QUICK CHERRY SALSA



Quick Cherry Salsa image

This quick and easy cherry salsa is a simple mixture of cherry jam and a can of diced tomatoes with chilies, that can be customized with more add-in's for extra flavor.

1/2 cup Cherry Jam or Fruit Spread
1 14.5 oz can Diced tomatoes with green chilies ((do not drain))
1 Tbl Tomato Paste
1/4 cup Diced Onion
1/4 tsp Minced Garlic ((dried or fresh))
Pinch Red Pepper Flakes

Steps:

  • Combine the jam and the can of diced tomatoes with chilies in a mixing bowl. Then stir in the tomato paste for some extra thickening.
  • You can also add in some diced onions or minced garlic for extra flavor.
  • I like the amount of heat with just the diced chilies in the can of tomatoes but if you like things spicier, a pinch or two of red pepper flakes can be added as well.
  • Keep the finished salsa in the refrigerator. This recipes makes about 2 cups and will last in the refrigerator for a couple of weeks.

This is good with poultry , pork or tortilla chips, a little spicy to WOW your taste buds- but you can tone it down to your liking, if you are not a traditional salsa lover.

Number Of Ingredients 7

1 1/3 c frozen unsweetened tart cherries
1/4 c coarsely chopped dried tart cherries
1/4 c finely chopped red onion
1 Tbsp diced jalapeños, i use ortega
1 clove garlic, finely chopped
1 Tbsp chopped fresh cilantro, or 1/2 teaspoon dried
1 tsp cornstarch

Steps:

  • 1. Coarsely chop frozen cherries in blender. Let cherries thaw and drain, reserving 1 Tablespoon cherry juice.(make any leftover juice into ice cubes for your drinks). When cherries are thawed, combine with the dried cherries, onion, peppers, garlic and cilantro in a medium saucepan; mix well. Combine reserved Tablespoon of juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over med-hi heat until mixture is thickened. Let cool. Serve with tortilla chips and or cooked chicken or pork.

8 green onions, chopped
1 cup chopped fresh cilantro leaves
1/4 cup lemon juice
1 jalapeno pepper, chopped

  • Mix all ingredients in a medium mixing bowl until well combined. Serve with your favorite chips.

Steps:

  • Let cherries thaw; drain, reserving one tablespoon cherry juice. Chop cherries and combine with onion, jalapeño, garlic and cilantro in a medium saucepan; mix well. Combine reserved cherry juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over medium heat until mixture is thickened; cool. Keep refrigerated. Tip: Tuck small jars of salsa (and the recipe) inside the pockets of a flowery vintage apron...what a sweet gift!

julienned mint leaf, a few
salt and pepper, to taste

Steps:

  • Combine the cherries, onion, almonds, jalapeno, honey and cinnamon in a bowl.
  • Stir in the lime juice, cilantro and mint leaves.
  • Season with salt and pepper to taste.
