GAUCHO RIB-EYE STEAKS

4 rib-eye steaks, 3/4-inch thick
1 (7-ounce) can chipotle peppers in adobo
2/3 cup cocktail sauce (recommended: Heinz)
4 tablespoons steak sauce (recommended: Lawry's)

Steps:

  • Pat the steaks dry using a paper towel. Place the remaining ingredients in large zip-top bag. Gently massage bag to combine ingredients; then add steaks. Let marinate in refrigerator for 1 to 3 hours.
  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • Remove steaks from refrigerator and let come to room temperature, approximately 20 to 30 minutes. Remove steaks from marinade, discard marinade.
  • Place steaks on hot oiled grill and cook for 6 to 8 minutes per side for medium. Transfer steaks to a platter and let rest 5 minutes before serving.

SUNNY'S SMOTHERED RIB EYE STEAK

1/2 teaspoon Hungarian paprika
1/2 teaspoon chopped fresh thyme
1 teaspoon salt
Freshly ground black pepper
2 tablespoons olive oil
2 (12-ounce) boneless rib eye steaks
5 sprigs fresh thyme
1 stalk fresh rosemary
2 tablespoons butter
1/2 cup chopped onion
Salt and freshly ground black pepper
2 cloves garlic, minced
2 tablespoons stone-ground mustard
1 cup beef stock
1/2 cup heavy cream
1/4 cup sour cream
3 tablespoons chopped fresh parsley

Steps:

  • For the steaks: In a small bowl, combine the paprika, thyme, salt and a few grinds of black pepper. Sprinkle on both sides of the steaks and let rest at room temperature for up to 2 hours.
  • In a large pan with straight sides, add the olive oil over medium-high heat. Add the steaks and sear on both sides until a deep golden color is on the bottom, 4 to 5 minutes. Flip and cook about 4 minutes more. Remove to a plate and cover with aluminum foil.
  • For the gravy: Using kitchen twine, tie the thyme and rosemary together. In the same pan you seared the steaks in, add the herb bundle and the butter. Lower the heat to medium, melt the butter and then add the onions. Season with a pinch of salt and a grind or 2 of black pepper. Cook on medium heat until the onions are tender, about 5 minutes, and then add the garlic. When the garlic becomes fragrant, about 2 minutes, add the stone-ground mustard and beef stock. Stir to blend and then add the heavy cream. Taste and season with more salt, if needed, and raise the heat to a gentle simmer. Once the sauce has thickened to a gravy, lower the heat and stir in the sour cream. Add the reserved steaks back into the pan and bring to a simmer while spooning the sauce over the steaks. Cook this way until desired doneness; it should take only a minute more for medium-rare. Remove from the heat and allow to rest for 5 minutes before slicing. Place the slices on a serving plate and pour the gravy over the top.

This is one of the best marinades I have ever used and I have tried many. It has plenty of taste and smells so wonderful while cooking on the grill. This recipe is quick, easy and delicious.

1/4 cup whole grain mustard (Dijon mustard works too)
1/4 cup steak sauce
1 tablespoon crushed garlic
1 tablespoon dried parsley
1 tablespoon lemon juice
4 rib eye steaks, approximately 1 1/2 to 2 pounds total (Or whatever steak you want)
2 tablespoons McCormick's Montreal Brand steak seasoning

Steps:

  • In a large resealable plastic bag combine mustard, steak sauce, garlic, lemon juice and parsley. Massage the bag to combine the ingredients.
  • Place steak into bag with the marinade and massage bag to coat steaks. Allow to marinate for a least 30 minutes or as long as overnight, refrigerated.
  • Preheat grill to medium-high heat
  • Remove steaks from bag and sprinkle both sides with the steak seasoning. Place on a well oiled grill and cook 4-5 minutes per side for medium-rare.
  • Remove steaks and cover with foil. Let rest for 5 minutes before serving to allow the juices to redistribute.
  • Guidelines if using a meat thermometer: Rare 120 to 125° F - center will be bright red and pinkish toward the exterior. Medium Rare 130 to 135° F - center will be very pink and slightly brown toward the exterior. Medium 140 to 145° F - center will be light pink and the outer portion will be brown. Medium Well 150 to 155° F - no pink anywhere. Well Done 160° F and above.

