1 1/2 cups gluten-free flour
1/2 cup buckwheat flour
3 teaspoons gluten free baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 egg whites
1 cup reduced-fat milk
1/2 cup vegetable oil
2 tablespoons sesame seeds

Steps:

  • Pre heat oven to 180 C.
  • Grease 9 x 19 cms loaf tin.
  • Sift flours, baking powder and salt into large bowl.
  • stir in sugar.
  • Lightly beat egg whites with electric mixer until just frothy.
  • Stir in milk and oil and add to flour mixture.
  • Beat 3 minutes until smooth.
  • Pour mixture into prepared pan, smooth top.
  • Press seeds lightly into mixture.
  • Bake 55 - 60 minutes then stand 10 minutes.
  • turn out to cool.

I wanted something with buckwheat which didn't taste too overwhelmingly buckwheaty ;) So I came up with this. It's a rustic, dense bread which slices extremely well and gets eaten away by non-celiacs - sigh. Cooking time includes resting time of 2 hours.

1 cup buckwheat flour
1 cup millet flour
1 cup teff flour
1/4 cup arrowroot
1/4 cup tapioca starch
1/4 cup rice flour
1/4 cup sweet rice flour
2 tablespoons flax seeds, ground
1/2 cup pecans, ground
1/2 cup almond meal
2 tablespoons psyllium husks
4 tablespoons psyllium husks
2 teaspoons xanthan gum
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs
2 tablespoons active dry yeast
1/3 cup olive oil
1 cup water, lukewarm
3/4 cup water, room temperature
1 teaspoon agave syrup
1 tablespoon salt
1/4 cup pumpkin seeds
1/4 cup sunflower seeds

Steps:

  • In a large bowl combine flours, starches, xanthan, 2 tablespoons psyllium husks, almond meal, seeds and ground pecans, salt, baking soda and baking powder.
  • Dissolve yeast in 1/2 cup lukewarm water with one teaspoon agave syrup.
  • Combine eggs, olive oil, the other half cup lukewarm water.
  • Stir 4 tablespoons psyllium husks into 3/4 cup water. Stir well to dissolve, then immediately dump the dissolved husks into the egg-oil-water mixture and beat until you have a smooth cream.
  • Pour dissolved yeast into flour mixture, then dump in egg mixture and start kneading with hands.
  • It's important to knead by hand, because you have to feel if the dough becomes kneadable. If it's too dry, slowly add some more lukewarm water until you have a moist, but well kneadable dough.
  • Knead at least 10 minutes on a starch dusted surface.
  • Shape one round loaf, place loaf in a large bowl.
  • Cover and let rest in a warm place for 2 hours.
  • After 2 hours DON'T PUNCH THE DOUGH DOWN! Gently lift the risen loaf out of the bowl and place on a paper lined baking tray.
  • Put the tray into the oven and heat oven to 350 degrees F or 180 degrees Celsius.
  • DON'T PREHEAT!
  • Bake for 1 hour.
  • After one hour, a wooden skewer inserted into the middle of the loaf should come out clean and the bottom of the loaf should sound hollow.
  • Let cool on a wire rack. Unlike other gluten free breads, this one can be sliced and eaten warm.
  • Enjoy!

1 teaspoon soy lecithin (GF Dough Enhancer)
1/2 cup buckwheat flour

Steps:

  • Place ingredients in bread machine in order, depending on manufacturer's recommendation. Choose basic cycle.

This fermented buckwheat bread is astonishing in its simplicity and its tasty, complex flavors. It makes for a great pre-workout breakfast or snack as it's packed with nutrients yet it feels light on the digestive system compared to a granola bar.

