AL'S BAKED SWISS STEAK

This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

1 pound boneless beef round steak
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon seasoned salt (such as LAWRY'S®)
1 tablespoon all-purpose flour, or as needed
¼ cup vegetable oil
1 (14.5 ounce) can stewed tomatoes
1 medium onion, chopped
1 green bell pepper, chopped
¼ cup beef broth
½ cup chopped carrots
¼ cup chopped celery
2 cloves garlic, minced
1 tablespoon all-purpose flour
¼ teaspoon Worcestershire sauce
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
  • Cut steak into four portions and pound to 1/4-inch thickness; season with salt, pepper, and seasoned salt. Coat meat evenly with about 1 tablespoon flour.
  • Heat oil in a skillet over medium heat. Cook beef in hot oil until browned completely, 3 to 5 minutes per side; transfer to prepared baking dish reserving drippings in the skillet.
  • To the drippings, add tomatoes, onion, green bell pepper, beef broth, carrots, celery, garlic, 1 tablespoon flour, and Worcestershire sauce. Bring the tomato mixture to a boil; cook and stir for 2 minutes. Pour the mixture over the meat in the baking dish. Cover dish with aluminum foil.
  • Bake until beef is completely tender, about 90 minutes. Sprinkle cheese over beef and return to oven uncovered until cheese is melted, 3 to 5 minutes.

1 1/2-lb beef boneless round, tip or chuck steak, about 3/4 inch thick
3 tablespoons all-purpose flour
1 teaspoon ground mustard
1/2 teaspoon salt
2 tablespoons vegetable oil
1 can (14.5 oz) whole tomatoes, undrained
2 cloves garlic, finely chopped
1 cup water
1 large onion, sliced
1 large bell pepper, sliced

Steps:

  • Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.
  • In 10-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, turning once, until brown.
  • Add tomatoes and garlic to skillet, breaking up tomatoes with a fork. Heat to boiling; reduce heat. Cover and simmer about 1 hour 15 minutes, spooning sauce occasionally over beef, until beef is tender.
  • Add water, onion and bell pepper to skillet. Heat to boiling; reduce heat. Cover and simmer 5 to 8 minutes or until vegetables are tender.

½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

KAREN'S SWISS STEAK (STOVE TOP, CROCK POT OR OVEN)

This recipe can be prepared on the stove top, or in the oven or crock pot. I decided to post it since it is a bit different than the swiss steak recipes I have seen on here. Just wait until you smell this stuff cooking!

1 1/2 lbs beef round steak, cut 3/4 inch thick
3 tablespoons flour
1 teaspoon salt
1 teaspoon dry mustard
1/4 teaspoon pepper

2 teaspoons shortening
1 (16 ounce) can tomatoes
1 small onion, sliced
1 stalk celery, sliced
2 medium carrots, sliced
1 tablespoon Worcestershire sauce
1/4 cup red wine
1/4 cup water
hot cooked noodles
mashed potatoes or hot cooked rice

Steps:

  • Cut meat into 6 serving pieces.
  • Combine flour, salt, mustard, pepper, and garlic powder.
  • Put 2 T. of the flour mixture into the meat.
  • Brown the meat in the shortening on both sides.
  • Drain off excess fat.
  • Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
  • Cover and simmer for 1 1/4 hours or until meat is tender.
  • Remove meat to a serving platter and keep warm.
  • Combine 1/4 water and the remaining flour mixture.
  • Stir into tomato mixture until thick and bubbly.
  • Pass with meat.
  • Serve meat and sauce with hot cooked noodles or rice.
  • Crock pot directions:.
  • Prepare swiss steak as above except cut meat to fit your crock pot.
  • After browning meat, transfer to crock pot.
  • Stir remaining flour into pan drippings in the skillet.
  • Stir in the remaining ingredients and cook until thick and bubbly.
  • Pour over meat in the crock pot.
  • Cook on low for 8 to 10 hours.
  • Serve with hot cooked noodles or rice.
  • Oven directions:.
  • Place meat in a baking dish.
  • Cover with thickened drippings and veggies as above.
  • Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
  • Serve with hot noodles or rice.

SLOW COOKER SWISS STEAK

I threw this together in my crock pot one day and we loved it! A little time consuming because I sauteed the vegetables and browned the meat first, but it's well worth it. Browning the meat first gives it a better flavor. This is great with mashed potatoes!

Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. 1 lb boneless round steak, pounded or 1 lb boneless round steak, swissed by machine
1 cup carrot, sliced
1 large onion, halved and thinly sliced
1 (12 ounce) jar home-style beef gravy
1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon thyme
1/2 teaspoon pepper
garlic instant mashed potatoes, 1 box prepared as instructed on the box
1/4 teaspoon thyme
1 teaspoon dried parsley

Steps:

  • Heat oven to 325 degrees Fahrenheit.
  • Cut beef into serving size pieces and arrange in 2 quart baking dish.
  • Top beef with carrots and onion.
  • In a bowl, combine gravy, tomatoes, 1/4 teaspoon thyme and pepper; mix well.
  • Pour gravy mixture over meat and vegetables.
  • Cover with foil.

An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

1 (2 pound) beef round steak, 1 inch thick
2 tablespoons vegetable shortening
¼ cup water, or as needed
1 (8 ounce) can diced tomatoes
1 onion, minced
½ green bell pepper, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
  • Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
  • Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

"SWISS" ROUND STEAK WITH ONION GRAVY

1 1/2-2 lbs round steaks
1/2-1 cup flour
salt
pepper
2 -3 tablespoons oil
1 large onion, sliced
2 garlic cloves, crushed
2 -3 cups beef broth

Steps:

  • Cut round steak into 6 serving size pieces.
  • On a cutting board, dredge pieces with flour, salt and pepper.
  • Pound flour into the meat with a meat mallet.
  • Turn pieces, dredge, and pound until they can't hold any more flour.
  • (This can be a messy process, so be warned!).
  • In a large non-stick skillet, heat oil and brown steak pieces on both sides.
  • Place in a covered casserole.
  • Add onions and garlic to the skillet.
  • Saute until onions are limp (5 minutes).
  • Place onions and garlic over steak pieces in casserole dish.
  • Add enough beef broth to barely cover meat.
  • The flour from the meat will thicken the broth as it bakes and will make its own gravy.
  • Bake at 300F for 2 hours or until fork-tender.
  • Serve over noodles or mashed potatoes.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

1 can beef broth (10 oz)
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch (optional, see note below)

Steps:

  • Preheat oven to 350°F.
  • Using a meat mallet, pound meat to ½″ thickness.
  • Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
  • Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
  • Place onion & carrot in the bottom of the pot. Top with browned steaks.
  • Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.
  • Serve over mashed potatoes.

Family or company dinner. Very filling and it freezes great! I've made this Swiss Steak for a good 40 years..it's definitely "tried and true"!

3 lbs round steaks, cut 1 inch thick (or more)
2 medium yellow onions, cut in long slivers
3 green peppers, cut into 2-inch hunks
1/4 teaspoon garlic powder
1 (25 ounce) can whole tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon Adolph's meat tenderizer
1 1/2 teaspoons black pepper
1 1/2 cups flour
3 tablespoons Crisco
3 tablespoons butter
salt (for peppers and onions)
water (if pan sauce begins to dry while baking)

Steps:

  • Preheat oven to 325°F.
  • Grease interior of covered roasting pan or Dutch oven.
  • Cut round steak into serving size pieces (approximately 4 inch squares).
  • Sprinkle both sides of steak pieces with Aldolph's tenderizer.
  • Place flour into plastic zip lock bag and place on a chopping block (or if you don't mind the flour mess clean-up, just place half the flour on a sheet of waxed paper that's on top of a chopping block).
  • Place 4 or 5 pieces of steak into the bag of flour, turning over several times to coat, then using the edge of a dinner plate, pound the flour into the meat.
  • Do this to both sides several times.
  • Remove the "pounded and floured" meat, and continue with remaining pieces.
  • Heat heavy skillet until droplet of water rolls when dropped into hot skillet.
  • Now add the Crisco; when Crisco is melted, add the butter.
  • Quickly fry steak pieces, in batches, until browned good on both sides.
  • Remove to plate until all steak has been browned.
  • Lower heat, add onions and green peppers, about 1/4 tsp black pepper with 1/4 teaspoon salt, and scant 1/4 teaspoon garlic powder.
  • Remember NOT to salt the steak if you've used Aldolph's tenderizer, but you do need to salt the onions and green pepper.
  • Cook the peppers and onions until lightly browned on edges.
  • Do not let burn!
  • Pour in the canned whole tomatoes and tomato sauce.
  • Break up tomatoes a bit with a spoon, leaving some in rather large pieces.
  • When this comes to a boil, remove from heat.
  • Pour tomato, green pepper, onion mixture into bottom of the greased roasting pan.
  • Place fried steak over the top.
  • Cover and bake 1 3/4 hours.
  • Check liquid about half way through baking time, add 1/4-1/2 cup water if necessary to keep sauce from drying out.
  • You want to maintain a gravy.
  • Serve in large "Country Style Bowl" with side dish of buttered and creamed mashed potatoes.
  • My family enjoys mayo cole slaw as the side dish with the Swiss Steak.
  • AND lots of bread and butter to dunk into the "gravy".

