I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.

OLD FASHIONED PEACH COBBLER
Steps:
- Preheat the oven to 350°F. Spritz a 13 x 9 inch baking dish with cooking spray. Set aside.
- In a medium size mixing bowl, mix together the sliced peaches, cornstarch, granulated sugar, lemon juice and cinnamon.
- Allow to sit and macerate while you prepare the batter and melt the butter. [The amount of sugar can be adjusted depending on the sweetness of the peaches]
- Pour the melted butter into the baking dish.
- In a medium mixing bowl, whisk together the self-rising flour, granulated sugar, milk, egg and extracts. Whisk until fully combined. Carefully pour over the melted butter.
- Stir the peaches then drop evenly over the batter.
- Bake for 40 minutes until puffy and golden. The center should still move when gently shaken. Serve warm with vanilla ice cream.

I've pieced it together from a few recipes to get the balance I like between fruit and topping. It's great for serving to guests and definitely best with some ice cream. This is also great vegan with water or apple juice replacing the buttermilk, and margarine instead of butter. You could even serve it with tofrutti ice cream.

- Preheat oven to 350°F.
- Reserve peals and pits from peaches.
- Mix sliced peaches, sugar, nutmeg and cinnamon powder in a bowl and reserve.
- Combine bourbon (Maker's Mark is really good in this), orange juice, lemon juice, lemon zest, fruit jam, cinnamon stick, and peach scraps in a sauce pan, bring to a boil, then lower to a simmer and reduce mixture for approximately 10 minutes.
- Mix flour, buttermilk, baking powder, baking soda and salt with a dash of cinnamon and nutmeg and set aside or in refrigerator for a few minutes. I have also used Dry Buttermilk Pancake Mix and 1/2 cup milk in place of the flour, buttermilk, baking powder and baking soda.
- Strain reduced orange juice mixture and mix with peaches.
- Pour melted butter into an 8x11" baking pan.
- Spoon dough mixture over butter evenly, but leaving some gaps (this helps the dough rise over the peaches later.
- Pour peaches over dough.
- Bake for about 1 hour at 350F, or until the crust has risen to top of cobbler and crisped slightly. Can add a bit of sugar to top of cobbler just before finished and place in broiler to get a crisper caramelized topping, but beware this can be tricky.

- Preheat the oven to 375°F. Lightly butter a 9-inch square or 2.5-quart baking dish.
- Make the peach filling: In a large bowl, combine the peaches, lemon juice, sugar, cornstarch, cinnamon, and nutmeg. Mix until well combined and the peaches are evenly coated. Set aside.
- Make the biscuit topping: In a medium bowl, combine the flour, 6 tablespoons of the sugar, the baking powder, baking soda and salt. - Place peaches in a large mixing bowl.
- Add ½ cup of the sugar.
- Add extract.
- Add lemon juice.
- Toss gently to coat peaches. Set aside.
- Place flour in a separate small bowl.
- Add baking powder.
- Add the other ½ cup sugar.
- Add dash of salt.
- Stir dry ingredients together.

- Preheat the oven to 350°F.
- Place the butter in the baking dish and then place the dish in the oven to melt the butter while the oven is preheating.
- Remove the melted butter from the oven after a few minutes and set it aside.
- Peel and slice the peaches into quarters, and then halve the quartered peach slices. (If using canned peaches, use a colander to drain the peach juice before slicing them).
- In a medium-sized bowl, mix the ingredients for the peach filling: peaches, brown sugar, cinnamon, nutmeg, and ginger. (I mixed the peach cobbler filling in my Instant Pot inner pot with the lid off and the 'keep warm' setting on.)

- In a second medium-sized bowl, whisk the ingredients for the cobbler batter: Bisquick, milk, sugar, and vanilla.
- Pour the Bisquick mixture over the melted butter in the baking pan.
- Then, pour the peaches into the Bisquick mixture (the dough will rise around the peaches as it bakes).
- Bake at 350 degrees F for 50-60 minutes in the conventional oven. Bake at 350 degrees F for 35-45 minutes if using the Instant Pot Omni Plus oven. Watch the cobbler while baking, and bake until the cobbler dough is golden brown.
