1/2 lb ground beef
1/2 teaspoon chili seasoning mix
1 (8 ounce) can tomatoes with juice, chopped
1 garlic clove, pressed
1 medium onion, chopped
1/2 teaspoon salt and pepper, to taste
1/2 cup nonfat sour cream
1/3 cup fat-free chicken broth
6 small corn tortillas
3 tablespoons chopped green chilies
1/2 cup fat-free liquid egg product
1/2 cup green enchilada sauce
1/2 cup grated light cheddar cheese
1/4 cup crushed baked corn tortilla chips

Steps:

  • Preheat oven to 350o.
  • Spray large skillet with non-stick cooking spray. Add ground turkey or chicken and brown over medium heat. Add chili seasoning and tomatoes and simmer for 2 to 3 minutes. Add garlic and ¼ of the chopped onion and simmer over low heat for about 10 minutes. Add salt and pepper to taste.
  • In a small bowl, combine sour cream and chicken broth.
  • Spray a 9-by-11 inch casserole dish with non-stick cooking spray. Line bottom with 3 tortillas. Add a layer of green chilies and the remaining chipped onions. Add meat mixture. Top with egg and another layer of the remaining 3 tortillas. Top with enchilada sauce and then the cheese. Pour sour cream mixture on top. Add crushed tortilla chips the last 10 - 15 minutes of baking.

I often have to come up with quick meals that are relatively easy to put together, so I came up with this recipe using a slow cooker, green enchilada sauce, and a hand mixer.

1 1/2 lbs boneless skinless chicken thighs
14 ounces diced tomatoes and green chilies
8 ounces cream cheese
8 ounces sour cream
4 cups shredded cheddar cheese
24 corn tortillas
28 ounces green enchilada sauce

Steps:

  • Place chicken thighs (can be frozen) into a crock pot/slow cooker, and pour the 14 oz can of diced tomatoes and green chilies over the top--cook on low 6-8 hours.
  • Preheat oven to 350ºF.
  • Spray a 9 x 13" pan with non-stick spray.
  • In a large bowl, use a hand mixer to mix cream cheese until whipped and soft.
  • Add sour cream to cream cheese, and mix until smooth.
  • Using a slotted spoon or strainer, scoop out whole chicken thighs, tomatoes, and green chilies--leaving behind as much juice as possible in the crock pot/slow cooker, and place it into your sour cream/cream cheese mixture.
  • Mix until chicken is shredded and it is all well blended.
  • Place 1/2 cup green enchilada sauce in bottom of 9 x 13" pan, and spread around.
  • Place 6 corn tortillas over bottom of the pan overlapping slightly.
  • Spread about 1/3 of your chicken mixture on top of the tortillas.
  • Pour 1/2 cup-2/3 cup of green enchilada sauce on top of chicken mixture.
  • Sprinkle about 1 cup of shredded cheddar cheese on top of enchilada sauce.
  • Place 6 more corn tortillas, and repeat steps 10-12 with second 1/3 of chicken mixture.
  • Place 6 more corn tortillas, and repeat steps 10-12 with last 1/3 of chicken mixture.
  • Place 6 more corn tortillas on top, pour remaining green enchilada sauce over tortillas, and spread so that all the tortillas are covered.
  • Sprinkle any remaining cheese over top.
  • Bake for about 60 minutes or until bubbling and slightly brown on top.
  • Let cool for 10-20 minutes before serving, if you can, to allow layers to set.
  • Serve with additional sour cream, guacamole, or other toppings or sides.

This is something I made when I was in the mood for enchiladas but didn't want to go to all the trouble, had some leftover chicken to use up, and also wanted a somewhat low-cal but filling dinner. It gets a big thumbs up from my whole family, and the leftovers are usually gone very quickly.

2 cups diced cooked chicken breasts
1/4 cup sour cream
1/4 cup chunky salsa, thick and chunky variety
1 (4 ounce) can diced green chilies
1 (15 ounce) can pinto beans, drained (I use low sodium variety)
1 cup hominy or 1 cup corn
1 (15 ounce) can enchilada sauce
12 (6 inch) corn tortillas
1/2 cup Mexican blend cheese, shredded (divided)

Steps:

