1/2 cup fine bulgur wheat
4 firm Roma tomatoes, very finely chopped
1 English cucumber (hothouse cucumber), very finely chopped
2 bunches parsley, part of the stems removed, washed and well-dried, very finely chopped
12-15 fresh mint leaves, stems removed, washed, well-dried, very finely chopped
4 green onions, white and green parts, very finely chopped
Salt
3-4 tbsp lime juice (lemon juice, if you prefer)
3-4 tbsp Early Harvest extra virgin olive oil
Romaine lettuce leaves to serve, optional

Steps:

  • Wash the bulgur wheat and soak it in water for 5-7 minute. Drain very well (squeeze the bulgur wheat by hand to get rid of any excess water). Set aside.
  • Very finely chop the vegetables, herbs and green onions as indicated above. Be sure to place the tomatoes in a colander to drain excess juice.
  • Place the chopped vegetables, herbs and green onions in a mixing bowl or dish. Add the bulgur and season with salt. Mix gently.
  • Now add the the lime juice and olive oil and mix again.
  • For best results, cover the tabouli and refrigerate for 30 minutes. Transfer to a serving platter. If you like, serve the tabouli with a side of pita and romaine lettuce leaves, which act as wraps or "boats" for the tabouli.
  • Other appetizers to serve next to tabouli salad:Hummus; Baba Ganoush; or Roasted Red Pepper Hummus

An easy Lemon-Mint and Tabbouleh Salad. If you have trouble finding plain bulgur (cracked wheat), use one cup of bulgur (but not the seasoning packets) from two boxes of wheat salad mix, found in the rice and pasta section of the supermarket.

1/4 cup olive oil
1/4 cup fresh lemon juice
3 large garlic cloves, minced
1 cup bulgur (cracked wheat)
1 cup boiling water
1 cup chopped seeded plum tomatoes
1/2 cup chopped fresh Italian parsley
2 large green onions, chopped
2 tablespoons chopped fresh mint

Steps:

  • Whisk oil, lemon juice, and garlic in small bowl to blend; set aside. Place bulgur in large bowl. Mix in 1 cup boiling water. Let stand until bulgur is tender and water is absorbed, about 15 minutes. Mix in tomatoes, parsley, green onions, and mint. Add oil mixture; toss to blend. Season with salt and pepper. Let stand at least 30 minutes to blend flavors. (Can be made 1 day ahead. Cover; chill.)

Tabouli (Lebanese Bulghur, Parsley, and Mint Salad) image

Tabouli is a Lebanese salad and is often served as part of a meza appetizer assortment, as well as on its own. This is my cousin's recipe, and according to her, you NEVER put garlic in tabouli, and there is no place in it for celery, cucumber, or any of the myriad of other ingredients with which some people like to adulterate it "to make it different". I agree with her wholeheartedly. This doesn't need anything else; just season it well with the salt, pepper, lemon, and olive oil.

1 cup medium Bulgar wheat (#2)
2 -3 bunches parsley, stemmed and chopped, depending on size
1 -2 bunch fresh mint leaves, finely chopped, depending on size, more to taste
2 bunches green onions, chopped
4 -5 ripe firm tomatoes, partially seeded and chopped
3 -5 lemons, juice of, to taste
1/2 cup extra virgin olive oil, to taste
salt & fresh ground pepper

Steps:

  • This recipe is a breeze if you have a food processor, a little more work if you don't.
  • If using a processor, chop parsley and mint together, using a pulsing action, to ensure that you don't end up pureeing them, and remove to a bowl.
  • Repeat with green onions, and add it bowl.
  • Chop tomatoes, preferably by hand, into about 1/4" dice, and add to bowl.
  • If you are making this for company, you might want to chop everything by hand.
  • It makes a much prettier dish than when made in the processor, but I never bother when it is for personal consumption; I just take a little care when using the processor.
  • Wash bulghur thoroughly, drain, and soak in fresh hot water for about 1 hour.
  • Drain and squeeze as dry as possible, and combine with vegetables.
  • Drizzle with lemon juice and olive oil.
  • Add salt and pepper to taste, and toss thoroughly.
  • You can be quite generous with the pepper.
  • Refrigerate for about an hour, taste, and adjust salt and pepper.
  • In addition to serving a a salad or part of a meza appetizer assortment, it is also good as dressing on a falafel or lamb sandwich in pita bread.

Unlike other tabouli salads using lots of mint, this is bright and refreshing salad uses fresh lemon juice, fresh produce and the addition of seeded jalapeno peppers for a surprising and spicy kick with the earthiness of the kale. A perfect blend of richness and freshness, this salad is surprisingly filling while remaining light and delicious.

1/2 bunch kale
2 cups cracked wheat
2 roma tomatoes, seeded
1/2 cucumber, seeded
1 jalapeno pepper, seeded
2 garlic cloves
1 lemon, juice of
1/2 bunch parsley
2 tablespoons olive oil
salt and pepper

Steps:

  • Fill a bowl with hot water and allow the wheat to soak for 10-20 minutes until tender while chopping all the ingredients into proper small dices for easy eating.
  • Remove the thick ribs from the middle of the kale leaves and tear kale into 1/2 inch pieces and place in a mixing bowl. Sprinkle a small amount of salt onto the kale and massage aggressively for 1 minute until the kale has wilted and becomes fragrant.
  • Add the wheat to a large bowl and add all the vegetables except garlic to make to tabouli. Smash the garlic against the cutting board until a fine paste and add to the lemon juice and olive oil to create a dressing.
  • Dress the tabouli with the garlic mixture and add fresh parsley and salt and pepper and taste. At this point you may add more tomatoes, cucumber, parsley, or jalapeno to taste.
  • Once the tabouli is to your liking, add the fresh kale to the salad and toss.
  • Taste one more time and allow to sit for 10 minutes before serving. Unlike other greens, kale will hold its texture, and will become more flavorful over time. This salad may be served at room temperature or left to marinate in the refrigerator for up to 6 hours.

1/2 medium onion, chopped fine
1/2 bunch fresh parsley leaves, chopped
1 1/2 medium tomatoes, chopped
1 garlic clove, minced

1/4 cup Wishbone Italian dressing

Steps:

  • Soak bulghur in water for 2 hours.
  • Add the minced garlic, chopped onion, chopped parsley, chopped mint leaves and mix well.
  • Add the Italian dressing [or make your own dressing of 1 part vinegar to 3-4 parts olive oil or safflower oil].

7 cups boiling water
1 lb parsley, finely chopped
5 ounces mint, finely chopped
1 quart green onion, finely chopped
2 lbs tomatoes, chopped
2 cups lemon juice
7 tablespoons canola oil
1 1/2 teaspoons salt
1/2 teaspoon pepper, preferably freshly-ground

Steps:

  • Put bulgur into a large bowl and cover with boiling water.
  • Let stand 30 minutes.
  • After 15 minutes, if the bulgur seems dry, add a little more boiling water.
  • After 30 minutes, if it has extra water, drain it.
  • While bulgur soaks, prepare parsley, mint, etc.
  • After bulgur cools, add parsley, mint, onions and tomatoes.
  • Stir to mix well.
  • Cover and chill until serving time.
  • Makes 50 servings.