4 beef tenderloin steaks
2 cups red wine
2 tablespoons garlic and herb dressing mix
2 teaspoons ground black pepper
1 (4.5-ounce) jar marinated mushrooms, finely chopped
1 cup blue cheese, crumbled
1 teaspoon Italian salad dressing mix
Fresh oregano sprigs

Steps:

  • Rinse steaks under cold water and pat dry. Place in zip-top bag and add red wine, dressing mix, and pepper. Squeeze air out of bag and seal. Gently massage bag to combine ingredients. Marinate in refrigerator for 1 to 3 hours
  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking. In a medium bowl, combine chopped mushrooms, blue cheese, and Italian seasoning; set aside.
  • Remove steaks from marinade and discard marinade. With a sharp knife cut a pocket into the side of each steak, being careful not to cut through. Stuff steaks with mushroom mixture and secure with toothpicks. Place on hot, oiled grill and cook 5 to 7 minutes per side for medium (160 degrees F). Remove from grill.
  • To serve, remove toothpicks. Garnish steaks with sprigs of fresh oregano and serve hot.

2 tablespoons butter
1 medium onion, finely chopped

1 rack baby back pork ribs, about 3 pounds
4 to 6 star-anise pods
Peels from 2 tangerines, coarsely chopped, plus more, chopped, for garnish
1 cup orange-blossom honey
1/4 cup hoisin sauce
1/4 cup toasted sesame oil
1 large clove garlic, coarsely chopped
1 knob fresh ginger (2 inches), peeled and coarsely chopped
1 teaspoon Szechuan peppercorns
1 teaspoon Chinese five-spice powder
1 tablespoon sambal oelek (available at Asian markets)

Steps:

  • Rinse ribs under cold water and pat dry with a paper towel. Place ribs in a baking dish, sprinkle with star anise, and set aside.
  • In a blender, combine remaining ingredients and process until mixture is fairly smooth. Pour over ribs, cover tightly with foil, and refrigerate overnight.
  • Preheat oven to 300 degrees. Remove ribs from refrigerator and bring to room temperature, about 30 minutes. Place covered dish in oven and cook 2 1/2 hours.
  • Remove ribs from oven. Remove foil and set aside. Baste ribs with sauce and return to oven, uncovered. Cook another 30 minutes.
  • Remove ribs from oven and tent with reserved foil. Allow to rest 15 minutes. Transfer rack to a cutting board and cut between bones. Serve with a sprinkle of tangerine peel.

RIB-EYE WITH STEAK PAN POTATOES & PEAS

2 rib-eye steaks , about 300g each and 2cm thick
2 garlic cloves , grated
2 tbsp red wine vinegar
12 new potatoes , quartered
4 tbsp olive oil , plus extra for drizzling
25g butter
50g frozen peas or fresh
8 radishes , sliced, any leaves picked and washed

Steps:

  • Flatten the steaks out slightly with your hands. Mix the garlic with the vinegar and a large pinch of salt and rub over both sides of the steaks and set aside.
  • Cook the potatoes in boiling water for 8-10 mins until just tender, then drain and set aside. Meanwhile, heat the oil and butter in a large non-stick frying pan over a high heat and sizzle the steaks for 5-6 mins on each side until nicely seared, then sit on a board to rest. Add the potatoes and pan-fry until starting to brown.
  • Pour some boiling water over the peas, then drain and add to the pan with the sliced radishes to heat through for 2 mins, then toss in the radish leaves (if you have them) for 30 secs.
  • Carve the steaks into thick slices and drizzle with a bit more oil and some seasoning to make a dressing with the juices. Fan out the meat and serve with the potatoes in a bowl on the side.

2 rib-eye steaks, each about 200g and 2cm thick
1tbsp sunflower oil
1 tbsp/25g butter
1 garlic clove, left whole but bashed once
thyme, optional

Steps:

  • Up to 8 hrs before cooking, pat the steaks dry with kitchen paper and season with salt and pepper. Heat the oil over a high flame in a heavy-based frying pan that will comfortably fit both steaks. When the oil is shimmering, turn the heat down to medium-high and add the butter. Once it's sizzling, carefully lay the steaks in the pan, tucking the garlic and herbs in at the sides.
  • Stand over the steaks with a pair of tongs, searing and turning them every 30 seconds to 1 min so they get a nice brown crust. As a rough guide, each steak will take 4 mins in total for rare, 5-6 mins in total for medium and 8-10 mins for well done. If you have a digital cooking thermometer, the temperatures you're looking for in middle of the steak are 50C for rare, 60C for medium and 70C for well done. Leave the steaks to rest for at least 5 mins. While the steaks are resting, you can make a classic red wine sauce to go with them.
