1 (12 ounce) package ziti
1 pound ground beef
1/2 onion, chopped
2 cups spaghetti sauce
1 cup salsa
1 (15 ounce) container ricotta cheese
2 cups (8 ounces) Mexican cheese blend, shredded and divided
2 tablespoons fresh cilantro or parsley, chopped

Steps:

  • Preheat oven to 350°F. Coat a 9- x 13-inch baking dish with cooking spray. Prepare pasta according to package directions. Drain, rinse, and drain again; set aside in a large bowl. Meanwhile, in a large skillet over medium heat, brown beef and onion 5 minutes; drain off excess liquid. Add to drained pasta along with spaghetti sauce, salsa, ricotta cheese, and 1 cup cheese; stir until well combined. Spoon into prepared baking dish. Bake 25 minutes. Remove from oven and sprinkle with remaining cheese. Return to oven and bake 10 more minutes, or until cheese is melted. Sprinkle with cilantro just before serving.

1 cup picante sauce
1 (15 ounce) container ricotta cheese
2 cups shredded Mexican blend cheese, divided
2 tablespoons chopped fresh cilantro or 2 tablespoons parsley

Steps:

  • Preheat oven to 350°F Coat a 9" x 13" baking dish with cooking spray.
  • Prepare pasta according to package directions. Drain, rinse, and drain again; set aside in a large bowl.
  • Meanwhile, in a large skillet, brown beef and onion over medium heat for 5 minutes; drain off excess liquid. Add to the drained pasta along with spaghetti sauce, picante sauce, ricotta cheese, and 1 cup Mexican cheese blend; stir until well combined.
  • Spoon into prepared baking dish and bake 25 minutes. Remove from the oven and sprinkle with the remaining 1 cup Mexican cheese blend. Return to the oven and bake 10 minutes, or until cheese melts. Sprinkle with chopped cilantro just before serving.

3/4 cup salsa verde
1/2 cup sour cream
2 tablespoons extra-virgin olive oil
1 12-ounce bag small broccoli florets (about 4 cups)
1 large red bell pepper, diced
3 scallions, sliced (white and green parts separated)
3 cloves garlic, minced
Kosher salt and freshly ground pepper
1 teaspoon ground cumin
2 cups shredded rotisserie chicken, skin removed
3 cups frozen cooked brown rice, heated as directed
1 1/4 cups shredded Mexican cheese blend

Steps:

  • Preheat the broiler. Whisk the salsa, sour cream and 3/4 cup water in a bowl.
  • Heat the olive oil in a large ovenproof nonstick skillet over medium-high heat. Add the broccoli, bell pepper, scallion whites and garlic; season with salt and pepper. Cook, stirring, until softened, about 6 minutes. Add the cumin and stir until toasted, 30 seconds.
  • Stir in the chicken, rice, salsa mixture and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium and simmer until heated through and saucy, 1 to 3 minutes. Fold in half of the cheese; top with the rest. Broil until the cheese melts, 2 to 4 minutes. Top with the scallion greens.

2 eggs
4 Tbsp butter, melted
8 1/2 oz can cream-style corn (or half of a regular 15 oz can is close enough)
1 c sour cream
1 c yellow cornmeal
3 jalapeño chiles, seeded and minced
1/2 c chopped onion
3 Tbsp chopped jarred pimento
4 tsp baking powder
3/4 tsp salt
1 c shredded sharp cheddar cheese (4 oz)

Steps:

  • 1. Put a well-oiled 9-inch cast iron skillet into a cold oven and heat to 400ºF. Meanwhile, in a large bowl, combine the eggs and butter. Work together with fork. Stir in remaining ingredients until well mixed.
  • 2. Carefully remove hot skillet from oven and pour batter into hot skillet. Return the pan to the oven and bake until the cornbread is firm to the touch - about 1 hour or until crust is a deep golden brown. Cut into wedges; serve hot.

A quick and easy way to prepare a tasty and filling pasta dish, originally from Mr. Food. Just use your favorite bottled spaghetti sauce. You can use any shape of pasta. I do add more cheese, but I love cheese!

16 ounces ricotta cheese
3 cups mozzarella cheese, grated
3 cups spaghetti sauce
1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350.
  • Boil ziti, following package directions, drain and place in a large bowl.
  • Mix all the ricotta cheese and half of the mozzarella with the ziti.
  • Spray a 13x9 pan with Pam.
  • Cover the bottom half of the pan with about half the sauce.
  • Put the ziti mixture on top of sauce.
  • Pour remaining sauce on top of ziti.
  • Sprinkle with the parmesan cheese.
  • Top with the remaining mozzarella cheese.
  • Bake for 20-30 minutes until cheese is melted and it is lightly golden.
