MOM'S MACARONI & CHEESE
I've been eating this macaroni & cheese since I was a little girl. I'm not sure where my mom got the recipe from, but it is delicious. We usually sprinkle with some parmesan cheese before browning.

Steps:
- Melt butter, add flour, salt, and pepper, wisk until smooth.
- Add milk slowly, whisking to blend.
- Cook until thick and smooth, add cheese and stir until melted.
- Cook elbow noodles as directed on package.
- Drain and pour into a baking dish.
- Pour cheese sauce over cooked elbows.
- Bake at 350°F for 15 minutes or until lightly browned.
- *It's best to use a double boiler or nonstick pan to make your cheese sauce.
DAD PAGE'S MACARONI AND CHEESE

Steps:
- Preheat the oven to 400 degrees F.
- Melt the butter in a large pot over medium heat. Add the onions and garlic and cook until they are softened, about 2 minutes. Whisk in the flour and cook, stirring constantly, until the mixture turns light brown, about 3 minutes. Gradually whisk in the milk. Add the paprika, nutmeg, salt, and pepper. Reduce the heat to low and cook, stirring, until the sauce is thickened, about 5 minutes. Add the cheeses and stir until they are melted. Add the macaroni and stir until the noodles are thoroughly coated. Remove from heat. Butter two 6-inch cast iron skillets or one 12-inch skillet. Transfer the macaroni mixture into the skillets. Top with the sliced tomatoes. Sprinkle the bread crumbs on top. Bake until the cheese is bubbling and golden brown, about 30 minutes. Garnish with chopped herbs.
- Preheat the oven to 300 degrees F. Spread the cubes of bread on a baking sheet and toast them in the oven until golden brown, about 15 minutes.
- Place the butter, garlic, and herbs in a small saucepan and heat over low heat until the butter is melted. Toss the toasted bread with the butter mixture in a large bowl and sprinkle with salt and pepper. Process the bread in 2 batches in a food processor until you have fine crumbs. Sift the crumbs through a mesh strainer and process the larger crumbs again until all are fine. (If you do not have a food processor, crush the bread on the baking sheet with a rolling pin.)
MACARONI AND CHEESE FOR MOM AND DAD
I came up with this recipe for the Ready Steady Cook #11 contest. Macaroni and Cheese is near the top of most people's list of comfort food from when they were a child. This dish gives Mac & Cheese a chance to grow up and provide a lush meal. Perhaps even a romantic meal. The idea of putting in the sun dried tomatoes came from Amish Macaroni and Cheese that usually includes slices of tomatoes. I originally thought that this made enough for two big servings but a lot of people have commented that it makes more like four servings. Perhaps I wrote down the wrong amount of pasta that I used but it appears to be working with the larger serving amounts. I have also made this with low fat versions of the cheeses and it has worked well that way too and with fewer calories.

Steps:
- Preheat oven to 350 degrees.
- Cook macaroni according to package directions, drain and set aside.
- Melt butter in saucepan.
- Add shallots, sun dried tomatoes and mushrooms and cook them for a minute or two until they are just tender.
- Stir in flour and mustard powder.
- Slowly add milk.
- Bring to a low boil and stir often until the sauce has thickened a bit.
- Stir in the cheese and the white wine. Stir constantly until the cheese has completely melted.
- Add the cooked macaroni to the pan with the sauce and stir until the all of the pasta is coated by the sauce.
- Transfer to an oven proof dish and bake in the oven for about 15 minutes.
- Serve.

MOM'S BAKED TOMATO AND CHEESE MACARONI
This is not your everyday mac & cheese. It always tasted best when Dad would stop in Pinconning MI on his way home from deer hunting each year to pick up a huge round of Pinconning cheese. Mom had 5 hungry kids sitting at the table waiting for this to come out of the oven!

- Note 1: If you can't find Ready-Cuts, use a small penne pasta or mostaccioli. Elbows don't have enough substance for this recipe.
- Note 2: You may use stewed or diced tomatoes.
- Note 3: I use a combination of Pinconning, Colby, and mild Cheddar cheese. You may use your favorite(s).
- Boil macaroni in salted water, 3 minutes less than package directions. Drain. It will finish cooking in the oven.
- Sauté onion in butter until soft and translucent. Add the can of tomatoes to the onions and let simmer over low heat for 5 minutes.
- Cut cheese into small chunks and set aside.
- Preheat oven to 350°.
- Spray a 9X14" glass pan with non-stick cooking spray. Layer half the tomatoes and cheese in the pan. On top of this, layer 1/2 of the cooked, drained macaroni, then the remaining tomatoes, then the remaining macaroni, and top with the remaining cheese.
- Pour 1/4 cup water over the top. Cover with foil.
- Bake in the oven for 35 to 45 minutes. Remove from oven and let stand for 5 minutes before serving.

Steps:
- Cook macaroni in boiling salted water until tender; drain.
- Mix cooked macaroni with butter, stirring well.
- While macaroni is cooking, cook ground beef, garlic and onion in a large skillet until beef is browned and cooked through.
- Drain any accumulated fat.
- Add chili powder, salt, pepper, tomato sauce, diced tomatoes (with their juice), mixing well.
- Bring meat mixture to a boil, then reduce heat, cover and simmer for 10-15 minutes or until macaroni is done.
- Mix meat mixture with cooked buttered macaroni (do NOT add any additional milk as package suggests).
- Sprinkle contents of cheese packets into pasta and stir until blended.
- Serve garnished with grated cheddar, if desired.

Steps:
- Cook macaroni until ala dente.
- Melt cheese and milk to make a cheese sauce, I do this in the microwave at 50% power. Save 6 slices of cheese for top of casserole.
- Mix the macaroni and cheese and put into a 4 quart casserole that has been sprayed with a nonstick cooking spray.
- Put the 6 slices of cheese on top of casserole and then top with bread crumbs and put pats of butter on top of that.
- Bake in preheated 350 degree oven for 45 minutes or until browned and bubbly.

- Preheat oven to 350 degrees F.
- Cook macaroni and drain.
- Mix all ingredients except paprika and 2 cups Mexican blend or cheddar cheese in a 2-quart baking dish.
