TEXAS TOAST BREAKFAST CASSEROLE
This is our special occasion recipe - we use it for Thanksgiving and Christmas morning as it is easy to prepare the night before, my daughter is having her in-laws over this week and requested it for them. So maybe it is impress the MIL too. :) there are many variations of this recipe this one seems to work best for us.

Steps:
- Brown sausage and drain.
- Place Texas toast in greased 9x12 casserole dish.
- In a medium bowl mix eggs with salt and half and half.
- Pour mixture evenly over bread.
- Top with browned sausage and shredded cheese.
- Cover and refrigerate overnight.
- Take out of refrigerator in the morning while you are preheating your oven to 350 F bake for 45 minutes or until browning on the top.
- note: cooking time does not include overnight refrigeration.

BREAKFAST CASSEROLE
Steps:
- In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.
- Butter a 12 by 10-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed. Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.
- Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.
TEXAS BREAKFAST CASSEROLE
This breakfast casserole is good for any Sunday morning. Prepare it the night before and just throw it in the oven the next morning. It also has endless possibilities. Steps:
- Unroll crescents and line a 13x9-inch Pyrex dish.
- Cover with sausage, mushrooms and half the cheese. (This is where I'd add any extra ingredients you decide on).
- Mix eggs with soup and pour over casserole.
- Sprinkle remaining cheese on top.
- Chill overnight. Bake at 350° for 1 hour.

Steps:
- 1. Lightly coat a 13x9 (or similar size) baking dish with non-stick spray. Add a layer of 1/2 of the chilies.
- 2. Add half of the tortilla strips.
- 3. Add half of the sausage and onion.
- 4. Add half of the cheese to the dish.
- 5. Repeat a second time with remaining chilies, tortilla strips, sausage, onion, and cheese.
- 6. In a medium bowl, whisk eggs, cream, salt, pepper, garlic salt, and cumin together until well combined.
- 7. Pour over casserole.
- 8. Arrange tomato slices on top. Sprinkle with paprika.
- 9. Cover with plastic wrap and refrigerate overnight.
- 10. The next morning, heat over to 350 degrees. Remove plastic wrap and bake casserole 40 minutes or until center has set and edges are lightly browned.
- 11. If desired, serve with sour cream and pico de gallo. I always make up a nice display of these ingredients on a pretty serving tray with a bed of romaine lettuce.
COWBOY CHRISTMAS BREAKFAST
Steps:
- Put oven rack in middle position and preheat oven to 375°F. Generously butter bottom and sides of a 13- by 9-inch baking dish.
- Cook sausage in a 12-inch heavy skillet over moderately high heat, stirring frequently and breaking up any large lumps with a fork, until browned, about 10 minutes. Pour off fat from skillet, then cool sausage to room temperature.
- Cut half of loaf into 1-inch-thick slices and reserve remaining half for another use. Pulse butter and garlic in a food processor until smooth. Spread a thin layer of garlic butter on both sides of each bread slice, arranging bread in 1 layer in bottom of baking dish. Sprinkle sausage on top.
- Whisk together eggs, milk, salt, and pepper in a large bowl until frothy, then whisk in scallions and half of cheese. Pour egg mixture over sausage (bread will float to the top), pushing down on bread with a spatula to help it absorb liquid. Sprinkle with remaining cheese.
- Bake, covered with a large sheet of buttered foil (buttered side down), 30 minutes, then carefully remove foil and bake until top is slightly puffed and eggs are cooked through in center, about 20 minutes more.
- Let stand 10 minutes, then cut into 12 squares.
TEXAS CASSEROLE
This is a nice, smooth, cream cheese & noodle casserole with a tomato based sauce and was a favorite of mine when I was growing up. Mom says it's been in the family for years! Feel free to tinker with the amounts!