450 g buckwheat groats not toasted (2 1/2 cups)
~ 3 cups of water for soaking the groats
330 g water for the batter (1 1/3 cups)
1 tsp salt
1/3 cup pumpkin seeds
3 Tbsp of toasted flax seeds
Several handfuls of pumpkin seeds and toasted flax seeds for decorating the top of loaf
Supplies
Glass bowl or large Pyrex measuring cup
Dish towel, cheese cloth, or paper towel
Loaf pan (I used a 1.5 quart glass loaf pan 8 3/4 x 5 1/4 x 3 inches. A small Pullman pan would work also but with a shorter ~60 minute cooking time)
Parchment paper

Steps:

  • Soak the buckwheat groats in water for 5-6 hours.
  • Drain the groats in a colander but do not rinse. The run-off will be very mucilaginous.
  • Blend the groats and new water in a blender or food processor. You may need to do this in two parts if you use a food processor, so as to not go over the top of the central blade tube and have leakage.
  • Pour into a glass bowl or large measuring Pyrex, and cover with a towel. This will be about 5 cups of batter.
  • Set aside for approximately 24 hrs at 67-70 F. Fermentation time is significantly shorter at warmer house temps or in the oven with the light on. Batter expansion is roughly from 5 to 6.5 cups. Do not mix the batter until the fermentation is finished or the batter will deflate, and it will be hard to calculate growth.
  • At the end of the fermentation, gently mix in the salt and any seeds you wish to add.
  • Pour the batter into the parchment paper-lined loaf pan, and decorate the top of the loaf.
  • Let the batter rise for another 30 minutes to an hour in your lit oven.
  • Preheat the oven to 350 F with pan in the oven.
  • Bake for approximately 80 minutes (less for a long narrow pan) or until the inside temp is about 200 F.
  • Remove from the oven and lift the parchment paper out of pan onto a cooling rack. Peel it off and let the loaf cool for at least 30 minutes before slicing.

This bread is really delicious and reminds me of a wholegrain sourdough rye. I don't buy processed GF products, so I devised the following adaptable recipe for a flatbread that's very easy to make, and you can effortlessly adjust it to lots of different flavors and textures. My husband, who doesn't have to eat GF will frequently polish off the whole tray, when I add a bruschetta topping of chopped tomatoes, parsley, garlic, and olive oil. You can add olives, sun-dried tomatoes, rosemary or oregano, sesame seeds, etc. into the mix, and even use it as a pizza base. It's not paleo or AIP since it includes grains, but it is a good substitute for those upgrading their eating habits for health reasons.

2 cups measuring cup
silicon baking sheet
1 tablespoon apple cider vinegar, unpasteurized, with the mother
3/4 cup buckwheat flour or 3/4 cup a mix of groats and buckwheat flour
1/2 teaspoon salt (adjust to taste)
2 tablespoons sunflower seeds
4 tablespoons ground flax seeds or 4 tablespoons a mixture of ground flax and flax seeds
2 tablespoons pumpkin seeds
1 tablespoon olive oil (to taste)
1/2 cup water

Steps:

  • Combine all dry ingredients in the measuring cup, and fill it to the 1 cup mark, halfway up.
  • The exact proportions of buckwheat, flax and the other seeds are quite flexible, as long as you combine them up to the 1-cup mark.
  • Carefully fill the cup with water up to the two cup mark, and pour in the olive oil and the apple cider vinegar.
  • Stir all ingredients slowly and thoroughly, making sure to get to the bottom of the cup.
  • Let it soak for at least two hours on the counter, or soak overnight to bake it in the morning. You will know it is soaked enough when the seeds are filling the cup to the top.
  • When you are ready to bake, preheat oven to 350.
  • Place the silicon mat on a metal baking tray and either spray or wipe with oil to prevent sticking. Flax is really sticky, so nothing but silicon will work without a huge mess.
  • If you used all whole grains and you prefer it less grainy you can blend some of the mixture in blender or magic bullet and stir it back inches.
  • If you want to add a flavor, like oregano, rosemary, chopped olives, sesame, poppy seeds, caraway seeds, dried onion, etc. stir them in now.
  • Using a spatula, spread the mixture to an even thickness on the mat, going nearly up to the edges.
  • Bake the flatbread, keeping an eye on it once half an hour has passed. Depending on how hot your oven and how thick your mixture, it may take longer to bake, possibly up to 15 minutes longer.
  • Once it is done, use your rubber egg lifter as a slicer to divide it into squares before it cools. Never use a metal knife on silicon mats, as they have fiberglass inside.
  • The squares can also be left out to dry to make crackers.
  • The flatbread squares can be used as a substitute for toast, for bread, and as a base for bruschetta, garlic bread, and pizza.
