BROCCOLI ELEGANT
My family loves this creamy vegetable side dish. As pretty as it is tasty, it's an extra-special way to serve broccoli, and it really dresses up a table.

- In a saucepan over medium heat, combine the water, 1/4 cup butter and the seasoning packet from stuffing mixes; bring to a boil. Remove from the heat; add stuffing crumbs and toss. Let stand for 5 minutes. , Spoon stuffing around edges of a greased 13x9-in. baking dish. Place broccoli spears in center of dish. In a saucepan over medium heat, melt remaining butter. Stir in the flour, bouillon and salt until smooth. Gradually add milk, stirring constantly; bring to a boil. Cook and stir for 2 minutes or until thickened. , Add cream cheese; stir until melted. Add onions; mix well. Pour over broccoli. Cover and bake at 350° for 20-25 minutes or until heated through. Sprinkle with cheese and paprika.

Steps:
- Steam broccoli until tender and chop.
- In a saucepan, combine broccoli, onion, and chicken broth.
- Bring to a boil, reduce heat, and simmer 10 minutes.
- Melt butter in another saucepan.
- Add flour, salt and pepper and stir until smooth.
- Stir in the cream.
- Combine sauce and broccoli and cook over medium heat until heated through.
- Serve hot or cold.

ELEGANT BROCCOLI BISQUE
This was nice straight from "Vegan Vittles", but I've tweaked it to make this creamy, light-green soup truly irresistable. My whole family (little bro included!) enjoys this in fall or winter weather.

Steps:
- In a medium pot, combine the potatoes, water or stock, onion , tarragon and broccoli. (Note: If using frozen broccoli, wait 5-10 minutes before adding it.) Bring to a boil, then reduce to a simmer for 10-15 minutes, till the vegetables are tender.
- Combine the milk, almond butter, tahini, mustard and stir together well. Set aside.
- Transfer the vegetables, in batches, to a food processor and blend each batch with some of the milk mixture. Blend about 20-30 seconds, until smooth but still just chunky enough to be thick.
- Return the soup to the pot. Pour that last 1/2 cup of liquid into the food processor to rinse it out into the pot. Stir in the salt and white pepper, to taste.
- Reheat over medium-low, for five minutes or so. Serve with sandwiches, baked potatoes, or rolls with almond butter or margarine.

BIG FLAVOR BROCCOLI
Chances are you're trimming off and discarding way too much of your broccoli stems. The stems are so flavorful, they should be their own vegetable.

- Preheat oven to 400°F. Trim only the very bottom, woody part of broccoli stem. Peel tough outer layer from stem, from the florets down to the end of the stalk. Starting from stem end, cut broccoli at a 45° angle into ¾"-thick slices until you reach the florets. Break florets apart with your hands into bite-size pieces (this avoids getting bitsy trimmings all over the place).
- Heat 3 Tbsp. oil in a large heatproof skillet over medium-high until shimmering. Add broccoli; season with salt. Cook, tossing occasionally, until broccoli is bright green and lightly charred, about 3 minutes. Transfer to a plate. Wipe out skillet.
- Heat remaining 2 Tbsp. oil in same skillet over medium. Cook onion and garlic, stirring often, until onion is beginning to soften, about 3 minutes. Add anchovies and cook, breaking apart with a spoon, until broken down and garlic is beginning to turn golden around the edges, about 2 minutes.
- Return broccoli to skillet and toss to coat with oil. Transfer to oven and roast, tossing once, until broccoli is browned and tender, 20-25 minutes. Wrap handle of skillet with a towel before you forget it's REALLY HOT.
- Scatter Parmesan over hot broccoli. Divide among plates. Serve with lemon wedges alongside.

- 1. Put chopped broccoli in dutch oven (along with chopped cauliflower greens if desired).
- 2. Add stock, onion, butter, salt and pepper.
- 3. Bring to a boil and reduce heat.
- 4. Simmer, covered, for 8-10 minutes.
- 5. Puree in blender.
- 6. Stir in lime juice, sour cream and chives. Serve hot.
- 7. To serve cold, do not add in the sour cream or chives. Place pureed soup in refrigerator, covered, for 4 hours. Top with sour cream, chives and garnish with lemon slices.
ELEGANT SEAFOOD BISQUE
Steps:
- In a Dutch oven, saute onion and garlic in 3 tablespoons oil until tender. Stir in flour until blended; cook and stir for 2 minutes or until golden brown. Stir in broth and bouillon. Bring to a boil. Cook and stir for 2 minutes or until thickened., Stir in the tomato sauce, juice, wine, basil, salt and pepper. Return to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add cream; heat through (do not boil)., Meanwhile, in a small skillet, cook shrimp and lobster in remaining oil until shrimp turn pink, about 5 minutes. Add to soup. Garnish servings with additional basil.

- Clean the broccoli and cauliflower, reserving 3/4 cup of the broccoli, and 3/4 cup of the cauliflower florets, chopping the rest fine.
- Saute green onios in margarine until tender.
- Stir in flour, cooking for 1 minute.
- Stir in Chicken stock, chopped broccoli and cauliflower, potatoes, chives, and basil and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Process in food processor until smooth.
- Add milk and reserved broccoli and cauliflower florets until boiling again.
- Reduce heat and simmer until florets are crisp-tender.
- Season to taste with salt and pepper.
ELEGANT SEAFOOD BISQUE
This makes a to die for super rich seafood bisque, chocked full of seafood such as shrimp, crab, salmon, clams and cod and is lower carb than most,due to no potatoes. Hint for low carbers: use Wondra "instant flour" and all you will need is about 1 or 2 TBS to thicken. The original recipe was obtained from a local restaurant.

- Sauté minced shallots in butter until soft.
- Add the flour and stir with whisk for 5 minutes on low heat, set aside.
- Bring one quart of water to a boil and add chicken base, clams, crab, shrimp and whole pieces of salmon and cod.
- Return to boil, lower heat and simmer for 5 minutes.
- Strain the stock, reserving the seafood.
- Stir the shallot mixture into the stock.
- Add the heavy cream and half and half to the stock, bring to a simmer on low heat and cook until thickened, about 5 minutes.
- Chunk the salmon and cod and add all of the seafood back into the soup pot.
- Add the sherry and heat through, no more than 3 minutes.
BROCCOLI BISQUE
Steps:
- 1. Place the cut broccoli in a large saucepan along with the broth, onion, butter, salt, curry powder and pepper; Bring to a boil.
- 2. Reduce heat and simmer, covered, for 8 to 12 minutes or until broccoli is just tender.
- 3. Place about 1 1/2 to 2 cups of the mixture at a time into a blender container; Cover and blend until smooth.
- 4. Pour into bowl or another large pan; Repeat with remaining mixture - BE CAREFUL. THE HOT LIQUID MAY SCALD YOU.
- 5. Stir in the lime juice.
- 6. Now you can either cover and refrigerate at least 4 hours to serve cold (great in warm weather), or you can go right ahead and serve it hot (great in cold weather).
- 7. Once ladled out, you can garnish with a thin slice of lemon, a small dollop or sour cream, and a sprinkling of chives.
- 8. NOTE: You can refrigerate unused portions for serving later, but it doesn\'t keep well for long.
