SUN-DRIED TOMATO, PINE NUTS AND BASIL STUFFED CHICKEN BREASTS



Sun-Dried Tomato, Pine Nuts and Basil Stuffed Chicken Breasts image

This healthy meal is very flavorful quick and easy. Chicken stuffed with fresh basil, pine nuts, sun dried tomatoes with a syrupy balsamic sauce.

4 boneless skinless chicken breasts, about 4 to 6 ounces each
1/2 teaspoon pepper
1 teaspoon garlic salt or 1 teaspoon garlic powder, if watching your salt
4 teaspoons pine nuts, toasted
8 marinated sun-dried tomatoes, drained
1/2 bunch basil
1 1/2 tablespoons olive oil
1/4 cup balsamic vinegar
3/4 cup chicken stock

Steps:

  • Cut a deep horizontal pocket in the side of each chicken breast. Make the pocket as large as you can without piercing the top or bottom of the breast. Rub pepper & salt over the breasts. Place 2 slices of tomato 1 teaspoon pine nuts and about 4 basil leaves in the pocket of each chicken breast. Secure the pocket with toothpicks threading along the side to close. Heat the oil in a heavy oven-proof skillet until it begins to smoke. Cook each side of the chicken until golden brown.
  • Add the vinegar and chicken stock and bring to a boil. Lower the heat and gently simmer the chicken for 2 or 3 minutes per side until cooked through.
  • Remove the chicken breasts from the skillet and keep in a warm oven or under a foil tent. Continue to cook the sauce until it is reduced to a thick syrup.
  • Taste the sauce and season with salt and pepper. Spoon the sauce over each chicken breast. Garnish with fresh basil.

I got this recipe from a friend and it was absolutely incredible! It is so full of flavor and it is also very healthy!

3 quarts water
3 tablespoons olive oil
6 garlic cloves, thickly sliced
1/4 teaspoon crushed red pepper flakes
1/2 cup pine nuts
1 cup sun-dried tomato
1/2 cup onion, chopped
1/2 cup dry white wine
1 1/2 cups chicken stock
1/4 teaspoon salt
1/2 teaspoon black pepper
1 lb pasta (penne)
1/4 cup romano cheese

Steps:

  • Bring water to a boil in a large pot, and cook pasta.
  • add olive oil, garlic, red pepper, pine-nuts, sun-dried tomatoes and onion to a large saute pan set on high heat.
  • Cook until the onion is soft and the garlic is beginning to brown, about 3 minute.
  • stir in wine and boil until wine is reduced by half, about 1-2 minute.
  • Pour in chicken stock, salt, pepper and bring to a boil.
  • reduce heat to medium and simmer for 7 min., until sauce is slightly thickened.
  • When sauce is done and pasta is drained, pour sauce over the pasta and cook over medium heat for 3 min., stirring constantly.
  • remove from heat and sprinkle with cheese -- SERVE!

This special occasion meal has always been a big hit regardless of the crowd. While the stuffing mixture takes a little time to prepare, it is well worth it!

6 tablespoons olive oil, divided
½ cup pine nuts
½ cup chopped shallots
2 cloves garlic, minced
⅔ cup chopped oil-packed sun-dried tomatoes
1 cup bread crumbs
¼ cup chopped fresh parsley
salt and pepper to taste
1 (3 pound) beef tenderloin

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat 3 tablespoons olive oil in a skillet over a medium heat. Stir in pine nuts, and cook until golden brown. Remove with a slotted spoon, and drain on paper towels. Place shallots in the skillet. Cook and stir until tender, about 5 minutes. Mix in garlic and sun-dried tomatoes, and cook 2 minutes. Remove skillet from heat, mix in pine nuts, bread crumbs, and parsley. Season with salt and pepper, and set aside to cool.
  • Slice the tenderloin lengthwise across the top about 2/3 of the way through the meat to create a pocket. Spread stuffing into the pocket. Wrap the tenderloin with kitchen twine to secure the stuffing, and transfer to a roasting pan. Rub the remaining olive oil over the surface of the meat. Season with salt and pepper.
  • Roast in the preheated oven for 15 minutes. Lower oven temperature to 350 degrees F (175 degrees C) and continue cooking tenderloin 20 minutes, or to a minimum internal temperature of 145 degrees F (63 degrees C). Remove from oven and let the meat rest for 15 minutes before serving.

Put it on a rack to prevent the dough of getting soggy on the bottom. Depending on the size of the meat, the pastry and the meat should be done at the same time (about 20 minutes).
