THE BEST GARLIC BURGERS EVER
These world famous garlic burgers have just three seasonings and a legion of fans, and are simply one of the very best burgers you'll every bite into.

Steps:
- Prepare grill with Cowboy® Hardwood Lump Charcoal and light.
- Divide the hamburger meat into 4 equal portions. Lightly form the meat into balls. Use the lid of a small saucepan (one that is slightly concave works best) and smash each ball into a patty.
- Season each side of the patties with 1 teaspoon of garlic powder and kosher salt and freshly ground black pepper.
- Once grill is hot and coals have ashed over, spread the charcoal in the bottom of the grill and place the burgers on the grill grate. Cook the burgers undisturbed until browning at the edges and flip once. Add one slice of cheddar cheese and one slice of Monterey jack cheese to each burger. Top with the grill lid to melt the cheese.
- Cut the french bread into 5-inch lengths and then slice in half. Press the bread down with your hand to flatten slightly.
- Layer each french bread bun with 2 patties, lettuce, onions, tomato and pickles. Add ketchup and mustard. Slice in half and serve with potato chips and pepperoncinis on the side.
GARLIC BURGER PATTIES
Steps:
- Gather the ingredients. Preheat the grill for medium heat.
- Combine the ground beef with the Worcestershire sauce, soy sauce, garlic powder, onion powder, pepper, and chili powder.
- Form the ground beef into 6 patties.
- Season the patties with salt right before they go onto the grill.
- Using tongs, a high smoke-point oil like grapeseed or avocado oil, and paper towels, oil the grill grates well.
- Place the patties onto the grill and cook for 5 minutes per side or until the internal temperature reaches 160 F. During the last minute or two of cooking, place cheese slices on and cook for 1 to 2 minutes until cheese has melted.
- Remove the patties from the heat and serve on a toasted bun or in an iceberg lettuce wrap with your favorite condiments.

- Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
- Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
- Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
- Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
- Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
- Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
- When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
- Timing for a countertop grill:
- For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
- For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
- For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
- Combine all ingredients.
GARLIC AND ONION BURGERS
This recipe makes very flavorful burgers. The secret is refrigerating the meat after adding the other ingredients. Use ground round or sirloin for the best results.

I made this recipe up one night, when I was sick of the same old burgers. The garlic really adds a nice flavor and the liquid smoke adds a nice outdoor cooked taste even in the frying pan.

ROASTED GARLIC BURGER

- Preheat a grill, or preheat the oven to 400 degrees F.
- In a bowl, mix together the meat, salt and pepper, and Roasted Garlic Paste.
- Using your hands, form 4 individual burgers. Wrap in plastic wrap and refrigerate until ready to grill.
- Cook the burgers over a hot fire or roast in the oven until desired internal temperature is reached, about 160 degrees for medium.
- Split each loaf of levain bread and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
- Place the burger in the bread and serve with garnishes.
- Combine the garlic and oil. Bring to a boil and then reduce heat to medium. Simmer until garlic is brown and soft. Smash garlic with the back of a spoon; keep some chunks.
- Mix all ingredients together. Cover and refrigerate.
- Heat a large skillet over high heat. Add the olive oil. When the oil is hot, arrange the mushrooms in a single layer. Don't stir! Let them sizzle until they have caramelized on the bottom, about 2 minutes. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss the mushrooms and continue to cook over high heat for about 5 minutes.
- Add the butter. Continue to cook, stirring occasionally, until the mushrooms are beautifully browned, about 2 to 3 minutes. Season with salt and pepper and add the shallots and garlic. Saute until the garlic is lightly browned, about 2 minutes. Add the thyme. Add the wine, reduce the heat slightly, and simmer until the mushrooms are glazed with the sauce. Add the parsley, transfer to a warmed bowl, and serve immediately.
PERFECT HAMBURGER

- Roasted Garlic Paste: Preheat oven to 375°.
- Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.
- Cover the dish tightly and bake until 3/4 done, about 45 minutes; uncover and continue to bake another 15 minutes or until the cloves begin to pop out of their skins and brown; cool.
- Squeeze the cloves out of their skins into a bowl; add the oil from the baking dish and mix well, forming a paste.
- Store, refrigerated, up to one week.

- Chop garlic cloves on wooden surface then put in mortar and pestle.
- Add salt and olive oil and make a paste.
- Add this to the meat along with the Worcestershire and horseradish.
- Mix everything and adjust ingredients to suit your taste.
- When you make the patties place an indention in the middle of each one with your thumb (almost all the way through). This keeps the burgers from shrinking. We like ours thick and I like them to stay that way!
- Salt and Pepper according to taste when done.
- An added note on 04-03-06 - Thank you all for your positive feedback. It's nice to get confirmation on something I thought was good and different.
- Please note that I usually add more ingredients than what is called for above. I nuke a tiny hamburger (meatball size) and taste. I usually add more of everything. The horseradish does not taste like horseradish when cooked. It gives it a flavor note that otherwise wouldn't be there. Unless you are allergic to it, please try it.