½ cup of all-purpose flour
Salt and black pepper to taste
1 TBS butter
1 TBS canola oil
1 fat clove of garlic, peeled and crushed
2 large onions, peeled and thinly sliced
4 cups of canned plum tomatoes in tomato juice, undrained
1 tsp Worcestershire Sauce
A splash of hot sauce (optional)

Steps:

  • Season the pieces of steak all over with some salt and pepper. Sprinkle with flour and pound the flour into the steak using the side of a bread and butter plate. Keep doing this on both sides of the pieces of steak until no more flour can be absorbed. This is what makes the meat meltingly tender.
  • Melt the butter and canola oil together in a large deep skillet. Brown the pounded and floured pieces of steak in the hot fat on both sides, working in batches until all of the meat is browned, and removing to a plate as it is done.
  • Add the onions to the pan drippings and sauté until they are beginning to soften. Add the garlic and cook for about 30 seconds then pour in the tomatoes, along with their juices, and the Worcestershire sauce. I like to break the tomatoes up roughly with my hands.
  • Season to taste with salt and pepper, and hot sauce if desired. Return the steak to the pan, submerging it in the tomato sauce.
  • Cover tightly and simmer over a low heat for 1 ½ to 2 hours at which time the steak will be very tender and the sauce nicely thickened. Check it periodically to make sure there is enough liquid in the pan. If you think that it needs more, feel free to add a bit of beef stock or hot water.

Steps:

  • Place Flour, salt and Pepper in a large ziplock bag, add beef pieces and shake well to coat. You may have to do it in batches.
  • Place butter in a large, deep skillet and melt (Do not let it simmer long enough to brown).
  • Add beef and brown beef on all sides.
  • Add garlic, beef broth, tomatoes, onion, green pepper, basil and sugar and bring to a boil.
  • Reduce heat to a simmer, cover and simmer mixture for 1 1/2 Hours, Stirring Occasionaly.
  • Before serving, Sprinkle meat with cheese (If desired) And let it simmer uncovered just long enough for the cheese to melt.
  • Serve.

2 tablespoons butter
6 to 8 ounces mushrooms (sliced)
2 tablespoons onion (finely chopped)
1/3 cup flour
1 1/2 pounds boneless round steak (3/4 to 1 inch thick)
1 cup beef broth
salt and pepper to taste

Steps:

  • In a large heavy skillet over medium heat, heat olive oil, and butter. Saute the chopped onions and sliced mushrooms for about 5 minutes, until onions are tender. Remove onions and mushrooms; set aside.
  • Cut round steak into serving-size portions. Pound the flour into the steak pieces; transfer to the skillet. Sprinkle lightly with salt and pepper; brown round steak thoroughly, turning to brown the other side.
  • Once the meat is browned, add the beef broth, onions, and mushrooms, and cover. Simmer on low heat for about 45 minutes, or until meat is very tender. Check for drying out, and add a little water if needed.

1/3 cup vegetable oil
for dusting all purpose flour

1 teaspoon garlic powder

1 medium cut into strips onion
1 medium cut into strips bell pepper

Steps:

  • Cut steak into serving-size pieces. Season, to taste, with garlic powder, salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours, adding water if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. 2 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp sea salt

2 Tbsp olive oil
1 medium white or yellow onion (peeled and diced)
8 oz (125g) baby Bella mushrooms (sliced)
2 celery stalks (diced)
1 cup low sodium beef broth
½ cup (100g) diced tomatoes

Steps:

  • In a shallow bowl combine the garlic powder, onion powder, paprika, sea salt, and black pepper.
  • Season the sliced round steak on both sides with the seasoning mixture.
  • Press sauté on the Instant Pot, and when it reads Hot, add the oil.
  • Once the oil is simmering, brown the steak on both sides, then place on a plate and cover with foil. Work in batches.
  • Add the diced onion to the Instant Pot and cook for 1 min. Add the sliced mushrooms and celery, and cook just until slightly soft, stirring occasionally for 2-3 mins.
  • Add 1/3 of the beef broth. Using a wooden spoon scrape the bottom of the pot to deglaze it.
  • Press cancel to turn off the sauté mode, and add the round steak back to the pot. Add the remaining beef broth and top with the crushed tomatoes, at this point do NOT stir the tomatoes into the broth.
  • Cover with the lid, lock it, turn the valve to the sealing position, and pressure cook for 20 minutes. Once cooked, allow for a 10 minute natural pressure release, then do a quick pressure release to remove remaining pressure.
  • Open the lid, remove steak and place on a large platter. Cover with foil.
  • Press sauté and boil the gravy mixture for 10 mins to thicken it and reduce it.
  • Garnish with chopped parsley and serve Instant Pot Swiss Steak over mashed cauliflower, with the gravy on top.
