GREEN SALAD WITH TANGERINES AND POMEGRANATE SEEDS



Green Salad with Tangerines and Pomegranate Seeds image

1/4 cup tangerine juice
1 clove garlic, minced
2 teaspoons balsamic vinegar
Salt and pepper
1/2 cup extra-virgin olive oil
1 bunch curly kale, stems removed, leaves torn
3 tangerines, separated into segments
3/4 cup walnuts
1/4 cup pomegranate seeds

Steps:

  • Whisk together the tangerine juice, garlic and balsamic vinegar in a bowl. Add salt and pepper to taste. Slowly stream in the olive oil while whisking.
  • In a large bowl, combine the kale, tangerine segments and walnuts. Toss with some dressing and season with salt.
  • Transfer the salad to a serving platter and sprinkle the pomegranate seeds over the top. Serve.

1/2 cup sliced almonds
3 tablespoons sugar, divided
2 medium tangerines or 1 navel orange
6 cups torn lettuce
3 green onions, chopped
2 tablespoons cider vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small skillet, cook and stir the almonds and 2 tablespoons sugar over medium-low heat for 25-30 minutes or until the sugar is melted and the almonds are toasted. Remove from the heat. Peel and section the tangerines, reserving 1 tablespoon juice., In a large bowl, combine the lettuce, onions, tangerines and almonds. In a small bowl, whisk the vinegar, oil, salt, pepper, reserved juice and remaining sugar. Pour over salad; toss to coat.

I love to make main-dish salads in the summertime and serve them with some crusty bread and a nice glass of wine! This one is one of my favorites, featuring sweet and smoky grilled shrimp and a cilantro vinaigrette.

1 tablespoon olive oil
2 ¼ teaspoons smokehouse maple seasoning (such as McCormick® Grill Mates®)
1 ½ teaspoons lemon juice
12 ounces peeled and deveined shrimp
¼ cup extra-virgin olive oil
2 tablespoons honey
2 tablespoons fresh lime juice
2 tablespoons chopped cilantro
1 tablespoon balsamic vinegar
salt and ground black pepper to taste
4 cups mixed salad greens, or more to taste
½ cup thinly sliced English cucumber
⅓ cup freshly cooked corn
½ cup diced tomato
¼ cup sliced red onion
1 avocado, diced

Steps:

  • Combine olive oil, maple seasoning, and lemon juice in a glass bowl. Add shrimp and toss to coat. Refrigerate until ready to grill.
  • Whisk olive oil, honey, lime juice, cilantro, balsamic vinegar, salt, and pepper together in a small bowl. Set vinaigrette aside.
  • Preheat an indoor or outdoor grill to medium-high heat. Thread the shrimp onto skewers. Grill until shrimp turn pink and opaque, about 2 minutes per side. Remove from skewers and set aside.
  • Place mixed greens in the bottom of a large salad bowl. Lay cucumber, corn, tomato, red onion, and avocado in sections on top of the greens. Pile the grilled shrimp in the center of the salad. Drizzle with the vinaigrette and toss to coat. Serve immediately.

3 tablespoons plus 1 teaspoon kosher salt
1 lemon cut into quarters
4 pounds large shrimp in the shell (16 to 20 shrimp per pound)
2 cups good mayonnaise
1 teaspoon Dijon mustard
2 tablespoons white wine or white wine vinegar
1 teaspoon freshly ground black pepper
6 tablespoons minced fresh dill
1 cup minced red onion (1 onion)
3 cups minced celery (6 stalks)

Steps:

  • Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan. Add half the shrimp and reduce the heat to medium. Cook uncovered for only 3 minutes or until the shrimp are barely cooked through. Remove with a slotted spoon to a bowl of cold water. Bring the water back to a boil and repeat with the remaining shrimp. Let cool; then peel, and devein the shrimp.
  • In a separate bowl, whisk together the mayonnaise, mustard, wine or vinegar, 1 teaspoon salt, pepper, and dill. Combine with the peeled shrimp. Add the red onion and celery and check the seasonings. Serve or cover and refrigerate for a few hours.

Couscous and Shrimp Salad with Tangerines and Almonds image

3 cups plain yogurt
1 1/2 cups extra-virgin olive oil
2 tablespoons ground cumin
6 tablespoons fresh lemon juice
3 garlic cloves, pressed
6 cups water
1/4 teaspoon salt
3 10-ounce packages plain couscous
8 tangerines, peeled, seeded, cut into 1/4-inch pieces (about 4 cups)
2 15-ounce cans garbanzo beans (chickpeas), drained
1 cup golden raisins
2 pounds cooked peeled deveined large shrimp (about 50), halved lengthwise
1 cup finely chopped green onions
1 cup sliced almonds, toasted

Steps:

  • Place yogurt in medium bowl. Gradually whisk in oil and cumin. Stir in lemon juice and garlic. Season dressing to taste with salt and pepper. Cover and chill. (Can be made 2 days ahead. Keep refrigerated.)
  • Mix 6 cups water and salt in large saucepan; bring to boil. Mix in couscous. Remove from heat. Cover; let stand until water is absorbed and couscous is tender, about 10 minutes. Transfer couscous to large bowl; fluff with fork. Cool to room temperature. Gently mix in tangerines, garbanzo beans, raisins, 3/4 of shrimp, 3/4 cup green onions and 1/2 cup almonds. Stir in dressing. Season salad to taste with salt and pepper. Transfer salad to large serving platter. (Can be made 4 hours ahead. Cover; chill. Let stand at room temperature 30 minutes before serving.) Garnish with remaining shrimp, green onions and almonds.

