2 tablespoons peanut oil (preferably roasted)
4 cups baby spinach (about 2 ounces)
8 ounces sugar snap peas, trimmed and halved
1 orange bell pepper, cut into strips
1 10-ounce container yellow and/or red cocktail tomatoes, quartered
4 scallions, thinly sliced
1/2 cup fresh basil leaves, thinly sliced
2 cups shredded rotisserie chicken (skin removed)
1/2 cup salted roasted cashews, roughly chopped
Kosher salt and freshly ground pepper
2 cups cooked brown rice (thawed if frozen)

Steps:

  • Whisk the teriyaki sauce, peanut oil and 1/4 cup water in a large bowl until smooth. Add the spinach, snap peas, bell pepper, tomatoes, scallions, basil, chicken and cashews; toss to combine and season with salt and pepper.
  • Warm the rice in the microwave. Serve topped with the chicken-vegetable salad.

6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame seeds , to serve
4 spring onions, shredded, to serve
sticky rice, to serve
steamed bok choi or spring greens, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
  • Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

½ cup onion, diced
1 tablespoon garlic, minced
½ cup carrot, diced
1 cup broccoli floret

Steps:

  • Marinate the chicken in teriyaki sauce in the refrigerator for at least an hour.
  • In a wok or deep skillet, add the chicken in the teriyaki marinade and cook thoroughly over high heat. Set aside.
  • In the same pan, add the oil and cook onions, garlic, and carrots until onions are translucent.
  • Add broccoli and cook an additional 3-4 minutes. Push all of the cooked vegetables to the side of the pan.

1 cup uncooked brown rice* (see first note)
water** (see second note)
6 (3-4 ounce) boneless skinless chicken thighs
¼ cup light soy sauce
¼ cup mirin
2 garlic cloves, minced
1-inch fresh ginger root, grated
1 tbsp brown sugar
1 tbsp cornstarch
1 tbsp vegetable oil
1 tbsp vegetable oil
3 garlic cloves, minced
1½ lb. (2 bunches) kale, stems removed and chopped
¼ cup water
Salt and pepper
¼ cup toasted sesame seeds
¼ cup furikake (Japanese rice seasoning)

Steps:

  • For the rice. Cook the rice according to package directions.
  • For the teriyaki chicken (Part 1). As the rice cooks, in a medium bowl, whisk together the soy sauce, mirin, garlic, ginger, brown sugar, and cornstarch until well combined.
  • Place the chicken thighs in a large ziploc bag and pour the sauce over the chicken. Squeeze out excess air before sealing the bag. Gently squeeze the bag with your hands, making sure that the marinade coats the chicken.
  • Place the bag flat on a baking sheet and marinade the chicken in the refrigerator for 20 minutes.
  • For the garlicky kale. As the chicken marinades and the rice cooks, heat a large nonstick skillet to medium heat, add vegetable oil, and stir in garlic until lightly golden. Add in kale and water, and carefully stir to combine until the kale starts to wilt. Cover and let it steam for 5 minutes.
  • Remove the lid, season with salt and pepper, and stir occasionally until the liquid has mostly evaporated and the kale is tender, about 2-3 minutes. Remove from heat and set aside.
  • For the teriyaki chicken (Part 2). Heat a large non-stick skillet to medium-high heat, add vegetable oil and swirl to coat the skillet. Place the chicken thighs (along with the marinade) in the skillet so that they are not touching.
  • Cook the chicken, spooning the marinade (sauce) over the chicken occasionally and flipping once, about 6-8 minutes on each side or until completely cooked through.
  • Remove the chicken from the skillet onto a cutting board and let it rest for 5 minutes before slicing.
  • Assemble the bowls. Evenly divide the ingredients into separate bowls or containers***(see third note). Sprinkle chicken and kale with sesame seeds and rice with furikake if you like. Serve immediately or let it cool completely before sealing with a lid for meal prep or leftovers.

2 pounds boneless chicken thighs ((cubed))
1 teaspoon cornstarch
1 teaspoon soy sauce
½ teaspoon ground black pepper
1 tablespoon olive oil
¼ cup soy sauce
¼ cup water
3 tablespoons honey
1 tablespoon rice wine vinegar
¼ teaspoon sesame oil
1 teaspoon ginger paste
3 cloves garlic ((minced))
2 teaspoons cornstarch
1 tablespoon orange marmalade
1 teaspoon water
1 teaspoon cornstarch

Steps:

  • In a large bowl coat chicken with 1 teaspoon of corn starch, 1 teaspoon of soy sauce, and black pepper. Set to the side.
  • Heat oil over medium high heat in a large wok. Add in chicken and stir fry for 4-5 minutes or until the outside is a beautiful golden color.
  • Add remaining sauce ingredients into a small bowl. Set to the side.
  • Once chicken is a beautiful golden color, add in mixed sauce. Continue cooking, stirring occasionally for 4-5 minutes, or until chicken has cooked through.
  • To thicken the sauce, make the cornstarch slurry. Add water and cornstarch to a small bowl and mix well. Pour the slurry over the sauce once chicken has cooked.
  • Allow the sauce to thicken by cooking an additional minute or two.
  • Serve over rice.

1 tablespoon vegetable oil
1 1/2 cups water
1/4 cup low-sodium teriyaki sauce or 1/4 cup low sodium soy sauce
1/2 teaspoon garlic powder
2 cups Minute brown rice, uncooked
2 cups fresh broccoli florets (or frozen)
1/2 cup peanuts (optional) or 1/2 cup cashews (optional)

Steps:

  • Add the oil to a skillet and heat.

2 tbsp soy sauce (Japanese preferred)
2 tbsp mirin
2 tbsp sake
1 tbsp sugar

Steps:

  • Add the chicken, skin side down to a dry, non-stick pan. The chicken will render out enough fat that you don't need to add any extra. Turn the heat on to medium and cook until the skin is brown and crispy, about 15-20 minutes, then flip.
  • Meanwhile, make the sauce: in a small sauce pan, add the soy, mirin, sake, and sugar and bring to a gentle simmer. Whisk the cornstarch with 1 tablespoon water and whisk into the sauce. Bring to a simmer and let thicken slightly. Set aside.
  • When the chicken skin is brown and crispy, flip and cook the other side for 5 minutes and check to make sure the chicken is cooked through. Rest on a cutting board for five minutes, then slice into strips and serve with teriyaki sauce with rice, cucumbers, green onions and toasted sesame seeds.

½ cup Wattie's Frozen Peas
250g pkt microwave long grain rice
½ cup Mung bean shoots
Asian fried shallots to garnish (optional)

Steps:

  • Place chicken in a saucepan. Pour over 1/3 of the Wattie's WOK Creations Teriyaki Stir Fry Sauce and add 1/3 cup water. Bring to the boil. Reduce heat and simmer for 5 minutes. Turn the heat off and leave the chicken in the saucepan while preparing the fried rice.
  • Heat sesame oil in a wok or non-stick frying pan. Add beaten eggs and stir while cooking for 1 minute until they are softly scrambled. Remove eggs from pan and set aside. Wipe out the pan if necessary.

  • Heat oven to 375*.
  • Spray 13x9 inch glass baking dish with nonstick cooking spray. In sprayed baking dish, combine carrots, rice, corn nuggets, broth and 2 tablespoons of the teriyaki sauce; mix well.

  • The Rice and the Sauce. With the vegetables cooking, you can now start the rice and the teriyaki glaze. For rice, I use Kokuho Rice. I stopped using the cheapest rice I could find at the store a long time ago.
