2 tablespoons chopped red onion
2 tablespoons sour cream
1 tablespoon Dijon mustard
1 teaspoon Montreal steak seasoning
1 tablespoon olive oil, or to taste
salt to taste
4 thin slices Swiss cheese
4 Hawaiian-style hamburger buns

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine turkey, red onion, sour cream, mustard, and steak seasoning in a bowl until well mixed. Form into four 3/4-inch thick patties. Drizzle with olive oil on both sides and season with salt.
  • Cook on the preheated grill until cooked through, about 5 minutes per side, laying Swiss cheese over burgers just before removing from the grill. An instant-read thermometer inserted into the center of the burgers should read at least 165 degrees F (74 degrees C).
  • Place burgers on buns and serve.

1 tablespoon extra virgin olive oil
1/2 cup finely diced onion
1/2 cup finely diced red bell pepper
Salt to taste
1 large garlic clove, green shoot removed, minced
2/3 cup finely grated carrot (1 large carrot)
1 1/4 pounds lean ground turkey breast, preferably organic, from humanely raised turkeys
1 tablespoon prepared barbecue sauce
1 tablespoon ketchup
Freshly ground pepper to taste
Canola oil for the skillet
Whole grain hamburger buns
condiments of your choice

Steps:

  • Heat the olive oil over medium heat in a medium skillet and add the onion. Cook, stirring, until it begins to soften, about 3 minutes, and add the diced red pepper and a generous pinch of salt. Cook, stirring often, until the vegetables are tender, about 5 minutes. Stir in the garlic and the grated carrot and cook, stirring, for another minute or two, until the carrots have softened slightly and the mixture is fragrant. Remove from the heat.
  • In a large bowl, mash the ground turkey with a fork. Add about ¾ teaspoon kosher salt if desired, and mix in the barbecue sauce, ketchup, and freshly ground pepper to taste. Add the sautéed vegetables and mix together well. Shape into 6 patties, about ¾-inch thick. Chill for 1 hour if possible to facilitate handling.
  • Heat a nonstick griddle or a large nonstick frying pan over medium-high heat and brush with a small amount of canola oil, or prepare a medium-hot grill. When you can feel the heat when you hold your hand above it, cook the patties for 4 minutes on each side. Serve on whole grain buns, with the condiments of your choice.

2 pounds ground turkey
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
6 ounces pepper jack cheese, shredded
Vegetable oil, for the grill
2 large peaches, sliced into 1/4-inch slices
1 tablespoon olive oil
1/2 cup mayonnaise
Several dashes of your favorite hot sauce
1/2 teaspoon garlic powder
6 brioche or pretzel hamburger buns
1 cup arugula

Steps:

  • Mix together the ground turkey, Worcestershire sauce, 1/2 teaspoon of the garlic powder, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Portion the burger patties using a 1/2 cup measuring cup. Level off each scoop. Using your fingers, form a well or slight hole in the middle of the burger. Fill the well with 3 tablespoons of the cheese. Gently press to form a patty and completely cover the well of cheese.
  • Heat grill pan or grill over medium-high heat (about 400 degrees F). Liberally oil the grill pan or grill. Cook the burger patties until a meat thermometer reads 165 degrees F and the cheese is melted on the inside, 6 to 8 minutes on each side. The cheese inside the burgers is hot, so let the burgers rest 5 minutes before serving.
  • Toss the peaches with the olive oil in a small bowl. Season with a pinch of salt. Place the peaches on the grill until grill marks appear, 2 to 3 minutes on each side. Be careful not to overcook the fruit. Grill only until grill marks are present on each side.
  • Whisk together the mayonnaise, hot sauce and remaining 1/2 teaspoon garlic powder in a small bowl. Season with salt and pepper.
  • To assemble the burgers, spread the sauce on the bottom bun. Add the arugula and the burger patty and top it off with a sliced peach. Serve immediately.

1 teaspoon cajun seasoning

nonstick cooking spray, for the grill
1/4 cup ketchup
1/2 teaspoon hot pepper sauce

Steps:

  • Spray "grill cooking spray," such as Pam, on the grill grate while it is unheated. Then prepare the outdoor grill for covered direct grilling on medium.
  • In a medium bowl, combine zucchini, onion, and Cajun seasoning until well-mixed. With hands, add ground turkey and mix until just blended. Shape into four 3/4-inch-thick burgers, handling meat as little as possible for best texture.

1 1/2 pounds ground dark meat turkey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup feta cheese, crumbled (preferably goat's milk feta)
2 scallions, minced
1 cup Greek yogurt
1/2 cup grated English cucumber (about 1/4 small peeled cucumber)
1 tablespoon finely minced dill
1 clove garlic, minced or finely grated
1/2 lime, juiced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
5 pita pockets or flatbreads
1 to 2 small avocados, thinly sliced
1 head butter lettuce, leaves separated

Steps:

  • For the turkey burgers: Preheat a grill or grill pan over medium-high heat until hot. Clean and oil the grates.
  • Place the turkey, salt, pepper, feta and scallions in a medium bowl. Mix with your hands until combined. Form into 5 football-shaped patties.
  • Grill the patties until the internal temperature reaches 165 degrees F, 5 to 6 minutes per side. Remove the patties to a plate.
  • While the turkey patties cook, make the tzatziki sauce: Stir together all of the ingredients in a small bowl. Taste and adjust for seasoning, if necessary. Refrigerate until ready to serve, up to 3 days.
  • Lightly grill the pitas, 1 to 2 minutes per side.
  • To assemble: Cut the grilled pita pockets in half. On each of the bottom halves, place 4 to 5 avocado slices, then a turkey patty. Dollop with a generous amount of the tzatziki. Top with a couple of the lettuce leaves. Close the burgers and serve warm.

I came up with this recipe through a magazine I had that my (of all people) gastro doctor suggested. It's called EatingWell and it has healthy recipes. Some of them are frankly off the wall, but this one wasn't bad.

  • Preheat the grill.
  • Mix together, but don't overmix, the burger ingredients and brush with oil.

Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

1 medium yellow onion, peeled
1 pound ground turkey
1/4 cup store-bought or homemade barbecue sauce
2 tablespoons mayonnaise

4 hamburger buns
Toppings (such as shredded iceberg, sliced onion, tomato and pickles) and condiments (mayonnaise, barbecue sauce or mustard), as desired

Steps:

  • Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
  • Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
  • When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
  • Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
  • Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.

1 egg white, lightly beaten
1/4 cup dry breadcrumbs
1/2 cup yellow bell pepper
1/2 cup onion
1 stalk celery
1 small garlic clove
1 tablespoon olive oil

Steps:

  • Pulse onion, garlic, celery and bell pepper in food processor until finely minced.
  • Saute vegetable combo in olive oil on medium heat for 5-8 minutes.
  • Remove from heat, let cool.
