480 g/2 cups whole milk
One 380-g/13.5-oz can unsweetened coconut milk
2 tsp vanilla extract
80 g/1/2 cup small pearl tapioca
1/4 pineapple, peeled, cored, and cut into small dice, or one 225-g/8-oz can pineapple chunks, in their own juices, chopped into smaller pieces
One 335-g/12-oz can frozen apple juice concentrate, thawed
1 vanilla bean
1/4 tsp kosher salt
1 large or 2 small mangoes, peeled, pitted, and diced
Finely grated zest and juice of 1 lime

Steps:

  • 1. In a small saucepan, combine the milk, coconut milk, and vanilla and bring to a gentle simmer over medium-low heat. Stir in the tapioca, decrease the heat to low, and cook, stirring occasionally, for about 30 minutes, or until the tapioca is softened. The tapioca will become translucent and will no longer have a white center when it is fully cooked.
  • 2. Meanwhile, put the pineapple (either fresh or canned with juice) and the apple juice concentrate in a medium saucepan and bring to a boil over medium-high heat. Using a small paring knife, split the vanilla bean in half lengthwise, and scrape the seeds into the juice.
  • 3. Decrease the heat to medium-low and simmer the juice and fruit for 20 to 25 minutes, or until the juice becomes thick and syrupy. It will thicken up and boil a little slower as it reduces. Watch out that it does not over-boil or burn; you may need to decrease the heat as it thickens. Remove from the heat and strain the pineapple from the juice. Put the pineapple in a bowl and refrigerate until chilled.
  • 4. Remove the tapioca from the heat and stir in the reduced juice and the salt. Transfer the tapioca mixture to a bowl, cover lightly with plastic wrap, and refrigerate until it cools completely, at least 3 hours or up to overnight.
  • 5. Right before serving, fold about half of the diced mango and the lime juice into the tapioca. Divide the pudding evenly into clear glasses. Fold the remaining mango into the reserved chopped pineapple. Spoon the fruit on top of the pudding to cover in an even layer. Garnish with a little grated lime zest. Serve immediately.

1/3 cup (60 g/2 oz) small pearl tapioca
2 2/3 cups (640 ml) coconut milk (or substitute some of it with whole milk or coconut cream)
1/3 cup (60 g/2 oz) granulated sugar
¼ teaspoon salt
½ teaspoon pure vanilla extract
Sliced fresh fruit such as mango (, melon, pineapple, lychee)
Coconut chips (, optional)

Steps:

  • Place tapioca and coconut milk in a medium saucepan and let soak for 30 minutes.
  • Add sugar and salt to the tapioca mixture, and heat over medium heat until it reaches a simmer. Reduce heat to low and let simmer very gently for 15 minutes until tapioca pearls are transparent and the mixture has thickened. Be sure to stir frequently so that the tapioca doesn't stick to the bottom. Once done, remove from heat and stir in vanilla.
  • Pour into cups and place in the refrigerator until completely chilled, at least 3 hours. The pudding will thicken after refrigeration.
  • Serve with sliced fresh fruit/fruit puree and coconut chips if desired.
  • Tapioca is best the same day it's made, but will keep for up to 3 days in the fridge.

1/2 cup/4 ounces tapioca (seed or Asian pearl tapioca)
3 cups water (divided)
1/8 teaspoon salt
1 (13.5 ounces) can coconut milk (or "lite" coconut milk)
Garnish: table syrup (or maple syrup to serve)
Optional: 1 fresh mango (sliced)

Steps:

  • Gather the ingredients.
  • In a medium bowl, cover tapioca with 1 cup water.
  • Let soak for 15 to 20 minutes or until the granules expand slightly. Avoid over-soaking or the tapioca will not be able to hold its shape.
  • Pour off excess water.
  • In a pot with a lid, combine tapioca, salt, and the remaining 2 cups water. Bring to a boil over high heat.
  • Reduce the heat to medium-low and simmer for 10 to 15 minutes. Stir occasionally, adding a little more water if necessary to prevent tapioca from bubbling and "spitting."
  • When the tapioca turns soft and a little gooey, turn off the heat and place the lid on tight. Let it sit at least 10 minutes. The residual heat inside the tapioca will finish turning all of the seeds soft and translucent.
  • Remove the lid and allow the tapioca to cool on the stovetop.
  • Cover it again and refrigerate until it's cold; it will thicken and gel together.
  • To serve, scoop about 1/4 cup or more of the cold tapioca per person and place in serving glasses or bowls.
  • Pour 1/4 to 1/3 cup coconut milk over each portion and stir to mix. This pudding should be on the runny side and you will have to stir it well to distribute the tapioca.
  • Add a little syrup to each portion (about 1 tablespoon or to taste). Each person can add more according to their preferred sweetness.
  • Add slices of fresh mango or any tropical fresh fruit, if desired.

