GRILLED SWORDFISH WITH POTATO-CHORIZO SALAD



Grilled Swordfish with Potato-Chorizo Salad image

For the fish:
4 cloves garlic, smashed
2 tablespoons extra-virgin olive oil, plus more for drizzling
Juice of 1/2 orange
1 tablespoon sherry vinegar
1 teaspoon honey
1 teaspoon chopped fresh thyme
1/2 teaspoon cumin seeds, chopped
Kosher salt and freshly ground pepper
6 6-to-8-ounce skin-on swordfish steaks (about 1/2 inch thick)
Vegetable oil, for brushing
For the potato salad:
1 1/2 pounds small red-skinned potatoes, thinly sliced
Kosher salt
1/4 teaspoon cumin seeds, chopped
3 tablespoons extra-virgin olive oil
4 ounces dried chorizo, diced
2 tablespoons sherry vinegar
1/4 cup chopped fresh parsley and/or chives
3 stalks celery (with leaves), sliced
1/4 cup piquillo peppers, sliced
Freshly ground pepper

Steps:

  • Prepare the fish: Whisk the garlic, olive oil, orange juice, vinegar, honey, thyme, cumin seeds, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the fish and turn to coat. Cover with plastic wrap and refrigerate 1 hour.
  • Meanwhile, make the potato salad: Put the potatoes in a pot and cover with cold water; season with salt. Bring to a boil and cook over medium-high heat until tender, about 20 minutes; drain. Toast the cumin seeds in a medium skillet over medium heat, about1 minute; transfer to a large bowl. Add the olive oil and chorizo to the skillet and cook until the chorizo just begins to sizzle, about 3 minutes. Remove the chorizo with a slotted spoon and drain on paper towels. Remove the skillet from the heat; reserve the drippings.
  • Add the vinegar and herbs to the bowl with the cumin, then whisk in the chorizo drippings. Add the celery, piquillo peppers, potatoes and chorizo; toss. Season with salt and pepper.
  • Preheat a grill to high; brush the grates lightly with vegetable oil. Place the swordfish on the grill and brush with some of the marinade from the bowl. Grill until marked on the bottom, about 5 minutes. Flip and continue grilling until just cooked through, about 4 more minutes. Divide among plates and drizzle with olive oil. Serve with the potato salad.

1/2 cup mayonnaise
2 tablespoons fresh lemon juice
1 small garlic clove, pressed
1/2 teaspoon dried basil, crumbled
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon dried tarragon, crumbled
1/2 teaspoon dried dillweed
2 6-ounce swordfish steaks
1/4 cup dry white wine

Steps:

  • Combine mayonnaise, lemon juice, garlic, basil, thyme, tarragon and dill in a small bowl. Season with salt and pepper. (Herb sauce can be prepared 2 days ahead. Cover and refrigerate.)
  • Butter 8-inch square baking dish. Spread each side of swordfish steaks with 1 tablespoon herb sauce. Place in prepared dish and chill 30 minutes.
  • Preheat oven to 400°F. Pour wine over swordfish. Bake until fish is just cooked through, about 17 minutes. Transfer to plates. Serve, passing remaining herb sauce separately.

SWORDFISH WITH SAVORY GINGER SOY SAUCE

DH and I made this for dinner a couple of nights ago and really enjoyed the combination of ginger and soy with the swordfish. From Keiko O Aoki's "Easy and Healthy Japanese Food for the American Kitchen." I should mention that I always use reduced sodium soy sauce (I prefer San-J Tamari).

4 pieces swordfish fillets
2 green onions, finely chopped
4 slices fresh lemon rind
2 small tomatoes, wedged
1/2 cup flour
4 tablespoons vegetable oil
salt, to taste
pepper, to taste
2 1/2 tablespoons butter
2 inches fresh ginger, peeled and thinly shredded
4 tablespoons white wine
2 tablespoons soy sauce

Steps:

  • To make the sauce, melt the butter in a small frying pan. Add the thinly shredded ginger and slowly saute over low heat. Add the white wine and soy sauce to complete the sauce.
  • Place the swordfish filets on a plate and sprinkle with salt and pepper on both sides. Lightly coat the filets with flour.
  • Heat the vegetable oil in a frying pan and place the swordfish filets in pan, frying until both sides are nicely browned and cooked through.
  • Serve on a plate with lemon rinds and finely chopped green onion on top. Pour the sauce on the fish. Serve with tomatoes on the side for garnish.

