SWISS POTATO SQUARES

- Place potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well. Mash with butter, parsley, salt and pepper., Spread about 4 cups of the potato mixture onto the bottom and up the sides of a greased 8-in. square baking dish. Combine cheese, ham, onion and garlic powder; spoon into potato shell. Combine eggs and milk; pour over all. Top with remaining potato mixture. - Cook bacon on stovetop or microwave; crumble.
- Mix biscuit mix and water in a bowl for 20 strokes, or until just combined.
- Knead 10 times and place into the bottom of a greased 13x9x2 inch baking dish.
- Spread dough evenly into bottom of dish and slighty up the sides.
- Place Swiss cheese in 1 layer over the dough, then top with crumbled bacon.
- In a bowl, whisk together the eggs, milk and onion powder and pour evenly over bacon.
- Bake at 425*, for 15-18 minutes or until tests done in center. Cut into squares and serve while hot.

SWISS LASAGNA SQUARES
I make this lasagna vegetarian by using "mock" ground beef crumbles. Use one package of frozen mock ground beef crumbles - made by Morningstar, Boca or Quorn. This can also be made for meat eaters, too, by using 12 oz very lean ground beef instead.

- Preheat oven to 375 degrees.
- Cook lasagna noodles according to package directions.
- While lasagna is cooking, saute onion and garlic.
- Add the ground beef and brown. When finished, add 1/2 cup broth and set aside.
- Make the white sauce: melt butter in separate saucepan. Whisk in flour and milk and stir until slightly thickened. Add 1/2 cup grated Emmental and 1/4 cup white wine. Cook until cheese is melted and integrated. Mix in parmesan and salt.
- You will have 1 cup Emmental remaining - Set aside 1/2 cup of the remaining Emmental cheese for later. You will use the other 1/2 cup as directed in the next step.
- Assemble lasagna: spread 1 cup of the white sauce on the bottom of a 9x13 inch baking pan. Add a layer of lasagna noodles and spread some of the beef mixture on top. Sprinkle a bit of the Emmental on top. Cover with another layer of lasagna noodles. Repeat this process until all noodles and beef is used, finishing with a layer of noodles.
- Pour remaining white sauce on top and sprinkle reserved 1/2 cup Emmental on top.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake for another 15 minutes or until cheese on top is melted and slightly browned.
- Allow to stand for 15 minutes after removing from oven.

Steps:
- Preheat oven to 375 degrees Fahrenheit.
- Grease a 9x13" baking pan, then distribute the corn meal evenly over the bottom.
- Combine bacon, tomatoes, bell pepper, onion, and basil in bowl and mix lightly.
- Press the pizza crust into the greased pan so that it's an even thickness all around.
- Mix mayonnaise with garlic, and spread over the crust.
- Top evenly with bacon mixture, and then cover with the shredded cheese.
- Bake 18-20 minutes or until the top is bubbly and crust is a deep golden brown.
- Cut into 24 squares and serve.

- Break up the chocolate. Melt it, together with the butter, in a sauce pan.
- With a hand mixer, beat the egg yolks and sugar for at least 10 minutes until it becomes a light-colored thick mixture. Carefully fold in the liquid chocolate and butter. Flavor by adding the cognac. Beat the cream until it is stiff and fold into mixture.
- Line a 5 inch × 5 inch mold with cling film. Pour the mixture into the mold and keep in the refrigerator for a minimum of 6 hours to set.
- Before serving, remove from the mold. Use a wet knife dipped in hot water to cut into 1 inch square pieces. Dust with cocoa powder. It is essential to keep this dish cool until it is served.

- Preheat oven 375 degrees F (190 degrees C).
- Place bacon in a large skillet over medium heat. Fry bacon until crisp. Drain on paper towels.
- Crumble bacon into a medium-size mixing bowl. Mix in bell pepper, tomatoes, and basil. In a separate small bowl, combine mayonnaise and garlic.
- Roll pizza crust into a 12x15 inch rectangular baking sheet. Spread the mayonnaise mixture evenly over the crust. Sprinkle the bacon mixture over the mayonnaise, and top the entire pizza with cheese.
