1 pound fully cooked ham, diced
2 cups shredded cheddar cheese
6 large eggs
3 cups whole milk
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup butter, melted
1 cup crushed cornflakes

Steps:

  • Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Cover with remaining bread. , In a bowl, beat eggs, milk, Worcestershire sauce, mustard, salt, pepper and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

A delicious, easy and fuss free breakfast strata made with ham, cheese and egg. It also makes a great brunch or dinner!

8 ounces sourdough bread (cut into ¾-inch cubes (about 6 cups) (I used a whole grain bread, but any version will work))
Cooking spray
8 ounces diced cooked ham (can substitute with an equal amount of cooked bacon or sausage if preferred)
1 cup milk (I used 2% milk, but whole milk would also work. Just don't use skim!)
1/3 cup thinly-sliced green onions
1 ½ teaspoons minced garlic
½ teaspoon black pepper
½ teaspoon grated nutmeg
¼ teaspoon salt
6 large eggs (lightly beaten)
2 ounces cheddar cheese (shredded (about ½ cup))

Steps:

  • Preheat oven to 375°F (190°C).
  • Arrange bread on a baking sheet; coat with cooking spray. Bake for 10 minutes, or until toasted, stirring halfway through.
  • Spray an 8-inch square baking dish with cooking spray.
  • In a large bowl, whisk together milk and next 6 ingredients (through eggs).
  • In bottom of prepared baking dish, toss together toasted bread and diced ham. Pour egg mixture over top. Sprinkle with cheese.
  • Bake uncovered at 375°F (190°C) for 25 minutes, or until strata is puffed around the edges and a knife inserted in the center comes out clean.
  • Note: This casserole can be made in advance and kept covered in the refrigerator overnight until ready to bake.

4 cups bread (cubed) Italian, French, Baguette,
2 cups diced ham
2 1/2 cups chopped broccoli
2 1/2 cups shredded Sharp Cheddar cheese
6 eggs
3 1/2 cups milk
4 green onion diced
1 teaspoon dry mustard
1/2 teaspoon smoked paprika
1 teaspoon dried parsley
salt & pepper to taste
1 cup bread (cubed)
2 Tablespoons melted butter
1/2 cup shredded Sharp Cheddar cheese

Steps:

  • **DISH CAN BE MADE A DAY AHEAD
  • When ready to make:
  • Preheat oven to 350. Grease a 9x13 casserole dish
  • Add the bread crumbs to the bottom of the casserole dish.
  • Layer on the ham, broccoli, onion, and cheese.
  • Combine the milk and the eggs in a large bowl. Whisk until completely blended. Add in the dry mustard, paprika, and parsley. Mix until combined.
  • Pour the egg mixture evenly over the casserole.
  • Combine more bread crumbs and melted butter in a small bowl. Stir until coated. Add in remaining cheese. Sprinkle over the casserole.
  • Bake the casserole for 1 hour or until a toothpick inserted in the center comes out clean. Remove from casserole from the oven and let sit for 5 minutes before serving.

3 tablespoons all-purpose flour
1 tablespoon mustard powder
1/2 teaspoon cayenne pepper (optional)
3 cups cooked ham, cubed
8 ounces cheddar cheese, cubed
3 cups French bread, cubed
4 eggs, beaten
3 cups milk
1 dash hot pepper sauce
3 tablespoons butter, melted
1/2 cup freshly grated parmesan cheese

Steps:

  • Generously smear a 9x13x2 baking dish with softened butter.
  • Stir together flour, mustard powder and optional cayenne. Combine ham cubes and cheese cubes; toss with flour mixture until well-coated. Add bread cubes and toss to distribute.
  • Whisk together eggs, milk and hot sauce.
  • Spread 1/3 of bread/ham/cheese cubes in a single layer in prepared baking dish. Drizzle with 1 tbsp melted butter, then sprinkle with 1 tbsp grated Parmesan.
