- Dry fish completely and set aside. Preheat a skillet over medium-high heat. Add avocado oil.
- When skillet is hot, sprinkle the fish with salt and add the fish to the pan. It should sizzle when it goes in the pan. If it doesn't sizzle, your pan isn't hot enough. Be sure the sides of the fish don't touch. Do not move the fish until it releases from the pan. When it releases, turn the fish. When second side is done. remove fish from the pan, place on a plate and keep warm.
- Add shallots to the pan and cook until edges start to brown.
- Stir in white wine vinegar. Using a spatula, scrape up any brown bits left in the pan. When vinegar is almost completely evaporated, pour in the heavy whipping cream.
- Heat the sauce, stirring frequently, until it reaches the desired thickness. Next, stir in the mustard and tarragon. Taste the sauce and add salt to taste. To serve, spoon the sauce over the fish.

- Put flour in a low bowl or pie plate and stir in a generous amount of salt and pepper and a pinch of cayenne.
- Place a large cast-iron skillet over medium-high heat. Add olive oil and tilt pan to coat bottom.
- Season the fillets lightly with salt and pepper. Dip each fillet quickly into flour mixture, shaking off excess flour.
- Lay fillets in skillet in one layer. Cook for about 2 minutes per side, until golden. Transfer cooked fish to a warm platter.
- Leave the heat at medium-high and add cold butter. Let butter sizzle until foamy and brown, but do not let it burn. Add lemon juice, parsley and chopped tarragon and swirl to incorporate.
- Spoon butter sauce over fish. Garnish with a few tarragon leaves and serve immediately with lemon wedges.

- Preheat oven to 425 degrees F or grill to medium-high.
- Season the fish with salt and pepper and drizzle with 2 tablespoons olive oil to coat.
- In a bowl, combine the tomatoes, shallots, and tarragon; season to taste with salt and pepper.
- Toss with remaining 2 tablespoons olive oil.
- Cover a baking sheet with foil. Range 4 piles, each with 2 lemon slice, 1 fish fillet and a quarter of the tomato-shallot mixture.
- Cover with another sheet of foil and pinch together on all four sides to seal the packet.
- Roast the fish in the oven or closed grill until opaque, 15 to 18 minutes. If grilling, don't use the baking sheet and be sure the foil packet is well sealed. You may want to divide the fish into two (or even 4) sealed packets for ease in grilling.
- Open the foil packet and, using a large spatula, transfer the fish to plates.
- Pour the cooking juices over the fish.
- Pass crusty French bread around the table to mop up the juices.

- 1. Brush each filet with melted butter.
- 2. Sprinkle each fillet with 1/8 tsp. garlic powder and 1/4 tsp. dry tarragon.
- 3. Place in basket for air fryer in a single layer.
- 4. Set fryer for 350 degrees. Cook the fillets for about 5 minutes or until done. (flake with a fork)
- 5. Serve immediately.
- 6. If you don't have an air fryer...season as directed then bake at 375 degrees or 30 minutes or until done.
- 7. NOTE: I have the larger air fryer. If yours is smaller you may need to cook the fish in batches. But it cooks so fast it won't be a problem.

- Salt and pepper tops of fish.
- Melt 1 tablespoon butter in a skillet.
- Add fish, top side down and cook over high heat until brown on the bottom, 3 to 5 minutes.

- Remove to a platter.
- Over low heat, add remaining 2 tablespoons butter to skillet.

- Boil clam juice in heavy small saucepan until reduced to 2 tablespoons, about 5 minutes. Transfer to blender. Add fresh lemon juice and tarragon leaves. Blend mixture until tarragon is finely chopped. With machine running, gradually add 3/4 cup oil and blend well. Season sauce to taste with salt and pepper.
- Position rack 6 inches from boiler. Preheat broiler. Brush fish with 2 tablespoons oil; season with salt and pepper. Place skin side down on heavy large baking sheet. Broil until opaque in center without turning, about 6 minutes.
- Transfer whitefish to plates. Drizzle sauce over and serve.

I love the fresh French tarragon I grow in my garden the most, but dried will work well, too. Lovely served with steamed fresh veggies from the garden.

PAN-FRIED SALMON WITH TARRAGON AND CREAM SAUCE

- For the salmon, heat the olive oil and butter in a pan and season the fish with salt and freshly ground black pepper. Lay the fish skin-side down into the pan and fry for 4-5 minutes, then flip over and cook for a further 3-4 minutes, or until golden-brown all over and cooked to your liking. Set aside on a warm plate.
- For the sauce, place the cream and fish stock into a pan and bring to a gentle simmer. Reduce the mixture for 4-5 minutes, or until thickened slightly, then stir in the fresh herbs.
- To serve, place the salmon onto a serving plate and arrange the blanched vegetables alongside. Pour the cream sauce around the edge of the plate.
COD & TARRAGON FISHCAKES WITH MINTY PEAS

- Heat the oven to 200C/180C fan/gas 6 and oil a non-stick baking sheet. Bring a pan of water to the boil, then cook the potatoes for 15-20 mins until tender. Drain well, then return to the pan and mash with the mustard, anchovies, spring onions, capers and tarragon until combined. Stir through the raw cod.
- Shape into 8 cakes, then coat lightly in the flour - about 1-2 tsp each. Beat the eggs in a shallow bowl. Coat the cakes in the egg, then sprinkle 1 /2 tbsp of the almonds over each one and place on the baking sheet. Bake for 20 mins, turning each over halfway through, until starting to turn golden.
- Meanwhile, put the peas and leeks in a pan, submerge in water, then cover and boil for 10 mins. Drain and stir through the mint. Divide half of the pea and leek mixture between two plates with 2 fishcakes on top for each. Toss half the rocket with half the lemon juice and olive oil, then pile on top of the fishcakes. Chill 4 fishcakes and half the pea and leek mixture, separately, to eat another day. Will keep chilled for up to two days. Reheat the fishcakes on a baking tray at 200C/180C fan/gas 6 for 15-20 mins. Reheat the peas and leeks in the microwave. Dress the remaining rocket just before serving.

Steps:
- Melt 1 T butter over medium heat. Add shallots and cook until soft but not brown (less than 1 minute).
- Add wine and gently boil uncovered until all of liquid is evaporated and shallots make a sizzle noise.
- Mix 1/4 cup of poaching liquid or chicken broth to onions. DO NOT ADD MORE - it will be too thin.
- When liquid simmers over medium heat whisk in 1 T butter at a time. Wait until the previous on e almost melts before adding another.
- Add lemon juice and salt continuing to whisk. Turn off heat.
- Add tarragon and parsley and onion mix to blender. Process until smooth.

- In a large nonstick frying pan, heat 1 tablespoon of the oil with 1/2 tablespoon of the butter over moderate heat. Season the scallops with 1/2 teaspoon of the salt and the pepper.