  • Preheat oven to 350 degrees.
  • Pour 1/2 of the can of enchilada sauce in the bottom of an 11 by 7 inch pan.
  • Take 6 tortillas and tear or cut 4 of them in half, then dip all of the tortillas (cut and not cut) into the sauce, coating both sides. Arrange the 4 cut tortillas along the edges of the pan, so that the straight cut side faces to the outside, and layering them. Place the two whole tortillas in the center of the pan, to completely cover the bottom of the pan.
  • Mix together the filling: Chicken, Sour Cream, Salsa, Diced Green Chiles, Pinto beans, Hominy (or corn).
  • Spread half of the filling over the tortillas in the pan.
  • Sprinkle 1/4 cup of the cheese over the filling.
  • Spread the rest of the filling over the cheese.
  • Tear/cut 4 more tortillas in half and arrange around the edges. Place the last two tortillas over the top to completely cover the filling. Pour and spread the last half of the enchilada sauce over the top of the tortillas and sprinkle the last 1/4 cup of cheese over the top.
  • Bake in the oven at 350 degrees for about 40 minutes.

diced green chilis, to taste
1 package taco seasoning mix

2 cups salsa (or to taste)

Steps:

  • Preheat oven to 350.
  • Grease 13x9x2 inch baking dish. Heat oil in large skillet Saute onion, stirring occasionally, until tender.
  • Remove from heat.
  • Stir in chicken, chiles and seasoning mix
  • Layer half of tortillas in prepared baking dish. Top with chicken mixture, beans and 1 cup cheese
  • Layer with remaining tortillas. Top with salsa and remaining cheese

1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of chicken soup
1/2 cup water (or as needed)
1 (4 ounce) can mild green chilies
12 blue corn tortillas (or yellow)
2 1/2 cups longhorn cheddar cheese, grated
2 cups cooked chicken, skinned, boned and cubed

Steps:

  • In a medium saucepan place both soups, water and green chilies. Stir the ingredients together and bring the mixture to a boil. Turn off the heat.
  • In a large well-greased casserole dish place 3 of the tortillas in a staggered pattern. Sprinkle on 1/4 of the cheese. Add 1/3 of the chicken. Spoon on 1/3 of the soup mixture. Repeat the process two more times. Stagger the tortillas differently for each layer.
  • Top the casserole with a layer of the cheese. Preheat the oven to 350 degrees. Bake the casserole for 1 hour, or until it is hot and bubbly. Prep time does not include cooking time for chicken.

3 tablespoons vegetable oil
1 1/2 pounds skinless boneless chicken breast
Salt and pepper
2 teaspoons cumin powder
2 teaspoons garlic powder
1 teaspoon Mexican Spice Blend
1 red onion, chopped
2 cloves garlic, minced
1 cup frozen corn, thawed
5 canned whole green chiles, seeded and coarsely chopped
4 canned chipotle chiles, seeded and minced
1 (28-ounce) can stewed tomatoes
1/2 teaspoon all-purpose flour
16 corn tortillas
1 1/2 cups enchilada sauce, canned
1 cup shredded Cheddar and Jack cheeses
Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes

Steps:

  • Coat large saute pan with oil. Season chicken with salt and pepper. Brown chicken over medium heat, allow 7 minutes each side or until no longer pink. Sprinkle chicken with cumin, garlic powder and Mexican spices before turning. Remove chicken to a platter, allow to cool.
  • Saute onion and garlic in chicken drippings until tender. Add corn and chiles. Stir well to combine. Add canned tomatoes, saute 1 minute.
  • Pull chicken breasts apart by hand into shredded strips. Add shredded chicken to saute pan, combine with vegetables. Dust the mixture with flour to help set.
  • Microwave tortillas on high for 30 seconds. This softens them and makes them more pliable. Coat the bottom of 2 (13 by 9-inch) pans with a ladle of enchilada sauce. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat. Spoon 1/4 cup chicken mixture in each tortilla. Fold over filling, place 8 enchiladas in each pan with seam side down. Top with remaining enchilada sauce and cheese.
  • Bake for 15 minutes in a preheated 350 degree F oven until cheese melts. Garnish with cilantro, scallion, sour cream and chopped tomatoes before serving. Serve with Spanish rice and beans.

My good friend brought this to me in the hospital after I had just had a baby. My husband promptly took it home and ate the entire thing without sharing. I had to remake it myself to find out what he'd been raving about. I've made a few adjustments and so can you according to your tastes! This is a great casserole to make because some of the canned ingredients you may already have. Serve with sour cream, hot sauce, and cold diced tomatoes or salsa if you like. Maybe even serve some chips and guacamole to round it out.

