CROCK POT SCALLOPED POTATOES (WITH OPTIONAL HAM)
This is a great, easy recipe. I got it from a Relief Society Enrichment Night lesson, and have not found its equal anywhere. I have no idea where the sister who contributed the recipe got it, but it sure is great! If you add the ham, it can even be a main dish for lunch or brunch. And while no one can say it's diet food, it's comforting, filling, and a great time saver for big holiday meals.

Steps:
- Layer potatoes, onion, 1 teaspoons salt, and ham (if used) into crock pot.
- Make a roux with butter, flour, and 1 teaspoons salt.
- Slowly add milk, then cheese. Cook over low heat until thickened.
- Pour over potato/ham mixture in crock pot, and gently stir.
- Cover and cook on"Low" 6 to 7 hours or"High" 3 to 4 hours.

Steps:
- Mix water and cream of tartar in a large bowl.
- Stir potatoes into water mixture until potatoes are well coated; drain.
- Layer potatoes and onion in a slow cooker; season with salt and black pepper.
- Heat milk and flour in a saucepan over medium heat, stirring often, until boiling, about 5 minutes; season with salt and black pepper.
- Pour about half the milk sauce over the potato mixture.
- Scatter Cheddar cheese and ham into the slow cooker; cover with remaining milk sauce.
- Cook on Low setting for 9 to 10 hours or on High for 4 1/2 to 5 hours.

- Rub the insert of a 6-quart slow cooker very lightly with the butter on the bottom and 2 inches up the sides.
- Whisk together the cream, broth, flour and thyme in a 2-cup measuring cup.
- Arrange 1/3 of the sliced potatoes in an even and slightly overlapping layer on the bottom of the slow cooker insert. Sprinkle 1/3 of the Gruyere over the potatoes, and add 3/4 teaspoon salt and an even grating of black pepper. Drizzle 1/3 of the cream mixture evenly over the layer. SCALLOPED POTATOES WITH HAM

- Preheat oven to 350 degrees. Butter a baking dish.
- In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
- In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
