MAKE-AHEAD CHEESE STRATA
Prepare and refrigerate this cheese Strata several hours ahead of time or overnight. For breakfast, simply add bacon, sausage, or ham to the cheese strata, then pop it in the oven when you wake up, pour some coffee, and sit down to an all-in-one meal. The red pepper (cayenne) gives the strata a "Bite" that gets your heart started! I always add something extra because I do like the "Bite" (Louisiana Hot Sauce)!!

- Preheat the oven to 375° and butter or coat with cooking spray a 9-by-13-inch glass or ceramic baking dish. Heat the olive oil in a large sauté pan over medium heat. Add the onion and season with salt and pepper and cook, stirring occasionally, until caramelized, about 15 minutes. While the onions are caramelizing, spread the cubed French bread on a baking sheet and toast in the oven for a couple of minutes until toasted.
- In a large bowl, toss together the toasted bread and caramelized onion. Arrange one-half of the bread onion mixture in the bottom of the baking dish, top with half of the baby spinach and Virginia Ham. Then sprinkle one-half of the shredded cheese. Repeat the layering one more time, omitting the cheese.
- Bake the covered strata in the preheated oven for 30 to 35 minutes, or until the strata is cooked through and is brown around the edges. To crisp and brown the top, remove the parchment and turn on the broiler. Broil for about 3 minutes, just until the top is golden brown. Let rest for 10 minutes, then cut the strata into squares and serve.

- Prepare a 9x13-inch pan with softened butter. Tear the bread slices into 1-inch pieces of bread and cover the bottom of the pan with half of the loaf, fitting the pieces tightly together like puzzle pieces.
- There are two ways you can do the next layering step: Layer the ground ham over the bread and then top with the cheese. Tear the rest of the bread slices into pieces and nestle them together over the ground ham but don't pack too tightly, but just so they fit together.
- In a 1 quart measuring cup, whisk the eggs and milk until smooth. In a small bowl, take 1 tablespoon of the egg and milk mixture and use a fork to mix the dry mustard into it until smooth. Add the mustard mixture into the quart measuring cup and mix well so that all of the mustard is incorporated. Add the chopped parsley and whisk.
- Starting at one end of the casserole, slowly pour the egg mixture over the the bread, evenly distributing the wet ingredients and making sure to get into the edges too. Cover with non-stick aluminum foil and refrigerate overnight.

- Beat together 8 eggs in a large mixing bowl. Add in your milk or half n' half and beat well. Add in your additional flavorings - in this case, mustard, spices, kosher salt and pepper.
- First, place your base layer of croissant (or bread) cubes in the bottom of the casserole dish. Top with shredded cheese, then ham and green onions. Finally, pour the custard mix over top of everything. Pour slowly and carefully to ensure that the layers remain even.Use a spoon or spatula to gently press down any pieces that appear dry. It's fine if they poke back up - once they have a little liquid in there, the process should continue during the resting phase.Cover the assembled strata with a piece of tinfoil and pop it in the refrigerator to rest overnight.
- Preheat oven to 350F. Once the oven hits 350F, pull your assembled casserole from the fridge and pop it straight in the oven (keeping the foil top) on the middle rack.Bake for about 30 minutes, then pull off the foil and return it to the oven. Bake for another 30 minutes uncovered, until the internal temperature hits 165F.Allow the strata to rest for 5-10 minutes, then slice and serve. Enjoy!