1 tablespoon olive oil
1 pound skinless, boneless chicken breast meat - cubed
1 tablespoon ground cumin, or to taste

1 red bell pepper, seeded and chopped

1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can enchilada sauce
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 (4 ounce) can diced green chiles
1 onion, chopped
1 pinch garlic powder
1 cup chicken broth
1 teaspoon chili powder
16 ounces processed cheese spread
10 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 5 quart pot combine the chicken, cream of celery soup, cream of chicken soup, enchilada sauce, diced tomatoes and green chiles, onion, garlic, chicken broth, chili powder and cheese. Heat over medium high until the cheese is melted and all of the ingredients are mixed together well.

1 pound Swiss chard, rinsed well and drained
2 garlic cloves, or to taste, minced
1 tablespoon olive oil
1 large whole chicken breast (about 1 1/2 pounds), cooked, boned, and shredded (about 1 1/4 cups meat)
vegetable oil for frying the tortillas
twelve 7-inch corn tortillas, dried at room temperature for 30 minutes, or until they are leathery and curled but not crisp
2 1/2 cupsMexican-style tomato sauce
1/2 cup chicken broth
1 1/2 cups grated Monterey Jack (about 6 ounces)
1/2 cup freshly grated Parmesan

Steps:

  • Cut the stems from the Swiss chard leaves and chop them and the leaves separately. In a large skillet cook the garlic in the oil over moderate heat, stirring, until it is fragrant, stir in the Swiss chard stems and 1/4 cup water, and cook the mixture, covered, for 5 minutes. Add the leaves and cook the mixture, covered, stirring occasionally, for 3 to 5 minutes, or until the leaves are tender. Drain the Swiss chard mixture in a bowl toss it with the shredded chicken and salt and pepper to taste.
  • In a skillet heat 1/4 inch of the oil over moderately high heat until it is hot but not smoking, in it fry the tortillas, 1 at a time, turning them, 3 to 4 seconds, or until they are softened, and transfer them with tongs as they are fried to paper towels to drain. In a bowl thin the tomato sauce with the broth, spoon about 1/3 cup of it into the bottom of a greased 13- by 9-inch baking dish, and arrange 4 of the tortillas in one layer over it. Spread the tortillas with half the chicken mixture and half the Monterey Jack, spoon about 1/2 cup of the remaining sauce over the mixture, and cover it with 4 of the remaining tortillas in one layer. Spread the tortillas with the remaining chicken mixture and the remaining Monterey Jack, top the mixture with 1/2 cup of the remaining sauce, and cover it with the remaining 4 tortillas. Pour the remaining sauce evenly over the tortillas and sprinkle it with the Parmesan. Bake the enchiladas, covered with foil, in the middle of a preheated 350°F. oven for 15 minutes, remove the foil, bake the enchiladas, uncovered, for 5 to 10 minutes more, or until the cheese is bubbling.

The sauce is actually a modified Alfredo recipe and is also great over fajitas.

6 tablespoons butter, divided
6 skinless, boneless chicken breast halves
2 fresh poblano peppers, seeded and sliced into strips
4 fresh jalapeno peppers, seeded and diced
2 cloves garlic, chopped
1 lime, halved

1 pint half-and-half
1 bunch fresh cilantro, chopped
1 (8 ounce) package fresh mushrooms, sliced
2 ounces sour cream
12 (6 inch) corn tortillas
4 cups shredded mozzarella cheese

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Place the chicken breasts in the skillet. Mix in the poblano peppers, jalapeno peppers, and garlic. Squeeze the juice from one lime half over the chicken, and place the lime peel and pulp into the skillet. Cover, and simmer 25 minutes, stirring occasionally, until chicken juices run clear. Remove from heat, cool, and cut chicken into cubes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 1/4 cup butter in a medium saucepan over low heat. Gradually stir in the flour and half-and-half. Mix in the cilantro, mushrooms, sour cream, and juice of remaining lime half. Cook and stir 10 minutes, until mushrooms are tender.
  • Line the bottom of a 9x13 inch baking dish with 6 tortillas. Arrange 1/2 the chicken and pepper mixture over the tortillas. Sprinkle with 1 cup cheese, and cover with remaining tortillas. Layer with remaining chicken and pepper mixture, and pour the cilantro sauce evenly over the casserole. Top with remaining cheese.
  • Bake 25 minutes in the preheated oven, until cheese is melted and lightly browned.

