8 corn tortillas
2 (32-ounce) boxes or cans low-sodium chicken broth
Chicken bones, reserved from Day 2
1 large red onion, coarsely chopped
2 large tomatoes, diced
2 medium jalapenos, sliced
1 lime, juiced
2 ears grilled corn, reserved from Day 1
1/2 cup fresh cilantro leaves, coarsely chopped
1 ripe avocado, peeled and cubed
8 ounces crumbled feta, queso fresco, or other fresh white cheese

Steps:

  • Heat oven to 350 degrees F. Cut tortillas into 1/2-inch-thick strips and arrange them on a cookie sheet in a single layer. Bake them 5 to 10 minutes, or until crispy.
  • In a large saucepan, bring the chicken broth and chicken bones to a boil. Reduce heat to low; cover and simmer for 20 minutes. Place a colander over a second large saucepan and strain the broth through it. When the bones are cool enough to handle, pick off the remaining meat and add it to the strained broth. Stir in the onion, tomatoes, jalapenos, and lime juice. Heat about 5 minutes more to blend flavors.
  • Cut the corn from the cobs and add it to the soup. Divide the baked tortilla strips among 4 bowls. Ladle in the soup and serve with bowls of cilantro leaves, cubed avocado, and crumbled cheese to use as toppings at the table.

This came from The Houston Chronicle on Wednesday, January 17, 1990. My US Navy husband was being transferred overseas to Brechin, Scotland and we were visiting with family in Houston before flying out. Found this recipe and have been carrying it around ever since. It's become my signature dish! Don't be put off by the list of ingredients. This soup goes together really quickly. I always double this and have even tripled it. We always make WAAYYY more chips than the recipe calls for. My one tip would be don't settle for bagged tortilla chips. Take the time to fry up some fresh; it makes all the difference in the world.

1/2 cup oil
1 large onion, chopped
1 fresh jalapeno, seeded and diced
4 garlic cloves, minced
2 large carrots, diced
6 celery ribs, diced
1 lb boned diced raw chicken
ground cumin, chili powder, salt and lemon pepper
3 teaspoons Tabasco sauce
1/2 cup flour
1 (14 ounce) can diced tomatoes
4 (10 1/2 ounce) cans chicken broth
8 corn tortillas, cut in strips
diced avocado, sour cream, grated Cheddar cheese, cilantro

Steps:

  • Heat butter and oil in large kettle, and saute chopped onion, jalapeno, garlic, carrots, celery and chicken; simmer 5 minutes. Add cumin, chili powder, salt, lemon pepper, Tabasco sauce and flour. Add tomatoes and chicken stock. Simmer one hour.
  • Drop tortilla strips into oil or melted shortening heated to 375* and fry until crisp; drain on paper towels.
  • To serve, put a few tortilla strips in the bottom of 6-8 soup cups, ladle soup on top and add a spoon of each of sour cream, avocado, cheese and cilantro.

TEXAS THICK & SPICY TORTILLA SOUP

I came up with this after several attempts and still tweaking. Starting with a bland one I found in a cookbook and deleted and added until I got the taste and consistency I liked. Most of the ones I had tried were watery and bland. This is a hot soup. If you don't like hot and spicy, don't make it ,,, you won't like it. I'm from Texas where we like our women, chili and most everything else hot. To make it even hotter, add the whole can of Rotel and leave the Jalapeño seeds in. This will generously serve 6 people. Add garnish if you must or just pour it up and enjoy with a cool glass of iced tea or man beverage of your choice. You can use generic brands for the ingredients but if you are health conscious, check the labels for fat and cholesterol content. The generics I have looked at are usually higher in both compared to name brands.

1 (13 ounce) can shredded cooked chicken breasts, - 98% fat free
1 (14 1/2 ounce) can diced tomatoes
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 jalapeno, seeds removed and diced (3-inch )
2 garlic cloves, diced
1 (14 1/2 ounce) can chicken broth
1 (10 ounce) can rotel
1 (14 ounce) can cream-style corn
1 (16 ounce) can refried beans, Fat Free
1 (10 ounce) can cheddar cheese soup
1 (1 1/4 ounce) package taco seasoning
8 corn tortillas, cut into small triangular wedges

Steps:

  • Pour Chicken Broth into 6 quart stockpot.
  • Drain water from chicken, break apart and add to the broth.
  • Add 1/2 of the pkg of Taco Seasoning... save the rest for next time.
  • Add 1/2 of the can of Beans.
  • Add 1/2 of the can of Rotel.
  • Add remaining ingredients except for the Corn Tortillas.
  • Rinse cans with water and add to the pot .add additional water to your preference as it will boil down and thicken.
  • Start on medium heat until reaching a low boil while continuously stirring. Drop to a low heat and continue cooking for at least an hour, frequently stirring , tasting and monitoring consistency. Add water to thin, more beans to thicken.
  • Once to your liking, add the corn tortilla wedges and cook for another 15 minutes. If you add them too soon, they will dissolve.

