Pinch of salt
1 pound tagliolini, fresh or dried
1 tablespoon sweet butter
1/2 pound San Daniele prosciutto (half in 2 thick slices, minced; half in paper-thin slices)
1/2 cup light cream
1 teaspoon poppy seeds, if desired, plus more for sprinkling
2 teaspoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Set a large pot (at least 6 quarts) of water to boil. Add salt, and let boil again. Cook tagliolini until slightly firm.
  • While pasta cooks, prepare sauce. Melt butter over medium heat in a saucepan or skillet big enough to hold the pasta. Add the minced prosciutto. Saute just until the ham gives off some fragrance. Add cream and poppy seeds, if you are using them. Stir well, then add cheese and stir well. Remove from heat.
  • When pasta is cooked, drain thoroughly (do not rinse) and then add to saucepan. Return pan to heat, and quickly toss noodles and sauce until well combined.
  • Serve on warm plates. Using tongs or a pasta fork, fill a teacup or bowl (6-ounce size) with pasta and then carefully turn it onto the middle of each plate so that a nest of pasta is formed. Cover each nest with a layer of prosciutto slices and then toss a few poppy seeds around the perimeter.

  • Busa. Busa can be found primarily in Trapani, a region in western Sicily. Busa is made by twisting small strips of pasta around a stick or knitting needle.
  • Chiocciole. Chiocciole means “snail” in Italian, which is an appropriate name for this rounded, ridged style of elbow pasta found all over Italy. It’s usually paired with a heavy sauce.
  • Calamarata. This Neapolitan pasta got its name because it resembles calamari rings. A smaller version is called calamaretti. It’s often paired with a hearty red sauce that incorporates meat and vegetables.
  • Campanelle. Campanelle means “little flower” or “bell flower” in Italian. It’s also sometimes known as gigli. This pasta is shaped almost like a horn with ruffled edges.
  • Conchiglie. Sauce easily adheres to the ridges in this seashell-shaped pasta. Conchigliette are “little shells.” Another version, conchiglie al nero di seppia, is dyed black with squid ink.
  • Candele. Chefs in Campania, in particular the city of Naples, created this extra long pasta. It gets the name from candele, or “candle.” Legend holds that Catholic religious ceremonies inspired the shape of candele.
  • Cannelloni. These “large reeds” are a tube-shaped lasagna from the Campania region and Sicily. Cannelloni is most commonly baked and topped with cheese and a tomato-based sauce.