This is another recipe of my husband's. These little shrimp go great with a steak and baked potato or over a bed of buttery pasta.

15 -20 count shrimp, peeled, deveined and defrosted (if frozen)
1/2 medium onion, minced
1 garlic clove, minced
2 tangerines
1/4 cup butter
salt and pepper

Steps:

  • Make sure that all shrimp are peeled, deveined and defrosted. You can leave the tails on but I prefer them without tails.
  • in large skillet over medium heat saute garlic and onions in the butter until soft. Once onions are soft add in the juice of the 2 tangerines and let simmer for 2 minutes.
  • Add the shrimp into the sauted mixture and cook until done (about 5 or 6 minutes).

1 bunch green onion
4 seedless tangerines
1 cup dried cranberries
1 tablespoon balsamic vinegar
1 tablespoon orange juice
2 teaspoons prepared mustard (I used dijon)
1/2 cup olive oil

Steps:

  • Tear the washed spinach into bite sized pieces. Slice the green onions. Peel and section the tangarines and cut each section in half. If you couldn't find "seedless tangarines" this is when you pop those little seeds out.
  • Combine spinach, onions, tangarine sections and cranberries in salad bowl.
  • Combine vinaigrette ingredients, pour over salad and toss.
  • Serve immediately.

1/2 cup sugar
2 teaspoons paprika
1 1/2 teaspoons salt
1 tablespoon dry mustard
1/2 cup red wine vinegar
1 cup salad oil
2 heads romaine lettuce, cut in bite-sized pieces
2 (11 ounce) cans mandarin oranges
1 cup slivered almonds, toasted
1 lb fresh shrimp
2 ripe avocados, chopped
1 red onion, sliced into thin rings
2 tablespoons toasted sesame seeds

Steps:

  • Mix dressing ingredients and let sit over night or at least 3 hours in refrigerator.
  • Toast almonds and sesame seeds in frying pan.
  • Chop salad into bite-size pieces.
  • Slice onion into thin rings.
  • Cut avocado into 1/2 inch cubes.
  • Sprinkle lemon juice on avocado if not serving immediately.
  • Combine all salad ingredients including drained oranges and shrimp.
  • Toss, dress and serve.

20 colossal prawns, peeled to tail, deveined
1 tablespoon cajun spices
2 teaspoons mccormick citrus pepper
1/4 teaspoon garlic salt
olive oil, 1 part
1/4 cup sweet vermouth
1/4 teaspoon lemon zest
1/4 teaspoon lime zest
1/4 teaspoon orange zest
1/4 teaspoon tangerine zest
2 tablespoons extra virgin olive oil
1/4 teaspoon thyme
1/4 teaspoon basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon white pepper
1/8 teaspoon garlic powder
1/4 cup olivier balsamic vinegar
1 tablespoon blue agave syrup
1 medium tangerine, juice from
3 roasted garlic cloves, chopped fine and mashed
1/8 cup extra virgin olive oil
1 teaspoon pinot noir wine
1/3 cup blue cheese, crumbles crumbled fine

Steps:

  • For Cajun Spices, we use Bayou Sam's Triple Blast, a great sub is Slap Yo Mama Cajun Spices or Tony's Creole Seasoning.
  • TANGERINE SHRIMP: Mix dry ingredients. Coat shrimp or any type of seafood in lite olive oil, sprinkle zest then season to coat. Grill high to very high heat. Spray often with sweet vermouth. 1 to 2 minutes max. Do not overcook.
  • BLUE AGAVE TANGERINE DRESSING: Combine all spices then add vinegar, whisk until well combined, next add Agave and whisk well. Last whisk in olive oil and whisk well till incorporated, fold in 2 tablespoons of fine blue cheese crumbles, reserving the rest for topping.
  • The best method of preparation is to place plates in freezer to chill, peel to tail and devien shrimp. Heat grill, while grill is heating up, prepare dressing and let stand. Cook shrimp according to above. Pull plates, places greens in extra large bowl with lid, drizzle to taste amount of dressing. Cover bowl and toss and roll in the air to evenly coat salad. Plate salad and top with extra blue cheese crumbles if desired. Place shrimp around outside of plate.
  • A big buttery chard would be nice here -- Cakebread or Rombaurer.