¼ cup cornstarch
2 eggs
1 teaspoon salt
½ teaspoon ground black pepper
6 tablespoons all-purpose flour
1 teaspoon baking powder
½ cup vegetable oil
4 teaspoons sesame oil
2 tablespoons grated fresh ginger root
½ cup chopped green onion
½ cup water
¼ cup distilled white vinegar
½ cup white sugar
2 tablespoons cornstarch
2 tablespoons soy sauce
¼ cup oyster sauce
¼ cup ketchup

Steps:

  • Coat the chicken pieces with 1/4 cup of cornstarch; set aside.
  • Beat the eggs, salt, and pepper in a mixing bowl until smooth. Stir in the flour and baking powder until no large lumps remain. Mix in the chicken until evenly coated.
  • Heat the vegetable oil in a wok or large skillet over high heat. Drop in the chicken pieces; cook until golden brown and no longer pink on the inside, about 12 minutes. Set the chicken aside; keep warm.
  • Reduce the heat to medium-high and stir in the sesame oil, ginger, and green onion. Cook and stir until the onion is limp and the ginger begins to brown, about 1 minute. Pour in the water, vinegar, and sugar; bring to a boil. Dissolve the cornstarch in the soy sauce and add to the simmering vinegar along with the oyster sauce and ketchup. Stir until the sauce has thickened and is no longer cloudy. Stir in the chicken and simmer until hot.

This is easy, has an authentic Mexican flavor and gets rave reviews whenever I make it. It's like a lasagna which can be put together a day ahead, refrigerated and baked for mealtime. It's based on a recipe using a green chile/tomatillo salsa but I came up with my own red salsa as some folks just won't try something green! and I don't care for many of the canned enchilada sauces.

1 oven-roasted deli chicken, meat removed and in pieces (or 2 chicken breast halves boiled, then meat removed)
1 (12 -16 ounce) jar roasted tomato salsa (smooth, not chunky)
1 (15 ounce) can tomato puree
1 serrano chili pepper, chopped, seeds removed
1/2 teaspoon cumin
1 teaspoon dried chipotle powder
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
18 (6 -8 inch) corn tortillas, fried 2 min. each side in shallow oil
1 (16 ounce) container sour cream
3 cups shredded monterey jack cheese or 3 cups Mexican blend cheese

Steps:

  • Heat oven to 350.
  • Prepare sauce by mixing ingredients in saucepan over medium heat, bringing to a boil. Lower heat and simmer for 5-10 minute to let the pepper become tender.
  • In 10 x 13 glass pan ladle enough sauce to coat the bottom of the pan. Lay 6 tortillas in bottom so they overlap slightly and cover the pan.
  • Spread a layer of chicken evenly over the tortillas. Ladle 1 - 1 1/2 cups sauce over chicken so it is covered. Drop 6-8 heaping tablespoonfuls of sour cream on the sauce in intervals. Spread with a rubber spatula (I stir the sour cream in a bowl first so it is smoother and spreads easier). Spread 1 cup cheese over the sour cream.
  • Repeat with another layer of tortillas, chicken, sauce, sour cream and cheese. Lay the remaining tortillas on top and cover with a ladle of sauce.
  • Bake 20-25 minute or until it starts to bubble on the bottom. Spread remaining cheese and return to oven for 10 minute or until cheese is melted.
  • Remove from oven and let set for 10 minute cut and serve as you would lasagna.

1 can cream of chicken soup
1 can cream of mushroom soup
16 ounces sour cream
1 bunch green onions, chopped
1 can (4 ounces) chopped green chilies
8 flour tortillas (8 inches)
3 cups shredded cooked chicken breast
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
Chopped tomatoes, sliced black olives, green onions and sour cream, optional

Steps:

  • Preheat oven to 350°., Combine soups, sour cream, green onions and green chilies in a bowl. Spray a 13x9-in. pan with cooking spray, then spread 1/4 of the soup mixture in the pan. , Place 4 tortillas on top, tearing to overlap. Spread with half the chicken, half the remaining soup mixture, and 1/2 cup each of shredded cheddar and pepper jack cheese. Repeat layers. , Bake, uncovered for 30 minutes or until casserole is bubbly and cheese is melted. Add toppings if desired.

12 corn tortillas
6 cups shredded cooked chicken
1 (6 ounce) can black olives, drained and sliced
1 ½ cups shredded Monterey Jack cheese
1 cup queso fresco, crumbled

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine sour cream, cream of chicken soup, diced tomatoes, green chiles, salsa, and salt in a large bowl. Spread 1/3 of the mixture in the bottom of the baking dish.
  • Lay 3 tortillas on top of the mixture. Split a fourth tortilla in half and place it on the sides, covering the mixture fully. Sprinkle 1/3 of the chicken, olives, Monterey Jack cheese, and queso fresco on top. Repeat twice more with remaining ingredients, ending with cheese on top.
  • Bake in the preheated oven until hot and bubbly, about 45 minutes.
