Teens like assembling these creative kabobs almost as much as they like devouring them. The whole family is sure to love the sensational Southwestern flavor of this twist on beef shish kabobs. -Dixie Terry, Goreville, Illinois

Number Of Ingredients 9

1 envelope taco seasoning
1 cup tomato juice
2 tablespoons canola oil
2 pounds beef top sirloin steak, cut into 1-inch cubes
1 medium green pepper, cut into chunks
1 medium sweet red pepper, cut into chunks
1 large onion, cut into wedges
16 cherry tomatoes
Salsa con queso or sour cream, optional

Steps:

  • In a large shallow dish, combine the taco seasoning, tomato juice and oil; mix well. Remove 1/2 cup for basting; refrigerate. Add beef and turn to coat. Cover; refrigerate for at least 5 hours., Drain and discard marinade from beef. On metal or soaked wooden skewers, alternately thread beef, peppers, onion and tomatoes. Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting until meat reaches desired doneness, 8-10 minutes. If desired, serve with salsa con queso or sour cream.

1 cup chunky peanut butter
1/2 cup low-sodium chicken stock
1 lime, juiced
1 tablespoon soy sauce
1 teaspoon red chili flakes
1/2 teaspoon cayenne
1 tablespoon honey
Salt and freshly ground black pepper
2 pounds chicken tenders
2 tablespoons vegetable oil
1 teaspoon allspice
Special equipment: bamboo skewers

Steps:

  • Combine peanut butter, stock, lime juice, soy sauce, hot chili flakes, cayenne and honey in a small saucepan. Stir to combine and bring to a simmer over medium heat, stirring occasionally. When peanut butter has melted, season, to taste, with salt and pepper and remove from heat.
  • Preheat grill.
  • Skewer chicken tenders, brush both sides with oil and season with salt, pepper and allspice. Grill chicken until it is browned on both sides and cooked through, about 4 minutes per side. Serve with peanut sauce.

Tasty chicken skewers that are easy to prepare. My grandkids loved these. Makes a great appetizer or a meal. Preparation time does not include fridge chill time.

1 cup sour cream
1 (7 ounce) jar green chili salsa
2 tablespoons fresh cilantro, chopped
1 (1 1/4 ounce) package taco seasoning mix, divided
4 boneless chicken breast halves, cut into 1-inch wide strips

Steps:

  • Combine sour cream, salsa, and cilantro and one teaspoon taco seasoning mix in a bowl; stirring well. Cover and chill up to 8 hours, if desired.
  • Toss chicken with remaining taco seasoning mix.
  • Cook chicken in a large non-stick skillet coated with vegetable spray over medium-high heat for 6-8 minutes or until done.
  • Serve immediately.
  • Serve on skewers with salsa mixture.

So simple, so tasty, this is a no fail recipe! Excellent for barbecues served with salad or with my recipe #289258.We love them stuffed into pita bread or in wraps with salad for lunch. Also great cold for picnics! Timing does not include marinating time.

4 boneless skinless chicken breasts
1/2 teaspoon salt
4 tablespoons lemon juice or 4 tablespoons lime juice
150 ml plain yogurt
2 garlic cloves, minced
2 teaspoons minced ginger
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
melted butter, for brushing

Steps:

  • Cut the chicken into 1" cubes; sprinkle with salt and lemon juice and leave for approx 10 minutes.
  • For the marinade, combine yogurt, garlic, ginger and ground spices in a bowl until mixed well.
  • Thread chicken on to skewers and brush liberally with marinade. Cover and refrigerate for at least 2 hours, better overnight.
  • Barbecue or grill, brushing with butter or oil, turning frequently, until cooked through--approx 15 minutes.
  • NB-You can also do this with chicken portions like drumsticks and thighs; adjust cooking time accordingly.

  • Add in the diced chicken and gently fold it in until all pieces have a thick coating of marinade on all sides. Cover with clingfilm and refrigerate for 2-8 hours.
