Steps:
- Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
- Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
- Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
- Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
- Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
- Remove the bay leaf. Transfer about 4 cups (900 g) of the soup to a blender and puree until smooth, being careful not to splatter hot soup all over yourself and kitchen.
- Pour blended soup back into the pot and mix to incorporate.
- Keep over low heat until ready to serve. Garnish with fresh avocado, queso fresco, chopped cilantro, and tortilla chips.

Steps:
- Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour.
- Add ham bone, cubed ham, onion, salt, pepper and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Occasionally skim surface of soup while it is cooking.
- Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.

Steps:
- Saute onion in olive oil.
- When onion becomes translucent, add cumin.
- Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.
- Add 1 can black beans and 2 cups vegetable broth.
- Bring to a simmer, stirring occasionally.
- Turn off heat.
- Using a hand blender, blend the ingredients in the pot, or transfer to a blender.
- Add the second can of beans to the pot along with blended ingredients and bring to a simmer.
- Serve soup with bowls of red onion and cilantro for garnish.
- I add a bit of cilantro to the pot, too.
- Can be doubled or frozen.

This hearty vegetable and white bean soup recipe is healthy, easy to make, and tastes fantastic. It's also vegan when a vegan friendly broth is used! Since vegetables vary by seasonality, feel free to swap or add different vegetables for the ones listed below. Both cooked or canned beans can be used in this recipe. - Heat the oil in a stockpot pot or Dutch oven over medium heat. Add the onions, carrots, celery, and the tomato paste. Cook, stirring often until the vegetables have softened and the onions are translucent; 8 to 10 minutes.
- Add the garlic, black pepper, 1/2 teaspoon of salt, and the red pepper flakes. Cook, while stirring, for one minute.
- Stir in the beans, broth, thyme and the bay leaves. Raise the heat to medium-high and bring the soup to a boil. Partially cover the pot with a lid, and then reduce the heat to maintain a low simmer.
- Simmer for 20 minutes or until the vegetables are tender. Add the pasta and cook for 5 minutes more, and then add the spinach or kale and cook until its bright green and tender and the pasta is cooked, about 5 minutes more.
- Take the pot off of the heat and remove the thyme sprigs and bay leaves. Stir in the lemon slices. Taste and season with more salt and pepper. Serve. The lemon slices are not intended to be eaten, but they add a lovely lemon flavor to the soup.

- Thoroughly mash black beans in a small bowl. Stir salsa into the beans; transfer mixture to a small saucepan and place over medium heat. Pour vegetable broth into the saucepan; stir. TASTY BEAN SOUP
I created this bean soup using part of another recipe but I added a few spices in varying amounts with smoked turkey wings for an awesome flavor enhancer. It is a bit spicy but it is really high in fiber and protein, while being low in fat and sodium. I prepared this recipe in a crockpot but it could be cooked on the stovetop as well. Cook times may vary but I let mine cook for a total of 10 hours, which is why I recommend the crockpot.

- Soak beans overnight in about 3 quarts of water. Drain and either set aside or if you are using a crockpot put on the lowest setting and add chicken stock with the beans.
- Heat olive oil in a large pan. Score smoked turkey legs or thighs and place in hot pan. Allow the turkey to heat and release flavor into the oil while prepping the other ingredients.
- Remove turkey from the pan and place into crockpot or set aside.
- Put onions, garlic, carrots, and celery in pan and cook until just tender.
- Add all spices and allow to cook for 3-5 minutes to allow dry spices to open up.
- Add vegetable mixture into crockpot or put the turkey, beans, and stock into the large pan. If you are using a pan bring to a boil then reduce to a simmer and allow to cook for as long you can stand! (The smell is so good you will not be able to resist tasting) I recommend at least 4-6 hours.

- Heat 1 Tbsp extra virgin olive oil in a pot over medium heat. Add onion, carrot, celery and saute 4 minutes.
- Add garlic and saute 1 minute longer.
- Pour in chicken broth, Italian seasoning and add parmesan rind. Season with pepper and lightly with salt to taste (wait until the end to add more salt, the rind will infuse some salt to the soup).
- Cover soup with lid, bring soup to a light boil, then reduce heat to medium-low and let simmer until veggies are tender, about 12 - 15 minutes.
- Add beans and spinach, let heat just until spinach wilts, about 30 seconds.
- Remove from heat. Mash up about half the beans with a potato masher (this helps make the brother creamier and heartier).
- Remove parmesan rind. Drizzle individual servings of soup with remaining 2 Tbsp extra virgin olive oil (or more to taste) and top with parmesan.

HAM AND BEAN SOUP
Steps:
- Clean any debris or rocks from beans and add to large stock pot.
- Cover with hot water and bring to a boil over high heat.
- Boil for 2 minutes, remove from heat, cover and let sit for one hour, then drain beans.
- While beans are quick soaking, add oil and butter to large skillet.
- Melt butter, then add carrots, celery and onions. Saute for about 6 minutes or until vegetables are tender. Add garlic and saute for an additional minute.
- Sprinkle flour over vegetables, stir and cook for another minute then remove from heat.
- Add ham hock to dutch oven or large stock pot.
- Pour vegetable broth, chicken stock, beans, diced ham, vegetables into pan.
- Sprinkle with seasonings, salt and pepper, stir, cover and cook over low flame for approximately 2-2 1/2 hours, stirring occasionally.
- Enjoy with a delicious piece of homemade corn bread or bread and butter.
