6 skinless, boneless chicken breast halves
1 green bell pepper, sliced
4 medium red potatoes, sliced
1 (20 ounce) can sliced juice-packed pineapple, drained, juice reserved
1 (18 ounce) bottle barbeque sauce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking dish.
  • Place the chicken in the baking dish. Arrange pepper, potatoes, and pineapple around chicken. Pour the reserved pineapple juice over all, and top with barbeque sauce.
  • Bake 1 hour in the preheated oven, or until chicken juices run clear and potatoes are tender.

1 (8 ounce) can crushed pineapple, with juice
¼ cup honey
¼ cup vegetable oil
4 skinless, boneless chicken breast halves
½ cup all-purpose flour
1 teaspoon red wine vinegar
4 teaspoons chopped fresh mint

Steps:

  • In a small bowl, blend pineapple juice and honey.
  • Heat oil in a large, heavy skillet over medium heat. Dredge chicken in flour, and arrange in the skillet. Brush with the pineapple juice and honey. Sprinkle with red wine vinegar. Cook 7 to 10 minutes on each side, until chicken is no longer pink and juices run clear. Top with crushed pineapple and fresh mint to serve.

2 garlic cloves, crushed
3/4 cup pineapple juice
1/4 cup apple cider vinegar

Steps:

  • Place a rack in upper third of oven; preheat to 425°F. Mix coriander, cumin, and cayenne in a small bowl. Sprinkle chicken with spice mixture, pressing to adhere; season with salt and pepper.
  • Heat oil in a large ovenproof skillet over medium-high. Cook chicken, skin side down, until browned and beginning to crisp, about 5 minutes. Transfer chicken to a plate and arrange pineapple slices in pan. Place chicken, skin side up, on top. Transfer to oven and roast until an instant-read thermometer inserted into the thickest part of thigh registers 165°F, 40-45 minutes.
  • Meanwhile, bring chile, garlic, pineapple juice, vinegar, brown sugar, and paprika to a boil in a small saucepan and cook until thickened and syrupy, 12-15 minutes; season glaze with salt.
  • When chicken is done, brush with glaze and roast just until glaze is bubbling, about 2 minutes; repeat with any remaining glaze. Transfer chicken and pineapple to a cutting board; let rest 10 minutes. Serve chicken and pineapple with any juices from skillet alongside.

1 pound skinless, boneless chicken thighs, cubed
¼ cup shoyu (soy sauce)
½ cup oil for frying, or as needed
½ cup all-purpose flour
5 tablespoons cornstarch, divided
⅛ teaspoon ground black pepper
¾ cup white sugar
1 cup water, divided
½ cup white vinegar
½ large yellow onion, cut into chunks
1 (8 ounce) can pineapple chunks, drained
1 large green bell pepper, cut into chunks

Steps:

  • Combine chicken and soy sauce in a glass or ceramic bowl and let marinate in the refrigerator for 1 hour.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Heat oil in a large wok to 350 degrees F (175 degrees C).
  • While the oil is heating, whisk flour, 2 tablespoons cornstarch, and black pepper together in a shallow dish. Dredge chicken in flour mixture.
  • Fry chicken in batches in the hot oil until golden brown and crispy and no longer pink in the centers, 5 to 8 minutes per batch. Remove to a plate.
  • Discard any oil remaining in the wok. Return the wok to medium-high heat and add sugar, 1/2 cup water, and vinegar. Heat through, stirring frequently until sugar dissolves. Add onion and continue cooking for 1 minute.
  • Meanwhile, mix remaining cornstarch into remaining 1/2 cup water and stir until completely mixed. Add to vinegar mixture in the pan along with pineapples and bell pepper chunks. Continue cooking until sauce thickens and bell peppers are just cooked, about 3 minutes. Add chicken and toss to coat.

6 medium pork chops, 1/2 to 3/4 inch thick or 6 chicken breast halves
1 (8 ounce) can pineapple rings, drained (reserve juice)
1 1/2 tablespoons dark brown sugar
1/4 cup spicy brown mustard
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons cornstarch
water

Steps:

  • Drain pineapple and reserve juice. Add water to reserved juice to make 1 cup.
  • Salt and pepper pork chops to taste.
  • In a small sauce pan combine pineapple juice mixed with water, brown sugar and mustard, bring to a light boil.
  • Combine cornstarch with 1/4 cup water until smooth.
  • Reduce heat and stir in lemon juice, Worcestershire sauce and cornstarch mixture. Simmer for 3 minutes until thick, stirring constantly.
  • Brush sauce on pork chops (or chicken breasts if desired) and place on a prepared grill or in a hot grill pan.
  • Brown pork chops for 4 minutes on each side, brush on more sauce and top with pineapple rings.
  • Cook for 2 or 3 more minutes.
  • Turn so pineapple rings are on the grill surface and get the nice grill marks, cook for 2 or 3 more minutes.
  • Flip once more baste with sauce, check doneness of pork chops or chicken, if done allow to rest for five minutes and serve.

Briefly marinating here is important: Leave it too long and the chicken will fall apart during cooking, becoming shreddy and a little gluey. Fifteen minutes is the sweet spot. The accompanying pineapple salsa is a bright topping for the juicy morsels of aromatic chicken and rice.
