6 Cornish game hens (20 to 24 ounces each)
1 cup lemon juice
3/4 cup butter, melted
1/2 teaspoon paprika
1-1/2 teaspoons dried thyme, divided
1-1/4 teaspoons seasoned salt, divided
1-1/8 teaspoons garlic powder, divided
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the hens on a wire rack in a large roasting pan. In a bowl, combine lemon juice, butter, paprika and 1 teaspoon each of thyme, seasoned salt and garlic powder. Pour half over the hens; set the remaining mixture aside for basting. Combine salt, pepper and remaining thyme, seasoned salt and garlic powder; sprinkle over hens. Bake, uncovered, at 375° for 30 minutes. Baste with reserved lemon juice mixture. Bake 30 minutes longer, basting occasionally, or until the meat is tender and juices run clear.

I adore garlic so here is yet another recipe using it! I don't know who gave this recipe to me, I found it this weekend in a kitchen drawer! I hope you enjoy it.

4 Cornish hens
4 sprigs rosemary
20 -25 cloves fresh garlic
1 lemon
3 tablespoons olive oil
1/3 cup chicken broth
1/3 cup dry white wine

Steps:

  • Heat oven to 450.
  • Rinse and pat dry game hens.
  • Season cavities lightly with salt& pepper.
  • Cut lemon into 4 wedges.
  • Place 1 wedge inside each hen along with 1 sprig of the rosemary and 1 clove peeled garlic Rub outside of hens with 1 tbl of oil.
  • Season outside of hen lightly with salt& pepper.
  • Place hens in pan placing peeled garlic around all.
  • Roast hens for appx 25 minutes at 450.
  • Reduce temp to 350 and pour wine, broth and remaining oil over hens.
  • Continue to cook for about 25 minutes (or until juice from thickest part runs clear) Be sure to baste about every 10 minutes in this final cooking time.
  • Remove hens from pan and pour remaining juices as well as any juices from the cavities into medium saucepan Boil juices about 6 to 8 minutes (or until desired consistency).
  • Arrange hens on plates and spoon sauce and garlic over and around each, add additional rosemary as a garnish if you like.
  • The 4-8 servings is that you can cut the hens in half to double the servings.
  • This goes very well with a light salad and rice pilaf (and of course a glass of wine).

4 Cornish game hens
salt and pepper to taste
1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

This is a quick Cornish hen recipe that has a fruit sweet taste. These can also be baked or roasted. Be sure to baste along the way. You also can cut this in half if needed.

6 rock cornish hens
3/4 cup butter, at room temp
2 tablespoons garlic, minced
2 tangerines, juice of or 1 large orange
1 teaspoon of fresh mint, minced
1 teaspoon green onion, minced
1 teaspoon parsley
3 teaspoons aloha shoyu
1 tablespoon sea salt

Steps:

  • Rinse game hens and pat dry. In mixing bowl, blend all ingredients (except hens) into a paste. Rub herb paste thoroughly over the game hens and into the cavities, as well.
  • Secure onto the rotisserie and roast for fifty five minutes to one hour, or until golden brown. If you don't have a rotisserie, you can bake the game hens in a three hundred and fifty degree oven for the same amount of time, until brown.

16 lemon wedges
8 small Cornish hens, about 1 lb. each
2 tablespoons olive oil
3 garlic cloves, smashed
2 tablespoons chopped fresh rosemary or 1 teaspoon dried rosemary
2 tablespoons chopped fresh sage or 1 teaspoon dried sage
2 tablespoons chopped fresh tarragon or 1 teaspoon dried tarragon
2 tablespoons chopped fresh thyme or 1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
2 cups fat-free low-sodium chicken broth
2 tablespoons soy sauce, low sodium
2 tablespoons Worcestershire sauce
2 tablespoons all-purpose flour
1 tablespoon soft non-hydrogenated margarine

Steps:

  • Place 2 whole garlic cloves and 2 lemon wedges in each hen.
  • In a small bowl, combine oil,smashed garlic, rosemary, sage, tarragon, thyme, salt and pepper.
  • Gently separate skin from breast and thigh of each hen and rub meat with herb mixture.
  • Rub any extra over skin.
  • Arrange birds on baking sheets lined with parchment paper.
  • Roast birds in a preheated 400°F oven for 45 minutes or until well browned and cooked through.
  • Baste occasionally.
  • Place birds on a platter and transfer pan juices to measuring cup.
  • To make sauce, remove fat from pan juices.
  • Place juices in a saucepan with stock, soy sauce and Worcestershire sauce and bring to a boil.
  • Cook a few minutes.
  • In a small bowl, combine flour and margarine.
  • Stir into sauce and cook until just slightly thickened.
  • Adjust seasonings.
  • Serve hens with sauce on the side.

