- Preheat oven to 350°. Place tortillas on an ungreased baking sheet. Brush each tortilla with oil; sprinkle with cheese., Place chicken, tomatoes and seasonings in a large skillet; cook and stir over medium heat 6-8 minutes or until most of the liquid is evaporated. Spoon over tortillas. Bake 15-18 minutes or until tortillas are crisp and cheese is melted. Top with cabbage.

- On oven-proof dish, spread refried beans over one tortilla.
- Top with 1/3 of cheese.
- Cover with second tortilla, spread beef and 1/3 of cheese.
- Top with last tortilla. Spoon on sauce. Top with remaining cheese.
- Bake at 350 degrees for 12 minutes.
- Garnish with tomatoes and lettuce.

- Put all ingredients in crock pot. Cook covered, until beans are done and meat falls apart easily; about 5-6 hours on high.
- Shred pork and put on tortillas with cheddar cheese.
- Note: Tapioca is a strange ingredient but it really helps the thickness of this pork. You need to buy the Quick-Cooking tapioca that may come in a little red 8 oz box. You would find this by the jello mixes. I would guess that you could use cornstarch or flour instead of tapioca but I haven't done that before.

OVEN BAKED SPANISH TORTILLA
In this recipe the potatoes are cooked on the stove top and then added to the egg mixture which is then baked until set. It should rest 15 minutes after baking before serving. For planning purposes, the recipe should be started about 1 hour and 20 or 30 minutes before serving.

Steps:
- 1. Preheat oven to 375 degrees.
- 2. Line a 9-inch cake pan with aluminum foil and brush with olive oil on bottom and sides.
- 3. Toss the potatoes, onion, garlic, green onions, bell pepper, 1/2 tsp of salt, and 1/4 tsp of pepper together with olive oil (just enough to coat them) in a large bowl, until the potatoes are thoroughly coated with oil and the potato slices separate.
- 4. In a large, DEEP, 10-inch skillet, heat about 2 Tbsp of olive oil over high heat until hot.
- 5. Reduce heat to medium and add potato mixture to skillet. Set the bowl aside for the moment, but no need to wash, we'll use it again.
- 6. Cover potato mixture and cook, stirring every few minutes until potatoes are tender. About 25 minutes.
- 7. While the potatoes are cooking, whisk the eggs and about 1/2 tsp of salt in the reserved bowl.
- 8. Fold the potato mixture into the egg mixture, scraping the skillet.
- 9. Mix grated Parmesan cheese into the potato/egg mixture.
- 10. Pour the potato/egg mixture into the prepared foil-lined pan.
- 11. Cook, uncovered for about 20-25 minutes or until golden brown and set.
- 12. Slide onto a plate and allow to cool for about 15 minutes before cutting. Serve warm or at room temperature, sliced into wedges.

- In a large non stick saute pan, saute the onion over medium heat until lightly brown and soft. Put the cooked onion in the food processor with drained beans, garlic, taco seasoning, Picante sauce, and ricotta cheese. Pulse until it is a chunky puree.
- Put the mixture back in the saute pan and season to taste with salt and pepper. Heat until hot and bubbling.
- Spray the corn tortillas with cooking spray on both sides. Place them directly on the oven rack and bake for 10 minutes in a preheated 350 degree oven.
- To serve, place the corn tortilla on a plate and top with the bean mixture. Add the chopped onion. I like the crunch from the onion.
