VANILLA CITRUS CIDER

My mom used to make cider for the holidays, so I based my citrus-vanilla variation on her recipe. I think it hits the spot! The longer the cider simmers, the stronger the flavors will be.-Kristin Weglarz, Bremerton, Washington

Yield 10 servings (3/4 cup each).

Number Of Ingredients 8

8 cups apple cider or juice
1/4 cup packed brown sugar
1/4 cup thawed orange juice concentrate
1/8 teaspoon salt
3 cinnamon sticks (3 inches)
1 teaspoon whole cloves
1/4 teaspoon vanilla extract
Orange slices, optional

Steps:

  • In a large saucepan, combine apple cider, brown sugar, orange juice concentrate and salt. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with a string. Add to pan., Bring to a boil. Reduce heat; simmer, covered, 1 hour to allow flavors to blend. Discard spice bag. Stir in vanilla. If desired, serve with orange slices.

1 quart unsweetened apple juice
1/2 cup water
1/2 cup orange juice
1/4 cup sugar
1/4 cup lemon juice
2 cinnamon sticks (3 inches)
1 tablespoon brown sugar
1.4 teaspoons whole cloves
Additional cinnamon sticks, optional

Steps:

  • In a large saucepan, combine the first eight ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Strain, discarding cinnamon sticks and cloves. Serve warm; garnish with additional cinnamon sticks if desired.

4 spiced apple rings

  • In a large punch bowl, combine cider and lemonade. Add lemon slices and apple rings. If desired, serve with additional lemon slices and apple rings.

16 cups (1 gallon) apple cider
1/4 cup light brown sugar
1 teaspoon allspice
Pinch grated nutmeg
2 teaspoons whole cloves
1 orange
Cinnamon sticks, for garnish
2 cups bourbon, optional

Steps:

  • In a large pot over medium heat, add the apple cider. Stir in the brown sugar, allspice and nutmeg until the sugar is dissolved and bring to a low boil.
  • Stick the pointy ends of the cloves into the orange so that just the buds of the cloves are visible. The entire orange should be covered with the cloves.
  • Add the orange to the cider and reduce the heat to simmer. Cover and continue cooking for 20 minutes.
  • Serve in warm mugs with a cinnamon stick garnish. For adults, add bourbon to the cider.

  • Reduce the heat, cover and simmer this mixture for about an hour.

Steps:

  • Strange orange and tangerine juices through a cheesecloth lined colander into a large bowl.
  • Combine juices and cider into a large pitcher.
  • Pour 3/4 cup of the beverage into each of 8 glasses.
  • Slowly pour 1 1/2 tsp grenandine down inside of each glass (DO NOT stir before serving).
