MINI BREAKFAST OMELETS (EGG MUFFINS WITH A TATER TOT CRUST)

I'm always looking for breakfast ideas to feed my hangry family, and these easy egg muffins are perfect for feeding a crowd. They are completely customizable in that you can fill them with your favorite omelet ingredients. You're basically taking a hearty breakfast and turning it into finger food!

36 tater tots ((for a standard muffin pan))
10 large eggs
1/4 cup milk
shredded cheese
seasoning to taste
meat & veggies of choice ((I used breakfast sausage and diced bell pepper))

Steps:

  • Preheat your oven to 400 degrees and generously grease a standard size muffin pan.
  • Place the tater tots in the microwave for a few minutes or until they are soft enough to smash, then place 3 in each muffin cup.
  • Smash them with the bottom of a small cup, and then place them in the oven for 10 minutes.
  • Remove the tots from the oven and lower the temperature to 350 degrees.
  • Evenly distribute your meat and veggies into each cup. I used about 6 frozen sausage links that I microwaved and diced ahead of time, as well as pre-diced bell pepper that I found in the produce section at my local grocery store.
  • Scramble the eggs, milk and seasoning together and then pour the mixture evenly into each cup. I was able to fill each cup up about 90% with 10 eggs. I wouldn't make them any fuller than that as they do expand in the oven.
  • Sprinkle the top with shredded cheese and bake for 20 minutes, or until the egg is cooked through.

8 eggs
3 tablespoons milk

your favorite omelette filling, of your choice

Steps:

  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Push 3 tater tots in each cup of a non-stick muffin tin.
  • Bake at 425°F (220°C) for 10 minutes. Remove from oven.
  • Place your favorite omelette fillings in each muffin tin on top of the tater tots.
  • Pour egg mixture into each muffin tin.
  • Bake at 350°F (177°C) for 20 minutes, or until fully cooked!
  • Enjoy!

1 cup thawed frozen tater tots
3 eggs
4 slices of deli-sliced ham
1 tablespoon butter or 1 tablespoon margarine
3 roma tomatoes or 3 plum tomatoes, peeled
1/3 cup shredded cheddar cheese
1 tablespoon water
salt and pepper

Steps:

  • In a small/medium frying pan over medium heat, combine Tater Tots and butter.
  • With a fork, break up Tots.
  • When Tots are broken up, add chopped deli-ham and warm.
  • Add Diced tomatoes to Tots and ham and fry for 1 minute.
  • Beat eggs, add water and beat well.
  • Spread Tot mixture till it's flat and evened out.
  • Pour eggs over mixture, starting from the outside, counter clockwies.
  • With a spatula, gently pull cooked eggs from the edge and roate pan to spread out uncooked egg.
  • Repeat this process until most of the uncooked egg has been roatated around.
  • Reduce heat to low.
  • Sprinkle cheese and cover for about 3 minutes.

1/4 cup sour cream
1 tablespoon heavy cream, half-and-half or milk
2 1/2 pounds frozen potato tots
Kosher salt and ground black pepper
8 ounces Almond Mole Sauce, recipe follows
1/4 cup diced red onion
1/4 cup crumbled Cotija
2 tablespoons chopped fresh cilantro
1 large avocado
1 quart dried chiles
1 yellow onion, sliced
Extra-virgin olive oil, for cooking
2 1/4 cup ground tomatoes
4 cloves, ground
4 teaspoons ground red chile flakes
2 teaspoons ground cinnamon
2 teaspoons ground coriander
2 teaspoons ground cumin
1 cup almonds, fried
6 corn tortillas, quartered and fried
6 tablespoons chili powder
1 1/4 cup roasted garlic
1 1/4 cups chocolate chips
1/3 cup golden raisins
4 teaspoons lime juice
Kosher salt

Steps:

  • Stir together the sour cream and heavy cream in a small bowl.
  • Fry or bake tots until crispy, then toss in a mixing bowl and season with salt.
  • Divide tots into 4 paper boats or serving plates and top each portion with 2 ounces mole sauce. Drizzle with sour cream mixture, then sprinkle on the red onion, Cotija and cilantro. Finish by fanning out quarters of sliced avocado on each. Sprinkle the avocado with salt and pepper and serve.
  • Preheat the oven to 425 degrees F. Seed chiles, then roast 1 minute. Soak chiles in warm water. Turn the oven down to 250 degrees F.
  • In a large oven-safe pot, caramelize the onions in some oil. Add the tomatoes, cloves, chile flakes, cinnamon, coriander and cumin. Remove the soaking chiles and add them to the pot along with the almonds, tortillas and 1 1/3 quarts water. Stir in the chili powder, garlic, chocolate chips, raisins and lime juice and puree with an immersion blender until fairly smooth. Transfer the pot to the oven and simmer, 90 minutes. Adjust seasoning to taste.

Take a small cup and squish them flat into the bottom of each tin.
  • Bake your tater tots for 10 minutes. While you are waiting for them to cook, you can gather and chop up the rest of your ingredients. This time I used red and green peppers, sausage links and diced ham. One of the reasons I love this recipe so much is because you can sneak all kinds of healthy things into your Breakfast bites. Other ideas include: spinach, mushrooms, onion, tomatoes, basil, zucchini, squash, etc. Just be sure to pre-cook or purchase pre-cooked meats.
  • After removing your tots from the oven, lower oven temperature to 350 degrees. Sprinkle your toppings over each cup.
  • Whip together 8 eggs and 1/4 cup milk with a fork. Pour your egg mixture in each tin. Sprinkle a little cheddar cheese on top of each cup.
