- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Season with salt and pepper. , Transfer to a greased 2-qt. baking dish. Top with potatoes. Combine soup, milk and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker; pour over potatoes. Sprinkle with cheese. Bake, uncovered, until heated through, 30-40 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.
- In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).
- Top with frozen tater tots.
- Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

Steps:
- Preheat oven 375°F.
- Let the tater tots you are using to set out for a few minutes to soften so you can squish them.
- Grease 12-cup muffin pan with vegetable oil.
- Take 4 or 5 tots place in each cup.
- Mash with pestle or back of spoon to line the bottom and sides of each cup.
- Add 1 tablespoon of cheddar cheese.
- Press down in bottom of the cup with spoon.
- Place in oven and cook 5 minutes.
- Take out of the oven and break an egg in each cup.
- Bake 15 minutes until white and yolk are set. It could be 20 minutes.
- Check frequently.
- If you want the yolk to be basted, spoon a little water on top of each yolk.
- Remove from oven.
- Use a heat resistant rubber spatula to loosen edges and bottom of each tater tot cup.
- Serve on serving platter.

- Preheat oven to 400 degrees F. Spray a 12-well muffin tin with nonstick cooking spray. Place 5 tater tots in each well and bake for 20 minutes until tater tots are soft.
- Remove from oven and use the bottom of a shot glass or your fingers to press the tater tots flat on the bottom and up the sides of each well. Bake until golden and crisp, about 15 minutes.
- In a large bowl, stir to combine the sausage, Colby cheese, cheddar cheese, parmesan cheese, roasted red bell peppers, mayonnaise, sour cream, ranch seasoning and chopped scallion whites. Spoon the mixture into the tater tot cups, then return to the oven and bake until cheese is melted, about 6-8 minutes.
- Remove the cups from the muffin tin and top each with a sprinkle of scallion greens and pinch chili flakes.

- Heat oven to 375*.
- In 10" nonstick skillet, cook sausage over medium heat, stirring frequently, until thoroughly cooked.
- Drain, return sausage to skillet. Stir flour into sausage.
- Over medium heat, gradually add milk, cooking and stirring until bubbly and thickened. Stir in salt and 1/4 tsp of pepper,.
- Remove from heat, set aside.
- In small bowl, beat eggs, half and half, parsley flakes, garlic salt and remaining 1/4 tsp of pepper with wire whisk until well blended, set aside.
- In another 10" nonstick skillet, melt 1/2 tbls of the butter over medium-high heat. Stir in potatoes. Cook about 5 minutes, stirring frequently, until lightly browned and almost fork-tender.
- Reduce heat to medium-low, stir remaining 1/2 tbls butter into potatoes.
- Pour egg mixture over potatoes, cook, folding potatoes into egg mixture, just until firm and moist.
- Remove from heat and set aside.
- Seperate dough into 8 biscuits, place each biscuit in ungreased 2 3/4x1 1/4" muffin cup. Firmly press dough in bottom and up side of each cup, formimg a 1/2" rim.
- Spoon potatoe mixture evenly into dough lined cups.
- Spoon sausage mixture evenly over potato mixture( cups will be very full)
- Bake at 375* for 17-22 minutes or until edges of biscuits are deep golden brown. Cool 5 minutes, remove from muffin cups, if desired, garnish each with fresh parsley.