GARLICKY SMOTHERED CORNISH HENS

10 cloves garlic
Salt and freshly ground black pepper
2 (1 1/2-pound) Cornish hens
Olive oil
1 green bell pepper, seeded and small diced
1/2 medium onion, small diced
1/4 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
3 cups chicken stock, divided
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup white wine
2 tablespoons chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Prepare the hens: In a mini food processor, pulse the garlic and 1 teaspoon salt to a paste. Using your fingers, make a pocket between the flesh and the skin of each Cornish hen. Stuff half the garlic paste between the skin and the flesh of the hens, evenly covering by pushing the paste along the flesh from the outside. Rub both hens all over with olive oil and sprinkle with salt and a grind of pepper. Cross the legs of each hen and tie together with kitchen string. Set aside and allow to come to room temperature for about an hour.
  • In a baking dish large enough to hold both hens, mix together the remaining garlic paste, the bell pepper, onions, cayenne pepper, paprika, a pinch of salt and a grind or 2 of pepper.
  • Place the prepared hens on top of the vegetables in the pan and slowly pour in 2 cups chicken stock. Place in the oven and cook until the temperature reaches 160 degrees F between the leg and the body of the hen when tested with an instant-read thermometer, about 40 minutes.
  • Remove the hens from oven and remove from the pan to a plate. Cover lightly with aluminum foil to keep them warm while making the gravy. In a medium saute pan, melt the butter over medium heat. Add the vegetables from the baking dish and the flour. Whisk the flour briskly until it is combined with all the pan contents. Add the wine and let reduce. Take a sip of wine for yourself; you've worked hard. Stir in the remaining 1 cup chicken stock. Taste and season with salt and pepper, and then cook until the sauce has thickened to a gravy consistency, about 5 more minutes. To serve, remove the aluminum foil from the hens. Remove the string and cut in the birds in half. Pour the gravy over the top and garnish with chopped parsley.

4 cups water
2 tablespoons olive oil
2 Cornish hens
2 ounces vegetable oil
1/2 cup black olives (pitted & halved)
1/2 cup green olives (pitted & halved)
1/4 cup sun-dried tomato
1/2 cup cherry tomatoes
1/4 cup capers
2 cups chicken stock
1/2 cup peas
2 tablespoons parsley (chopped)
1 spreadable cheese, Alouette Garlic and Herbs

Steps:

  • Bring the water to a boil in a large saucepan and add the couscous. Bring back to a simmer, cover and remove from heat.
  • After 10 minutes stir in olive oil with a fork and keep warm.
  • Split and quarter each Cornish game hen and season with salt and pepper.
  • In a large skillet heat vegetable oil over medium high heat.
  • Sear all pieces of the Cornish game hen until golden brown.
  • Drain oil and add olives, sun-dried tomatoes, capers, cherry tomatoes and heat thoroughly.
  • Add chicken stock and bring to a simmer for 8-10 minutes.
  • Remove Cornish game hen and most of the vegetables from the sauce.
  • Cover to keep warm.
  • Stir Alouette® Garlic and Herbs Spreadable Cheese into the liquid to make the sauce.
  • Add the peas and chopped parsley.
  • To serve, fill the bottom of the tanjine or casserole dish with the cooked couscous, top with the Cornish game hen and vegetables. Spoon sauce over Cornish game hens and couscous.
  • Serve.

3 Cornish hens, Split (1 1/4 to 1 1/2 lb each)
1/2 cup fresh lemon juice
1/4 cup olive oil
4 garlic cloves, minced
2 teaspoons dried whole thyme, crushed
2 teaspoons dried oregano, crushed
2 teaspoons dried whole rosemary, crushed
1 teaspoon salt

Steps:

  • Place the split hens in a 13 x 9 x 2 inch baking dish.
  • Combine the lemon juice and the remaining ingredients; stir well with a wire whisk. Pour the marinade mixture over the hens. Cover and marinate in the refrigerator for at least 8 hours, turning occasionally.

  • Transfer to serving platter and let sit for 5 minutes. Remove skin & cut in half.
