- Heat the olive oil in a skillet, and cook and stir the frozen peas, mint leaves, and green onions until the peas are hot and tender but still bright green, 7 to 10 minutes. Pour the peas into a bowl, and mash until the peas are thoroughly crushed but still slightly chunky. Stir in the butter, brown sugar, and salt and pepper, and mix until the sugar has dissolved. Serve warm or cold.

This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat or even as a vegetarian dish with a big dollop of butter on top.

- Put peas in a bowl.
- Place potatoes in a pot and cover with lightly salted cold water. Bring to a boil; cook until crisp-tender, 1 to 2 minutes. Drain, pouring enough hot cooking liquid over peas to cover. Let peas stand 30 seconds, then drain and rinse peas under cold water.
- Melt butter in a large skillet over high heat. Add peas, potatoes, broth, and salt. Cook, stirring, until liquid reduces to a glaze, 5 to 7 minutes.
- Stir in parsley and mint.

- Place potatoes in a pot, cover with water, bring to a boil and cook until tender in salted water, 15 minutes.
- Preheat broiler to high.
- Arrange the chops on a slotted broiler pan and season with salt and pepper on both sides. Finely chop garlic with a handful each of the parsley and mint, then reserve. Combine salad of fennel, coarsely chopped remaining mint and parsley leaves, radishes, scallions, celery, romaine, radichio and ricotta salata, in large bowl. Combine the lemon zest, lemon juice and marmalade. Whisk in the olive oil and pour dressing over salad. Toss and season with salt and pepper, to taste.
- When potatoes are just about ready, broil lamb chops 2 minutes on each side for rare, up to 4 minutes on each side for well doneness.
- Drain potatoes and transfer back to the hot pot to dry. Add peas, milk and soft cheese then mash to desired consistency. Add in reserved garlic and mint mixture and salt and pepper, to taste.
- Serve chops alongside piles of salad and potatoes.

SMASHED PEAS WITH MINT
These smashed peas are smooth and earthy. Fresh lemon juice and mint add a little brightness and freshly cracked black pepper gives it a subtle heat. A handful of chopped green onion provides just a little onion-y bite. It gets a generous drizzle of fruity olive oil right before serving.

- Bring a large pan with about a half-inch of water in it to a simmer on the stove. When the water is simmering, toss in the frozen sweet peas and edamame. No need to thaw them first.
- Simmer them for about 5 minutes, until tender. (Yank one out of the pot and give it a nibble. You'll know when you bite into it if it's still kind of hard and raw.)
- When they're done, drain them well in a colander.
- When they're well drained, toss the little green guys into your food processor. (If you don't have a food processor, I'm reasonably sure you could do this with a potato masher and a little elbow grease.)
- Process them on high until they're smashed to bits. You may need to stop once or twice and scrape down the sides of your bowl. When they're fairly mashed up, squeeze in the lemon.
- Puree again on high to incorporate the lemon juice. In terms of consistency, you're aiming for a chunky paste. Some leftover bits of peas are fine, but you should be able to spread it on a piece of toast with a knife.
- Toss in the garlic powder and some kosher salt and freshly cracked black pepper. (Start with a little, add more after you taste.) Add the mint and most of the sliced scallion (save a little to garnish the dish). Mix together until uniform.
- Transfer to a serving bowl.
- Drizzle with good, fruity olive. Serve warm or at room temp. Enjoy!

- Position a rack in the middle of the oven and preheat to 450°F. Line a baking sheet with parchment paper. Place the meat in a large bowl and season liberally with salt and pepper. In a small bowl, soak the bread in the milk, then crumble the bread into the meat.Mix the scallion whites, parsley, mint, garlic, egg, lemon zest and a healthy drizzle of EVOO into the meat. Separate the mixture into four equal portions. Using your hands, form four mini loaves about 1 1/2 inches thick. Place the loaves on the prepared baking sheet and roast in the oven until cooked through, 15-18 minutes.Meanwhile, in a pot, combine the potatoes and enough cold water to cover; bring to boil. Salt the water and cook the potatoes until tender, 15-20 minutes. Drain the potatoes and return to the hot pot. Add the half-and-half, scallion greens and 2 tablespoons butter; mash to your desired consistency. Season with salt and pepper, then fold in the peas.
