Copy Cat Recipe. I received a ton from my mom.. Here's another...I haven't adusted anything :O) On some I had to guess on the time and servings if I haven't tried them.

- Mix together cinnamon and sugar very well. In a dutch oven, or large skillet heat the oil to 350 Degrees. If you do not have a thermometer, you can set it on med high, but be careful to watch that it doesn't get too hot and begin to smoke.
- Quarter the tortillas and deep fry 2-4 at a time. Allow them to cook on one side for about 30 seconds or until golen brown, turn over, and repeat. When both sides are brown take out, and place on paper towels to drain. While the tortillas are draining liberally sprinkle with cinnamon mix.

CRISPITOS | CAFETERIA COPY CAT
The most important part to crispitos is getting the right flavor and texture to the "mystery meat" - which in my recipe is just regular ground beef.

Steps:
- Preheat the oven to 400 F. Cook and crumble the ground beef. Rinse in a strainer then transfer to a food processor. Add the paprika, turmeric, cumin, water and salsa. Use the food processor to blend up the meat until paste-like in consistency.
- Cut the tortillas in half. Measure out approximately 1/4 cup of the filling and arrange it in a log-like shape about a half inch in from the cut side of the tortilla. Fold over each end and tightly wrap the tortilla around the filling.
- Spray a baking sheet with cooking spray. Place the filled tortillas, seam side down on the greased baking sheet. Spray the tops of each filled tortilla with a mist of cooking spray.
- Pop the baking sheet into the oven and cook for 12-15 minutes, until they are just starting to get crispy but haven't started to brown. Serve topped with a generous helping of nacho cheese and sour cream. Enjoy!

Steps:
- To make Indian Fry Bread Mix dry ingredients together.
- Cut in shortening; then add milk.
- Shape dough into a long cylinder; cut into 8 equal parts.
- Flour hands, then work the pieces into 6" tortillas.
- Fry in oil until golden brown.
- To Make filling Mix dried onion with water in a small bowl and let stand for five minutes.
- Combine ground beef, flour, chili powder, paprika, and salt.
- Mix well.
- Add onions and water.
- Mix again.
- In a skillet, cook beef mixture until browned.
- Stir often while cooking so no large chunks form; it should be more like a paste.
- Remove from heat and keep warm.
- Build Chalupas starting with meat, then sour cream, lettuce cheese, and tomatoes in that order.
- Top with hot sauce or salsa if desired.

- Prepare rice according to package directions.
- Spoon chili into 8 inch square baking dish'.
- Cut up the tamales into 1 inch pieces. Top the chili with the tamales.
- Heat mixture (covered) in microwave for 4 minutes on high.
- Add the rice and cheese on top and finish microwaving until the cheese melts on top-3 minutes on high.
