TACO TORTELLINI SALAD

Steps:
- Cook tortellini to desired doneness as directed on package. Drain; rinse with cold water.
- Meanwhile, in large bowl, combine kidney beans, tomato, bell pepper and olives. In small bowl, combine salsa, salad dressing and cumin; mix well.
- Add cooked tortellini to salad mixture. Just before serving, pour salsa mixture over salad; stir gently to coat. Sprinkle with tortilla chips.
TACO TORTELLINI SALAD
I'm not sure where I got this recipe from, but I have had it for over 30 years. I usually garnish the top of the salad with crushed tortilla chips. Serving size is approximate (depending on appetites) as a side dish. NOTE: Cooking time is time it takes to cook the tortellini.

- Cook the tortellini. Drain and rinse with cold water.
- Combine beans, tomato, pepper and olives in a large bowl. Add tortellini and toss.
- Make the dressing - combining the salsa, thousand island salad dressing and cumin.
- Just before serving, pour dressing over the tortellini salad mixture and toss.