6 cups water
1 cup small (1/8-inch) pearl tapioca (not quick-cooking)
1 (20-ounces) can lychees in syrup
2 tablespoons sugar
2 (3-inch) strips lime zest
1 (2-inch) piece peeled ginger, thinly sliced
1 large ripe mango, peeled and cut into 1/2-inch pieces
1 teaspoon fresh lime juice

Steps:

  • Bring water to a boil in a heavy medium saucepan, then stir in tapioca. Simmer, stirring often, 10 minutes. Cover and remove from heat. Let stand until most of pearls are translucent, 25 to 30 minutes.
  • Drain syrup from lychees into a small saucepan and add sugar, zest, ginger, and 1/4 teaspoon salt. Simmer, stirring occasionally, 10 minutes, then remove from heat and let stand 5 minutes.
  • Coarsely chop lychees and put in a bowl with mango. Drain tapioca in a colander and rinse under cold water until cool, then add to fruit. Strain syrup though a fine- mesh sieve into fruit. Stir in lime juice and let stand 1 hour for flavors to blend.

1/2 cup small pearl tapioca
1 1/2 cups water
1 can (13.66 oz) Coconut Milk
1/3 cup sugar
1/8 tsp salt
Mango slices or lychee (optional)

Steps:

  • RINSE tapioca in sieve or strainer under cold water 15 to 20 seconds.
  • BRING water to boil in small saucepan. Add tapioca; cook 10 to 12 minutes on medium heat until tapioca is translucent, stirring frequently to avoid sticking. Stir in coconut milk, sugar and salt. Reduce heat to low; simmer 5 to 7 minutes or until pudding thickens slightly, stirring frequently.
  • LET stand 20 minutes. Serve warm or refrigerate until chilled. Serve with mango slices or lychee, if desired.

My husband and his parents love tapioca. Every time they visit I make a batch. Large pearl tapioca can be hard to find in a grocery store (it's one of those time consuming things to cook) but I find them in Asian grocery stores.

3 1/2 ounces large pearl tapioca or 1 cup large pearl tapioca
5 cups milk
1/4 teaspoon salt
2 large eggs, separated
1 cup granulated sugar
1 teaspoon vanilla

Steps:

  • Bring milk to a boil in a double boiler over simmering water.
  • Add salt and tapioca to milk.
  • Stirring constantly, cook tapioca in double boiler for 1 hour or until tapioca is clear and milk is thickened.
  • Beat egg whites with 1/2 cup sugar until firm peaks, set aside.
  • Beat yolks with remaining 1/2 cup sugar.
  • Temper yolks with some of the hot custard.
  • Stir tempered yolks into hot custard, cook over double boiler an additional 15 minutes.
  • Stir in vanilla.
  • Remove from heat and gently fold in egg whites.
  • Pour tapioca into a serving bowl, cover and chill.

  • Soak tapioca pearl overnight in water if instruction says on the label. Other options to soak it for 15 minutes before cooking or cook it without soaking. The cooking time depends on the soaking, it could be from 10 to 40 minutes or more. My recipe was made without soaking.
  • Reduce the heat to low and cook uncovered until the tapioca pearls are plumped up and thickened. Stir constantly, otherwise tapioca will stick to the bottom of the pan. I cooked mine for 35 minutes.

  • To a medium pot, add tapioca pearls, oat milk (or milk of choice), coconut milk, maple syrup (or sugar) and vanilla extract. Let the mixture soak for about one hour in the fridge. I like soaking to give the pearls a head-start absorbing moisture for more evenly cooked tapioca. If you skip soaking, just cook it a little longer.
  • Give the mixture a stir as some of the tapioca might have sunk to the bottom. Set the pot over a medium heat, bring contents to a boil and quickly turn it down to a lower setting. Simmer gently for about seven to eight minutes, stirring constantly for even cooking. What to look for: Use the recipe time as a guideline, making sure to rely mostly on visual queue for doneness. That is, when pearls are mostly translucent with a pin-dot of opaque remaining in the center. They will continue to cook through in the residual heat as the mixture cools so you don’t want take them too far before removing from heat. They will not necessarily all look equally cooked through, even with constant stirring, but that’s okay just look for this doneness in most of the pearls. Remove from heat, cover and let sit for five minutes.
  • Pour pudding into another vessel and let it cool to room temperature. Put into the fridge to chill rest of the way until cold, about an hour.
  • Meanwhile, place 1one cup of the diced mangoes in a small blender and puree until smooth (or use an immersion blender). Mix the puree with cooled tapioca mixture. If you like a thinner pudding, stir in a bit more oat milk or coconut milk.
