modified version of recipe from Williams and Sonama January 07 catalog. This is an awesome breakfast and it was fun and easy to make, plus there wasn't a lot of clean up.

nonstick cooking spray
6 eggs
2 cups 2% low-fat milk
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brown sugar
8 slices wheat bread

Steps:

  • Preheat waffle maker and spray surface with non-stick cooking spray.
  • In large bowl, whisk eggs until frothy, then add remaining ingredients and whisk until well mixed.
  • Dip 1 slice of bread into mixture and turn to cover both sides. Place in waffle maker and cook until golden brown.
  • Top with syrup or powdered sugar.

1 cup Original Bisquick™ mix
1/2 cup peanut butter
2 tablespoons granulated sugar
1 teaspoon vanilla
1 egg
6 to 8 slices bread
6 to 8 tablespoons miniature semisweet chocolate chips
Powdered sugar, if desired

Steps:

  • Heat waffle iron; grease with shortening if necessary (or spray with cooking spray before heating).
  • In medium bowl, stir milk, Bisquick mix, peanut butter, granulated sugar, vanilla and egg until well blended. Carefully dip bread into batter on both sides. Place in waffle iron; close lid.
  • Bake about 2 minutes or until steaming stops and "toast" is golden. Carefully remove waffle toast. Sprinkle each waffle with 1 tablespoon chocolate chips and powdered sugar.

We set out to make a stuffed French toast that is easy to prepare on a cookout using a pie iron but doesn't require space in your cooler for perishables. What we came up with was exactly that - and also vegan, for a delicious double whammy!

1 very ripe banana
One 13.6-ounce can unsweetened coconut milk (see Cook's Note)
Kosher salt
8 slices vegan sandwich bread (see Cook's Note)
1/4 cup peanut butter
1/4 cup jam or jelly in your favorite flavor
4 tablespoons coconut oil
Fresh berries, for topping
Confectioner's sugar, for topping
Maple syrup or honey, for topping

Steps:

  • Prepare a campfire or a charcoal grill for medium-high heat. Put a square pie iron on the fire to preheat.
  • Smash the banana with a fork until as smooth as possible in a rimmed pie pan or wide food-storage container. Stir in the coconut milk and a pinch of salt until completely combined. Put 2 slices of bread on a work surface and spread one with 1 tablespoon peanut butter and the other with 1 tablespoon jam or jelly, leaving a half-inch border on each. Sandwich the slices together and then dip into the banana mixture until well coated, about 2 seconds per side. Transfer to a plate.
  • Carefully remove the pie iron from the fire. Open the iron and add 1 tablespoon of the coconut oil, swirling it around both sides to coat completely. Add the sandwich to the pie iron and close it. Place the iron back in the fire and cook until browned on the outside and heated through, 3 to 4 minutes, turning and rotating every few seconds. Remove the iron from the fire and transfer the French toast to a plate. Top with berries and confectioner's sugar and syrup. Repeat with the remaining ingredients, coating the pie iron with coconut oil before adding the sandwich.

12 slices bread

3 large eggs
3/4 cup 2% milk

  • Spread peanut butter on 6 slices of bread; spread jelly on the remaining 6 slices of bread. Put 1 slice of each together to form sandwiches. In a large bowl, whisk the eggs, milk and salt. Dip both sides of sandwiches in egg mixture. , In a large skillet, melt butter over medium heat. Cook sandwiches for 2-3 minutes on each side or until golden brown.

3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 large eggs, room temperature, separated
1-1/4 cups whole milk
1/3 cup peanut butter
3 tablespoons butter, melted
Jelly of your choice

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and cinnamon. In another bowl, whisk the egg yolks, milk, peanut butter and butter; stir mixture into dry ingredients just until moistened., In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with jelly. Freeze option: Arrange waffles in a single layer on sheet pans. Freeze overnight or until frozen. Place between sheets of waxed paper in an airtight container. Waffles may be frozen up to 2 months. Reheat frozen waffles in a toaster. Serve with jelly.

8 slices sandwich bread

Steps:

  • Spread peanut butter and jelly over four slices of bread. Top with remaining bread. In a shallow bowl, whisk eggs and milk until blended., On a griddle, melt butter over medium heat. 1 egg, room temperature
3 tablespoons nonfat milk

  • Spread the peanut butter in the bottom of a small bowl and microwave in 15 second intervals until pourable. Mix after each 15 seconds.
  • Add the egg into the melted peanut butter and scramble. Make sure to incorporate the peanut butter, it will try to stick to the bottom. Add milk and mix.
  • Coat both sides of the slice of bread in the mixture. Give it a minute or two to soak up some of it. In the meantime, heat a small pan and coat with nonstick spray. Add the bread to the pan and cook on each side until golden.
  • While the French toast is cooking, put the jam into a small bowl and microwave for 20 seconds or until pourable.
  • Serve with the melted jam poured over the toast.
