Beef, Mango and Avocado Salad image

Whip up a homemade Lime Vinaigrette to use as a quick marinade for Top Sirloin and as the dressing for this simple, yet deliciously fresh salad.

1 beef Top Sirloin Steak Boneless, cut 1-inch thick (about 1 pound)
6 cups mixed salad greens
1 medium mango, cut into 3/4-inch pieces
1 medium avocado, cut into 8 slices
Red onion rings, separated
2 tablespoons crumbled queso fresco cheese
Pepitas (pumpkin seeds) or sunflower seeds (optional)
Salt and pepper
1/3 cup fresh lime juice
1 tablespoon finely chopped fresh cilantro
1/2 teaspoon ground cumin
1 tablespoon honey
2 tablespoons olive oil
1/4 teaspoon salt

Steps:

  • Combine Lime Vinaigrette ingredients in small bowl. Place beef steak and 1/4 cup marinade in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in the refrigerator 15 minutes to 2 hours. Cover and refrigerate remaining vinaigrette for salad.
  • Remove steak from marinade; discard marinade. Place steak on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill 13 to 16 minutes) for medium rare (145°F) to medium doneness (160°F), turning occasionally.
  • Divide salad greens among 4 plates. Top evenly with mango pieces, avocado slices and onion, as desired. Carve steak into slices. Divide steak slices evenly over salads. Sprinkle with cheese and pepitas, if desired. Drizzle remaining vinaigrette evenly over salads. Season with salt and pepper, as desired.

This mango avocado steak salad is the best way to eat steak!

1 lb. sirloin steak
1 head butter lettuce
4-5 large spinach leaves
3 scallions
1 red pepper (sliced in strips)
1 mango (sliced in strips)
1 avocado (sliced in strips)
2 tsp. sesame seeds
1 tbs. lemon juice
1 tbs. lime juice
2 tbs. olive oil
1 tbs. honey
1/2 tsp. salt

Steps:

  • Grill the steak to your liking. Depending on thickness, it should take about 5 minutes per side to achieve a medium-rare steak.
  • Let the steak cool, and then slice it into thin strips.
  • Wash and chop the lettuce and spinach. Place them in a large salad bowl.
  • Add the chopped scallions and the sliced red pepper, mango, and avocado. Place the sliced steak on top.
  • Mix the dressing ingredients together. Dress the salad just before serving, and sprinkle each portion with a half teaspoon of sesame seeds.

White Balsamic Vinaigrette (recipe follows)
salt to taste
1 Tbsp. sugar
1 Tbsp. olive oil
4 1/4 oz. mango, small dice
8 oz. extra virgin olive oil
3 oz. white balsamic vinegar
1/4 oz. shallot, minced
2 each large Fresh California Avocados, peeled, seeded and halved
4 oz. spring mixed greens
6 oz. barrel aged sheep and goat's milk feta cheese
8 1/2 oz. mango, small dice (2 mangos)
Mango Vinaigrette (recipe follows)
6 oz. White Balsamic Vinaigrette

Steps:

  • Place the shallots in a bowl. Add the white balsamic vinegar, set aside for 15 minutes. Add the extra virgin olive oil and whisk to emulsify. Season to taste with salt. Reserve 3/4 cup vinaigrette to dress the salad. Save the remaining 3/4 cup for the Mango Vinaigrette.
  • Place the mango and the tablespoon of olive oil and sugar to a blender. Blend on low speed for 30 seconds; slowly pour in the remaining 3/4 cup of the White Balsamic Vinaigrette. Continue to blend until smooth. Season with salt.
  • Crumble the feta cheese in a large bowl and add the diced mango and a pinch of salt. Add the mixed greens and toss with enough White Balsamic Vinaigrette to completely coat the greens, adding more vinaigrette or salt to taste.
  • Slice each avocado half vertically into approximately 1/4-inch slices, while still leaving the halves intact. Lightly salt the surface of each avocado and set aside for plating.
  • On each plate, drop 1 tablespoon of Mango Vinaigrette in one corner and spread across the plate with the back of a spoon to the opposite corner in a half-moon shape. Spread the slices of each avocado half with both hands to elongate into one strip. Curve each strip into a circle shape and place one avocado ring in the corner of each plate at the tip of the Mango Vinaigrette with the open part of the avocado facing the center of the plate. Place 1/4 of the salad in the center of each avocado ring. Garnish with 2-3 of each flower. Serve.

1 -2 teaspoon ground black pepper

2 boneless top loin beef, steaks, cut 3/4-inch thick (strip, about 8 ounces each)
2 -3 roasted jalapeno peppers (see above)
2 tablespoons fresh lime juice
1 tablespoon coarsely chopped fresh cilantro leaves
1 tablespoon water
1/4 teaspoon salt
3 tablespoons extra-virgin olive oil
8 cups mixed salad greens
1 mango, cut into 1/4-inch slices
1/2 small avocado, cut lengthwise into 8 slices

1 shallot, very thinly sliced and separated into rings
2 tablespoons shaved firm Cotija cheese (use vegetable peeler to shave) or 2 tablespoons parmesan cheese (use vegetable peeler to shave)

Steps:

  • Preheat charcoal grill to medium heat.
  • Place the jalapeno peppers on grill over medium, ash-covered coals. Grill uncovered, for about 11 to 13 minutes or until evenly blistered and blackened. Place in a food-safe plastic bag; close bag. Let stand 10 to 15 minutes until skins are loosened.
  • Press black pepper and salt evenly onto beef steaks. Place steaks on grill over medium, ash-covered coals. Grill, uncovered, 10 to 12 minutes for medium rare to medium doneness, turning occasionally (7 to 10 minutes for medium-rare to medium doneness). Remove from grill and let stand while preparing vinaigrette.
  • Meanwhile prepare Jalapeno Vinaigrette:.
  • Remove and discard skins, seeds and membranes from jalapeno peppers. Place peppers, lime juice, cilantro, water and salt in food processor container. Cover and pulse on and off until combined. With motor running, slowly add oil through opening in cover, processing until well blended.
  • Arrange salad greens on serving platter. Fan the mango and avocado slices over greens.
  • Carve steaks into slices and season with salt, to taste. Arrange over salad. Top with shallots and drizzle with vinaigrette. Sprinkle with cheese.

Looks delicious. Saw Sunny Anderson make this on Cooking for Real. She said it's a great side dish for hot dishes such as jerk chicken. UPDATE: I just made this recipe and WOW is it good! I left out the onions and it was fabulous. I used my expensive balsamic vinegar (which is thick and sweet), however if you want it to be pretty in the end, you may want to use white balsamic and add a pinch of sugar. Great meal starter.