SMASHED POTATOES WITH THAI-STYLE CHILE AND HERB SAUCE



Smashed Potatoes With Thai-Style Chile and Herb Sauce image

This recipe is inspired by suea rong hai, or "crying tiger," a Thai dish of grilled beef served with a fiery sauce of crushed Thai chile, fish sauce, lime juice, toasted rice powder and cilantro. Here, the bright and punchy sauce is the perfect foil to crispy roasted potatoes, but it would be just as welcome spooned over fried brussels sprouts, sautéed shrimp or grilled steak. Finally, while the sauce in this recipe is equal parts acidic and spicy, feel free to add more chile - including the seeds and ribs - to take the heat up a notch.

4 tablespoons olive oil
2 pounds small new or Yukon gold potatoes (ideally about 1½-inch wide)
Kosher salt
2 tablespoons fish sauce
2 tablespoons lime juice
2 tablespoons rice vinegar
1 tablespoon minced Fresno or serrano chile, or 1/2 teaspoon red-pepper flakes, plus more to taste
1 teaspoon soy sauce or tamari
1 teaspoon granulated sugar
1 garlic clove, grated
1/4 cup roughly chopped fresh cilantro, plus whole leaves for serving
1/4 cup thinly sliced scallions, white and green parts

Steps:

  • Heat the oven to 450 degrees. Brush a sheet pan all over with 1 tablespoon olive oil.
  • Place the potatoes in a large pot and fill with enough water to cover by 1 inch; add 2 tablespoons salt. Bring to a boil over high heat, then lower and simmer, uncovered, for 15 to 18 minutes, until the potatoes are just fork tender. Pour into a colander to drain, then return the cooked potatoes to the pot off the heat to help any remaining moisture evaporate.
  • Meanwhile, in a small bowl, whisk together the fish sauce, lime juice, rice vinegar, chile, soy sauce, sugar and garlic, then stir in the cilantro and scallions.
  • Place the potatoes on the prepared sheet pan. Using the bottom of a measuring cup, gently smash each potato until it's about 1/2-inch thick. Drizzle remaining 3 tablespoons olive oil over the potatoes and carefully flip to coat both sides in oil. Sprinkle with 1/2 teaspoon salt and roast for 30 to 40 minutes, until golden brown and crisp.
  • Transfer the potatoes to a platter, sprinkle lightly with salt, then spoon the sauce on top. Garnish with cilantro leaves and serve hot.

4 swordfish fillets
4 medium tomatoes, peeled and halved, seeded
1 tablespoon breadcrumbs
1 garlic clove, crushed
1 teaspoon fresh oregano leaves, chopped
2 -4 tablespoons olive oil
salt and pepper
4 -6 fresh basil leaves, chopped (as many as you prefer)
4 -6 fresh Italian parsley, chopped (as many as you prefer)
4 shallots, chopped (or one small yellow or white onion)
1/2 lemon, juice of
6 seedless spanish black olives, halved (optional)
4 sprigs Italian parsley (optional)
12 capers (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Place swordfish fillets on a plate and sprinkle with olive oil, if you like, or leave plain and cover with plastic wrap. Set aside.
  • To make the sauce heat 2 or more tbsp olive in a frying pan, add chopped basil and parsley, shallots (or small onion), salt and pepper to taste. Stir gently as it cooks.
  • When the shallots (or onion) is translucent, set aside.
  • In a bowl mix the crushed garlic, breadcrumbs, oregano and lemon juice, salt and pepper to taste.
  • Place the halved, prepared tomatoes on a baking tray and cover with the oil and garlic mixture.
  • Bake in the oven for about 10 minutes or until cooked through and a bit bubbly.
  • While sauce is baking, cook swordfish in 2 tablespoons olive oil on a hot griddle or in a non-stick frying pan until golden brown on both sides. You may add more olive oil, if necessary.
  • To serve, place the fish on pre-heated plates with the baked tomato halves in herb sauce either alongside or on top of each fillet, and sprinkle remaining herb sauce and juices over all.
  • Top each fillet with 3 black olive halves, 3 capers and a sprig of parsley.
  • Note: Roasted potatoes, a green salad and a glass of wine go well with this dish. Salut!