2 -3 cups cooked chicken, diced

1 tablespoon vegetable oil
1 medium onion, chopped
6 cloves garlic, minced
2 medium zucchini, quartered and diced
1 (49 1/2 ounce) can chicken broth
2 tablespoons mild chili powder
2 teaspoons ground cumin
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chopped green chilies
1 teaspoon Worcestershire sauce
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen sweet corn
1/2 lime, juice of
2 tablespoons chopped fresh cilantro
3 corn tortillas, quartered and sliced into thin strips

Steps:

  • Preheat broiler and line baking pan with aluminum foil; broil red pepper on all sides until black and charred then place in a bowl under plastic wrap to cool and rest for 15 minutes.
  • Remove charred skin from red pepper; discard core; chop pepper and set aside.
  • In a deep pot heat oil and saute onion and garlic until onion is transparent; add zucchini and cook for 30 seconds more.
  • Add broth, chili powder, cumin, diced tomatoes, tomato sauce, chopped green chilies, Worcestershire sauce and roasted red pepper to the pot, bringing to a boil before lowering heat and covering pot.
  • Simmer 20 minutes, stirring occasionally, then add black beans, sweet corn, lime juice, cilantro, and tortilla strips and simmer 10 minutes more.
  • Serve garnished with cheese and tortilla chips, if desired.

1/4 cup Spanish onion, finely chopped
1 garlic clove, minced
1 carrot
2 tablespoons canola oil
2 chipotle chiles, in abobo sauce chopped
1/2 teaspoon celery seed
2 bay leaves
1 rotisserie chicken, deboned and cut into bite-sized pieces
4 (14 ounce) cans chicken broth
1 (10 ounce) can Rotel diced tomatoes
3/4 cup frozen corn
1 (16 ounce) can black beans, drained
1/2 cup rice
6 corn tortillas
1/4 cup canola oil

Steps:

  • Slice carrot into bite-sized pieces, mince garlic and chop the chipotle chiles, and cut the chicken into bite size pieces. Set aside. In a large soup pot, add enough oil to coat the bottom of the pot. When the oil is warm, add diced onions and chiles. Saute until the onions are translucent. Add the garlic last and simmer for another minute.
  • Add chicken broth and tomatoes to the soup pot. Add celery seed and bay leaves. Stir to blend. Now add the carrots and simmer for 10 minutes. Add chicken, beans, rice, and corn. Stir ingredients and cook for 20 minutes longer. Taste to see if you need more salt and pepper. Remove bay leaves before serving.
  • In a medium saucepan, add about an inch of canola oil to the pan. Cut corn tortillas into one inch strips. When oil is hot, fry tortillas until golden brown. Drain on a paper towel lined paper plate and add seasoned salt if desired.
  • SUGGESTED GARNISHES: Cheddar/Jack Cheese, Sour Cream, Sliced Avocado, Cilantro, Corn Tortilla strips, Lime slices to squeeze into the soup.
  • TIPS & WARNINGS: You can make your own chicken broth so you can control the sodium content. Buy a whole cooked chicken from the deli in your Supermarket and remove the chicken from the bone and cut into bite size pieces if you are pressed for time.

2 cups baby carrots
1 lb raw boneless skinless chicken

6 corn tortillas
4 cloves garlic, whole
1 medium white onions or 1 medium red onion, chopped
2 dried pasilla peppers or 1 ancho chili (can add more based on spice preference)
4 -6 plum tomatoes or 2 medium round tomatoes, roughly chopped
6 cups chicken broth
1 sprig epazote
salt
1 teaspoon ground cumin (optional)
2 tablespoons vegetable oil
6 ounces queso fresco or 6 ounces any crumbly cheese
6 ounces cheddar cheese or 6 ounces monterey jack cheese, shredded
1 ripe avocado, cut into 1/2 inch cubes
1 large lime, sliced
cilantro, finely chopped

Steps:

  • Cut tortillas into 1/4 inch strips.
  • Bake at 400 degrees until golden brown and crisp.
  • Add oil to a saucepan and heat.
  • When hot, add the dried chiles and quickly fry for 30 sec until they crisp up.
  • Remove and drain on paper towels.
  • Add garlic and onion to the oil.
  • Reduce heat and cook them until golden.
  • Add them along with chiles to a food processor.
  • Add tomatoes to the food processor.
  • Blend all into a smooth puree.
  • Set a saucepan over medium heat.
  • Add puree and keep stirring until the puree thickens to a dark red paste (takes almost 10 minutes).
  • Now add the broth, cumin and epazote to the paste.
  • Mix well.
  • Bring to a boil and then cover partially and simmer over a low flame for 30 minutes.
  • Season with salt.
  • Divide cheeses and avocado among soup bowls.
  • Add a ladle of soup and top with some tortilla chips and cilantro.
  • Serve lime slices alongside.
