⅔ cup water
¼ cup maple syrup
¼ cup dark rum
¼ teaspoon ground nutmeg

Steps:

  • Combine butternut squash, water, maple syrup, rum, and nutmeg in a saucepan; bring to a boil. Reduce heat and simmer, stirring occasionally, until squash is tender, about 15 minutes.
  • Remove butternut squash from saucepan using a slotted spoon and transfer to a serving dish, reserving liquid in the saucepan. Continue simmering liquid until reduced and thickened, 5 to 10 minutes; pour over butternut squash.

1 butternut squash (about 2 1/2 pounds), peeled, halved, seeded and thinly sliced
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons pure maple syrup
Zest and juice of 1 orange
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F. Toss the squash with the oil and a generous pinch each of salt and pepper in a large bowl. Tile the squash slices in a 9-by-13-inch baking dish, overlapping the pieces. Stir the maple syrup, orange zest and juice together in a small bowl and pour over the squash.
  • Cover with foil and bake 30 minutes. Uncover and continue to bake until the squash is tender and the top begins to brown, 30 to 40 minutes more. Scatter the parsley over the top.

1 small butternut squash, peeled, halved lengthwise and seeded (about 2 pounds)
2 tablespoons vegetable oil
1/4 cup pure maple syrup
2 tablespoons apple cider vinegar
1 tablespoon whole-grain mustard
1 teaspoon chopped fresh rosemary
1 teaspoon Worcestershire sauce
Pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter

Steps:

  • Cut the squash into bite-sized pieces. Heat the oil in a large skillet over medium heat. Working in batches, cook the squash, flipping until browned, about 5 minutes. Transfer to a bowl.
  • Whisk together the maple syrup, vinegar, mustard, rosemary, Worcestershire sauce, pepper flakes, 2 1/4 cups water, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl.
  • Return the skillet to medium heat and pour in the maple mixture, scraping up any brown bits from the bottom of the pan with a wooden spoon. Bring to a boil and return the squash to the pan. Reduce the heat to maintain a low simmer and cook, stirring occasionally, until the liquid almost completely evaporates and the squash is cooked through and glazed, about 25 minutes.
  • Remove from the heat, add the butter and gently stir until melted. Season with salt and pepper. Adjust the consistency of the glaze with 1 to 2 tablespoons of hot water if too thick.

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Bring a large pot of water to a boil over high heat. Add squash and boil until almost tender yet still firm, 5 to 8 minutes.
  • Meanwhile, melt butter in a skillet over low heat. Stir in maple syrup and brown sugar and cook until sugar has dissolved, about 5 minutes.

2 red onions, peeled and cut into wedges
6 garlic cloves, peeled, left whole

1 tablespoon coarse grain mustard
2 zucchini, sliced thickly
6 sprigs thyme

  • Set the oven to 400°F Cut the squash into chunks, and mix in a roasting tin with the onion wedges and all but 2 of the cloves of garlic. Sprinkle in 1tbsp of the oil, mix well and season. Roast for 15 minutes.

Sprinkle with salt and pepper. Cook in in the preheated oven for about 30 minutes or until tender. Turn and flip the pieces over with a metal spatula about 1/2 way through the cooking time.
  • While the butternut squash is roasting in the oven, cut the raw bacon into approximately 1/2″ pieces. Cook in a frying pan, according to package instructions, until fully cooked and crispy. Once the bacon is done cooking, remove the pieces from the pan with a metal slotted spoon to a bowl. Separately reserve about 1 1/2 teaspoons of bacon grease.
