice and garnish with fresh basil. Steamed cauliflower goes well with this dish.

1 tablespoon Thai curry paste
2 tablespoons curry powder
2 teaspoons minced fresh ginger
3 cloves garlic, minced
Dash cayenne pepper
Kosher salt and freshly ground black pepper
8 ounces high-fiber whole wheat linguine, (recommended: DeCecco)
Olive oil cooking spray
1 vidalia onion, chopped
1 pound boneless skinless chicken breast, fat removed, cut into small pieces
Kosher salt and freshly ground black pepper
2 tablespoons curry powder
2 tablespoons peanut butter
1 cup thinly sliced roasted red peppers
1 cup thinly sliced water chestnuts
1 cup scallions, white and green parts, thinly sliced
Chopped fresh mint and cilantro leaves, for garnish
Lime wedges, for serving

Steps:

  • For the sauce: In a medium bowl, combine all of the sauce ingredients, whisk until thoroughly combined and set aside.
  • For the chicken: Cook the whole wheat linguine al dente according to box directions. Drain and rinse under cold water and spray lightly with olive oil cooking spray so it does not stick and set aside.
  • Coat a large nonstick skillet with cooking spray and add onions. Cook until translucent and beginning to brown, about 5 to 10 minutes. Add the chicken, season with salt and pepper and stir in curry powder. Saute chicken until lightly brown. Add the peanut butter and allow it to melt to coat the chicken.
  • Add the roasted red peppers, water chestnuts and scallions and season with salt and pepper as you like. Saute for a few minutes just to release flavor.
  • Pour the coconut curry sauce over the chicken and vegetables and stir gently. Cook just until warmed through and thickened a bit, about 3 to 5 minutes. Season with salt and pepper, as needed. Garnish with chopped mint and cilantro. Serve with lime wedges, if desired.
  • SUZY'S SERVING OPTIONS: (Serves four or more ? can be doubled easily)
  • Family Style ? Put linguine in a large deep platter or decorative bowl and pour mixture over the top. Toss gently with tongs. Garnish with fresh lime juice, and chopped scallions or herbs.
  • Low Carb Diets ? On a large dinner plate place Boston lettuce leaves in a fan covering the entire plate. Place 1/4 of the chicken mixture on top and drizzle with fresh lime juice and garnish with scallions. The sauce will form a natural salad dressing for the lettuce.
  • Individual Plates: Each serving is 2 oz. dry pasta and 1/4 of the chicken mixture. Garnish it with fresh lime juice, a lime wedge and scallions or herbs. Serve it on a small exotic plate for added presentation.
  • NOTE: You may substitute shrimp or tofu for the chicken and it is equally delicious!!

¼ cup sliced shallots
4 cloves garlic, minced

Steps:

  • Whisk chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar together in a bowl until well blended.
  • Heat large skillet over high heat. Drizzle in oil. Add chicken and stir fry until it loses its raw color, 2 to 3 minutes. Stir in shallots, garlic, and sliced chilies. Continue cooking on high heat until some of the juices start to caramelize in the bottom of the pan, about 2 or 3 more minutes. 1/2 teaspoon ground cardamom
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground turmeric
1/4 teaspoon chili powder
1 large red onion, chopped
3 cloves garlic, minced
2 jalapeno peppers, seeded and finely chopped
1 tablespoon olive oil
1 (13 1/2 ounce) can unsweetened coconut milk
2 teaspoons cornstarch
3 tablespoons snipped fresh basil
1 tablespoon finely chopped gingerroot

Steps:

  • Rinse chicken, pat dry.
  • Cut into 1" pieces.
  • Place in medium bowl.
  • In small bowl stir together the cardamom, cinnamon, cloves, coriander,, cumin, salt, pepper, turmeric, and chili powder.
  • Sprinkle over chicken, toss to coat.
  • Cover and let stand at room temperature for 30 minutes or in fridge for 1 to 2 hours.
  • In a large nostick wok or skillet cook and stir onion, garlic, and jalapeno peppers in hot oil over medium heat for 2 minutes.
  • Remove onion mixture.
  • Add about half of the chicken to the wok or skillet.
  • Cook and stir 2 to 3 minutes or till chicken is tender and no pink remains.
  • Remove chicken from pan.
  • If necessary, add more oil.
  • Cook and remove remaining chicken as above.
  • Stir together coconut milk and cornstarch.
  • Carefully add to wok or skillet.
  • Cook and stir till thickened and bubbly.
  • Return chicken and onion mixture to skillet.
  • Stir in snipped basil and gingerroot.
  • Cook and stir about 2 minutes more or till heated through.
  • Serve over rice.
  • Garnish with fresh basil, if desired.
  • Makes 4 servings.
